SAUSAGE WITH CHARD AND RHUBARB

Sausage With Chard and Rhubarb image

This quick sausage dish is perfect for spring. The dark green chard adds freshness, while the rhubarb lends a citrus-like sour note that cuts through the richness of the sausages. If you don't have any mustard seeds on hand, leave them out. While they do add a pleasant heat and gentle crunch, you won't miss them if you didn't know they were supposed to be there. Use any kind of sausage you like here: pork, duck, lamb or turkey all work well with the rhubarb and greens.

Time 25m

Yield 2 servings

Number Of Ingredients 8

2 tablespoons extra-virgin olive oil
1 pound hot Italian sausage (pork or turkey)
1 shallot, finely chopped
1 1/2 teaspoons mustard seeds
2 garlic cloves, finely chopped
1/2 cup thinly sliced rhubarb
1 pound red or white Swiss chard, center ribs removed and leaves chopped
Fine sea salt and freshly ground pepper, as needed

Steps:

  • In a large skillet over medium-high heat, warm oil. Prick sausages with a fork and place in skillet. Cook, turning occasionally, until browned all over and cooked through, about 10 minutes. Transfer sausages to a plate.
  • Add shallots to oil and reduce heat to medium. Cook until tender, about 5 minutes. Stir in mustard seeds and garlic; cook 1 minute. Add rhubarb and greens, a handful at a time, and a large pinch of salt. Cook until the greens wilt and become tender, about 10 minutes. Season with more salt and pepper. CHARD AND BEANS WITH CHICKEN SAUSAGE

Chard and Beans with Chicken Sausage image

The tender stems on Swiss chard are an edible, crisp and juicy bonus to the leaves and just need a few minutes of cooking to soften in this easy weeknight dinner. Leaving some of the starch on the canned beans adds silky texture to the juices that come from the chicken sausage and gently thickens them as well.

Provided by Food Network Kitchen

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 11

6 links fully cooked chicken-apple sausage (about 1 pound, 2 ounces total)
2 tablespoons plus 1 teaspoon extra-virgin olive oil
1 bunch Swiss chard
1 large leek (white and light green parts only), sliced
Kosher salt and freshly ground pepper
1 15-ounce can cannellini beans, drained but not rinsed
4 cloves garlic, sliced
1/3 cup heavy cream
1/4 cup low-sodium chicken broth
2 teaspoons white wine vinegar
2 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 425˚ F. Line a baking sheet with foil. Toss the sausages with 1 teaspoon olive oil on the pan and bake, turning occasionally, until browned and heated through, about 15 minutes.
  • Meanwhile, slice the chard stems and roughly chop the leaves. Heat the remaining 2 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the chard stems and leek and season with salt and pepper. Cook, stirring occasionally, until tender, about 5 minutes.
  • Add the beans and garlic to the skillet and cook, stirring, until softened, about 1 minute. Gradually add the chard leaves, stirring to wilt. Add the heavy cream and chicken broth and simmer until the vegetables are soft and the beans are creamy but not soupy, about 3 minutes, adding a few splashes of water if the pan seems dry. Remove from the heat and stir in the vinegar; season with salt and pepper.
  • Divide the beans and greens among shallow bowls. Slice the sausages and add to the bowls; sprinkle with the parsley.

SAUTEED RHUBARB CHARD

Sauteed Rhubarb Chard image

Rhubarb chard, named for its brilliant red ribs, is delicious sauteed in a little olive oil and served on the side, but if you like, toss the sauteed greens into the pasta. Swiss chard, kale, dandelion greens, or sorrel can be substituted for the rhubarb chard.

Provided by Martha Stewart

Categories     Food & Cooking     Dinner Recipes     Dinner Side Dishes

Number Of Ingredients 4

2 tablespoons extra-virgin olive oil
3 large garlic cloves, minced
1 1/2 pounds rhubarb chard, stems trimmed and very coarsely chopped
Kosher salt and freshly ground black pepper

Steps:

  • In a large skillet over low heat, heat the olive oil. Add the garlic and saute until the garlic begins to color, about 1 to 2 minutes.
  • Add the rhubarb chard and saute until the leaves are just wilted, about 5 minutes. Season with salt and pepper.

RHUBARB-CHIPOTLE SAUSAGE

Rhubarb-Chipotle Sausage image

What can I say...I love rhubarb and its versatility. This is a sweet/spicy sausage that is delicious smoked with hickory wood chips. I fried a test patty on the stove to check the seasonings before the corn husk wrapping party began and it's very tasty that way too. It cooks in minutes as opposed to hours if you don't have the patience or time to sit by the grill.

