GERMAN SAUERKRAUT SOUP (SAUERKRAUTSUPPE)
Celebrating one of Germany's most famous "superfoods", Sauerkraut, this wonderful soup is satisfying to both tummy and soul. The combination of tangy sauerkraut, caramelized onions, smoky paprika, savory bacon and earthy caraway is simply irresistible!

Steps:
- In a soup pot fry the bacon until done. Add the onions and cook until lightly caramelized, 5-7 minutes. Add the garlic and cook another minute. Stir in the tomato paste and spices and cook another minute. Add the chicken broth and sauerkraut and bring to a boil. Reduce the heat to medium and simmer, covered, for 20 minutes. Stir in the crème fraîche or sour cream and heat through (do not boil).
- Serve hot with a dollop of crème fraîche or sour cream. Crusty bread and a leafy green salad make great accompaniments.

Steps:
- 1. Chop the sausage coursely by hand or in a food processor.
- 2. Transfer the chopped sausage and onion to a deep pan and saute over medium heat until the sausage is lightly browned and the onion is tender, about 10 minutes.
- 3. In a small bowl, combine the flour, thyme, and pepper. Add to the sausage and brown all together until the mixture bubbles up, about 5 mnutes.
- 4. Add the milk and half and half gradually, stirring constantly until the mixture begins to bubble again, about 5 minutes.
- 5. Add the sauerkraut and its juice and bring to a boil. The mixture will continue to thicken. Taste for tartness and add lemon juice, if desired. Also can add salt to taste.
- 6. Add parsley and serve immediately with some hot buttered pumpernickel bread.

- Place the onion potato and sausage into saucepot and saute over med.
- heat, until meat is lightly browned, about 6 minutes.
- Combine the flour, thyme, and pepper and add to meat mixture and cook over med.
- heat until flour bubbles, about 6 minutes.
- Add milk, cream and cook until bubbling about another 6 minutes.
- Add the sauerkraut and bring to a boil.
- Taste now for seasonings, and if not too tart for you, you can add the lemon juice now.
- Boil until thickened.
- Add parsley and serve--.

- Drain, reserving drippings.
- Add flour to bacon drippings.
- Blend well.
- Stir in sauerkraut and bacon.
- Transfer to crockpot.
- Add remaining ingredients and cook on LOW for 6-8 hours, or HIGH for 3-4 hours.

- Toss the ham hocks and bay leaves into a stockpot and cover them with 12 cups of water. Bring the water to a full boil then adjust the heat so it just barely maintains a simmer. Continue cooking the hocks until they are fork tender and the broth is flavourful, about 2-3 hours. Using a pair of tongs pull out the bones and break the larger chunks of meat into smaller pieces. Reserve the meat and the broth.
- Add onion, carrot, diced potatoes, drained sauerkraut, diced farmer sausage and reserved ham meat to the soup and bring to a gentle boil.
