PROPER BRITISH APPLE PIE
Steps:
- Gather the ingredients.
- Place the flour, butter and salt into a large, clean bowl.
- Rub the butter into the flour with your fingertips until the mixture resembles fine breadcrumbs, working as quickly as possible to prevent the dough becoming warm.
- Add the water to the mixture and using a cold knife stir until the dough binds together, add more cold water a teaspoon at a time if the mixture is too dry.
- Wrap the dough in clingfilm and chill for a minimum of 15 minutes, up to 30 minutes. Heat the oven to 425 F / 220 C / Gas 7.
- Gather the ingredients.
- Simmer the apples with the lemon juice and water in a large pan until soft. Add the sugar and cinnamon to the cooked apples. Remove from the heat and add the butter and leave to cool.
- Roll out half the pastry and line a 7-inch (18-centimeter) pie dish. Put the cooled, cooked apple mixture into the pastry case.
- Roll out the remaining pastry to make a lid for the pie. Damp the edges of the pastry in the dish with a little cold water, cover with the lid, press the edges firmly together and crimp to decorate.
- Brush the top of the pie with milk and bake in the middle of a hot oven for 20 to 25 minutes.
- Serve hot or cold with cream, ice cream or custard sauce.

OLD ENGLISH APPLE PIE
I found this recipe in Ohio magazine this month (October 2005). Bramley's Seedling apples are good for cooking. They have a greenish-yellow skin with red and brown stripes and are commonly used for baking in the British Isles. This recipe is said to have come from Thomas Dawson of London in 1587.

- Gently boil the apples (it's not necessary to pare, core or slice them) in water in a covered saucepan until the fruit is very tender, about 30 minutes. Drain the apples, return to pot. Using a potato masher, mash the apples. Force the mashed fruit through a strainer with the back of a spoon.
- Preheat the oven to 425 degrees. Flavor the mashed fruit with the sugar, cinnamon and ginger. Mix in the butter, eggs and applejack. Line a 9-inch glass pie pan with crust. Pour in the mixture and bake for 10 minutes. Reduce heat to 350 degrees and bake for an additional 30 minutes.

- Preheat oven to 425 degrees F (220 degrees C).
- In a bowl combine apples, sugar, flour, cinnamon, nutmeg and salt. Place mixture in a pastry-lined 9 inch pie plate. Dot with butter and adjust top crust that has been vented.
- Place in oven and bake at 425 degrees F (220 degrees C) for 10 minutes. Turn oven temperature down to 275-300 degrees F (135-150 degrees C) and bake 40-50 minutes or until crust is golden brown and apples are tender. Let cool and serve.

I got this recipe out of cook book called "Calling all Cooks". It is more like a cobbler/crisp type pie than the traditional apple pie, but it is oh so good. Serve it cold or hot with vanilla ice cream.

- Peel and slice apples and lay in deep dish pie plate.
- Sprinkle white sugar on top of apples.
- Sprinkle cinnamon on top of sugar.
- In separate bowl melt butter and mix with dry ingredients.
- Spoon and press this to cover apples.
- Bake for 45 minutes on 350°F.

Steps:
- Place sliced apples in a large bowl and toss with sugar and lemon juice. Melt butter or margarine in a large skillet over medium heat. Add apples to skillet and saute until tender. Allow to cool.
- In a medium mixing bowl, beat cream cheese until fluffy. Gradually beat in 1 cup milk, pudding mix, and lemon rind. Add remaining 1/2 cup milk, and beat until smooth. Spread mixture into pastry shell. Arrange apples over cream cheese layer.
- In a small saucepan, heat preserves until runny. Using a pastry brush, lightly coat apples. Refrigerate pie for at least 1 hour before serving.
