½ cup white vinegar
2 tablespoons seafood seasoning (such as Old Bay®)
1 pound fresh large shrimp, deveined with shells on

Steps:

  • Bring water, vinegar, and seafood seasoning to a boil in a saucepan over high heat. Add shrimp and stir.
  • Reduce heat to medium, cover, and steam, stirring once or twice, until bright orange in color, 3 to 5 minutes. Drain.

Old Bay Marinated and Grilled Shrimp image

These shrimp marinate for only 30 minutes in a flavorful mix of lemon juice, garlic and the powerhouse spice blend, Old Bay seafood seasoning. Don't be tempted to let them sit in the sauce any longer than that because the lemon juice will start to cook the shrimp and make them tough. Serve with some boiled or roasted potatoes for a grill-lover's version of a shrimp boil.

1 large lemon
2 large cloves garlic
1 tablespoon seafood seasoning, such as Old Bay
2 tablespoons extra-virgin olive oil
1 pound jumbo shrimp (16/20), peeled and deveined
Hot sauce, for serving

Steps:

  • Juice half of the lemon and add the juice to a medium glass bowl. Finely grate the garlic and add to the bowl along with the Old Bay seasoning, olive oil and shrimp. Toss to combine.
  • Marinate in the refrigerator for 30 minutes. Meanwhile, cut the remaining lemon half into wedges and reserve for serving.
  • Heat a large grill pan over medium-high heat. Remove the shrimp from the marinade and put on a baking sheet lined with paper towels. In batches, cook the shrimp until lightly charred in spots on both sides and just cooked through, about 3 minutes total. Remove from the heat and transfer to a large plate.
  • Serve the shrimp with the reserved lemon wedges and hot sauce.

This is an old recipe used by many of the seafood restaurants in Florida for Old Bay® fried shrimp. Excellent for fish, shrimp, scallops!

1 pound large shrimp, peeled and deveined
3 large eggs, or more as needed
2 cups milk, or more as needed
peanut oil for frying
2 cups all-purpose flour
2 cups yellow cornmeal
½ cup seafood seasoning (such as Old Bay®)

Steps:

  • Place each shrimp on a flat work surface and butterfly by slicing horizontally through the middle, being careful not to cut all the way through to the other side.
  • Whisk eggs in a bowl; mix in milk. Place shrimp in milk mixture and soak for 1 hour.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Mix flour, cornmeal, and seafood seasoning together and pour into a zip-top bag. Place 5 to 6 shrimp in the bag and shake well.
  • Drop shrimp in the hot oil and fry until golden brown and opaque in the centers, about 5 minutes. Remove and place on paper towels to soak out oil. Repeat with remaining shrimp.

55 g butter or 55 g margarine
900 g shrimp, peeled and deveined or 900 g cooked peeled prawns
1 small onion, finely chopped
4 spring onions, cut in small diagonal slices
2 tablespoons lemon juice, fresh
125 ml dry white wine
125 ml whipping cream
2 tablespoons whole grain mustard
salt and pepper

Steps:

  • Melt half the butter or margarine in a frying pan over a high heat.
  • Add raw prawns if using, and cook until they turn pink and opaque, about 2 minutes, stirring constantly. Remove with a slotted spoon and set aside.
  • Melt the remaining butter or margarine in the frying pan. Add the onion and spring onions, and cook until softened, 3 - 4 minutes, stirring frequently.
  • Stir in the lemon juice and wine. Bring to the boil, scraping the bottom of the pan with a wooden spoon to mix in the cooking juices.
  • Add the cream. Simmer until the mixture thickens, 3 - 4 minutes, stirring frequently. Stir in the mustard.
  • Return the fried prawns to the pan and reheat briefly. Add cooked prawns at this stage and heat through, about two minutes. Season with salt and pepper, and serve over rice.

1 kg king prawns or 1 kg shrimp, raw and unpeeled
2 glasses dry white wine, I used Chardonnay
1 small shallots or 1 small onion, peeled and diced finely
2 -4 garlic cloves, peeled and diced finely
1 tablespoon Old Bay Seasoning
1 lemon, cut in half
water
6 tablespoons high quality ready-made mayonnaise or 6 tablespoons home-made mayonnaise
3 dashes Tabasco sauce or 3 dashes any other hot chili sauce
1/2 lemon, juice of
1 tablespoon tomato sauce
1 tablespoon tomato puree
1 teaspoon garlic granules or 2 fresh garlic cloves, peeled and minced
salt and pepper, to taste

Steps:

  • Put the prawns/shrimp into a large pan and add the wine, lemon halves, onion or shallot and garlic. Add the water to just cover the prawns/shrimp, and then add the Old Bay seasoning. Stir well.
  • Cook over a high heat for about 5 minutes, or until the prawns are pink and cooked. Strain the prawns/shrimp (keeping the cooking liquor for a soup or fish sauce ~ I often freeze it until I need it.) and place them into a large bowl.
  • Allow lots of paper napkins and a spare bowl for the prawn/shrimp peelings and eat immediately with a mixed salad, crusty bread and the spicy dip.
  • To make the dip, just whiz or mix all the ingredients together and taste before adjusting the seasoning ~ we like it very spicy. Serve in a separate bowl or in individual dishes with the prawns/shrimp.