Categories     Meat and Poultry Recipes     Pork     Ground Pork Recipes

Time 3h10m

Yield 30

Number Of Ingredients 10

2 cups rhubarb, cut into 1/2-inch pieces
1 (7 ounce) can chipotle peppers in adobo sauce
¼ cup ruby port wine
2 tablespoons white sugar
5 pounds ground pork
2 teaspoons salt, or to taste
2 teaspoons ground black pepper, or to taste
1 tablespoon vegetable oil
30 dried corn husks, or as needed
kitchen twine

Steps:

  • Bring rhubarb, chipotle peppers with sauce, ruby port, and sugar to a boil in a saucepan; simmer over medium-low heat until rhubarb is tender, about 15 minutes. Remove from heat and let cool.
  • Blend the rhubarb-chipotle mixture in a blender until smooth. Place ground pork in a large bowl and thoroughly mix 2/3 of the blended sauce into the pork. Season with salt and black pepper.
  • Heat vegetable oil in a skillet over medium heat. Form about 2 tablespoons of the pork mixture into a small patty and pan-fry the patty until browned and no longer pink, about 5 minutes per side. Taste the patty and mix remaining rhubarb-chipotle sauce, salt, and black pepper to taste into the uncooked pork mixture (do not taste uncooked pork).
  • Soak corn husks in warm water in a large bowl until softened, about 10 minutes. Heat a smoker to 250 to 275 degrees F (120 to 135 degrees C) and add wood chips to the smoker.
  • Scoop up about 1/3 cup to a scant 1/2 cup of seasoned pork mixture and form into a sausage shape; place into a soaked corn husk and tie the ends of the husk with twine to enclose the sausage. If husk is too narrow to cover entire sausage, use 2 husks per sausage. Repeat with remaining husks and pork mixture.
  • Smoke sausages in the preheated smoker until thoroughly cooked and an instant-read thermometer inserted into the middle of the thickest sausage reads 160 degrees F (70 degrees C), about 2 hours.

SAUSAGE AND SWISS CHARD STRATA

Sausage and Swiss Chard Strata image

Something like a cross between an omelet casserole and bread pudding, strata is perfect for serving a crowd at breakfast or brunch as it can be made ahead of time.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes

Time 1h10m

Number Of Ingredients 8

1 pound bulk sweet or spicy Italian sausage
2 shallots, finely chopped
1 bunch Swiss chard (1 pound), stems diced medium, leaves torn into 2-inch pieces and rinsed
Coarse salt and ground pepper
1 day-old baguette, cut into 1/2-inch slices
2 1/2 cups whole milk
7 large eggs, lightly beaten
1 cup shredded Gruyere cheese (3 ounces)

Steps:

  • Preheat oven to 375 degrees. Heat a large skillet over medium-high. Add sausage and cook, breaking up meat with a wooden spoon, until browned, 5 minutes. Transfer sausage to a small bowl, leaving behind as much fat as possible. Add shallots and chard stems to skillet and cook over medium until shallots are translucent, 3 minutes. Add a little water to pan and cook, stirring and scraping up browned bits from skillet with spoon. Add chard leaves and cook, stirring occasionally, until wilted, 3 minutes. Season with salt and pepper.
  • Spread half the sausage in a 9-by-13-inch baking dish and top with half the chard mixture. Top with bread, overlapping slices slightly. Top with remaining sausage and chard mixture. In a large bowl, whisk together milk and eggs, season with salt and pepper, and pour evenly over top. Firmly press on strata to submerge bread in egg mixture. Cover dish tightly with foil and let sit 10 minutes (or refrigerate up to overnight).
  • Bake strata 45 minutes. Uncover, sprinkle with cheese, and bake until cheese melts and egg mixture is mostly absorbed and set in center, 6 to 10 minutes. Let cool 10 minutes before serving.

SWISS CHARD VS RHUBARB – DIFFERENCES & HOW TO TELL THEM APART
2020-11-10 A great tip to differentiate them is to look at the leaves. Swiss chard leaves are shinier, a bit more ruffled-looking, and not as wide as rhubarb. They have more of an oval shape and the color of the stalk goes all the way into the veins of the leaves (red or white). Rhubarb leaves are wider towards the base, kind of like a triangle.
