Old Fashioned Bread Pudding image

Old fashioned bread pudding is made with just a few simple ingredients. This recipe is foolproof because of the handy oven temperature trick!

2 tablespoons unsalted butter
6 cups bread chunks ((you can use stale or fresh but stale is more old fashioned))
2 cups milk
1 teaspoon vanilla extract
1/2 cup granulated sugar
2 tablespoons granulated sugar
1/4 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
4 eggs
1/2 cup raisins

Steps:

  • Preheat the oven to 400 F. Put the butter in a 9 inch cake pan or pie plate, and place the pan in the oven for a couple of minutes to melt the butter.
  • Remove the pan and swirl the butter evenly over the bottom of the pan.
  • Sprinkle 2 tablespoons of granulated sugar in the bottom of the pan. Set aside.
  • In a large mixing bowl, combine the milk, sugar, salt, nutmeg, cinnamon,vanilla, eggs. Whisk briefly until just combined.
  • Add the bread chunks to the mixing bowl. If you are using raisins, add them now as well.
  • Stir until well saturated with liquid. Use your fingers to massage the mixture and break up any large chunks.
  • Gently place the soaked bread chunks in the pan, on top of the butter/sugar mixture. Fill in any gaps in the bread and gently press down on the top to make it even. Pour any remaining liquid evenly over the top.
  • Place the pan in the oven. Bake for 15 minutes at 400 F, then turn the oven down to 300 F and bake another 15 minutes. The bread pudding is done when the temperature in the middle reaches 175 F, or when the center jiggles but does not slosh.
  • Remove from oven and cool on a rack for 30 minutes. Serve slightly warm, or let cool to room temperature, then refrigerate. Also tastes wonderful chilled.

4 tablespoons butter, softened (1/4 cup)
2 cups milk
2 eggs
1/2 cup sugar
1/4 teaspoon salt
1 teaspoon cinnamon, ground
3 cups soft bread cubes (about 5 slices)
1/2 cup raisins

Steps:

  • Preheat oven to 350 degrees F.
  • Put butter in small bowl.
  • Scald milk (heat till just below boiling) and pour over butter, stir to mix well.
  • Beat eggs.
  • Gradually stir into milk mixture. Stir in sugar, salt, and cinnamon.
  • Put bread cubes and raisins in a 1-1/2 quart baking dish; pour in milk mixture. Stir gently to moisten the bread evenly.
  • Set in a larger pan; add hot water to the outer pan to come halfway up the sides of the baking dish.
  • Bake 40 to 45 minutes or until a knife inserted into the center comes out clean.
  • Serve warm or cold.

1 teaspoon ground cinnamon or nutmeg

Whipping (heavy) cream, if desired

Steps:

  • Heat oven to 350°F. In 2-quart saucepan, heat milk and butter over medium heat until butter is melted and milk is hot.
  • In large bowl, mix eggs, sugar, cinnamon and salt. Stir in bread cubes and raisins. Stir in milk mixture. Pour into ungreased deep round pan.
  • Bake uncovered 40 to 45 minutes or until knife inserted 1 inch from edge comes out clean. Serve warm with whipping cream.

4 cups white bread, cubed, about 8 slices
1/2 cup raisins
2 cups milk
1/4 cup butter
1/2 cup sugar
2 eggs, slightly beaten

SAUCE:
1/2 cup butter
1/2 cup sugar
1/2 cup firmly packed brown sugar
1/2 cup heavy whipping cream
1 tablespoon vanilla

Steps:

  • PUDDING: Heat oven to 350°F. Combine bread and raisins in large bowl. Combine milk and 1/4 cup butter in 1-quart saucepan. Cook over medium heat until butter is melted, about 4 to 7 minutes. Pour milk mixture over bread; let stand 10 minutes. Stir in all remaining pudding ingredients. Pour into greased 1 1/2-quart casserole. Bake for 40 to 50 minutes or until set in center. SAUCE: Combine all sauce ingredients except vanilla in 1-quart saucepan. Cook over medium heat, stirring occasionally until mixture thickens and comes to a full boil, about 5 to 8 minutes. 8 large eggs
1 ¼ cups white sugar
1 cup heavy cream
2 tablespoons raisins
½ teaspoon ground cinnamon
¼ teaspoon vanilla extract
1 loaf white bread, torn into large chunks
1 stick butter
½ cup confectioners' sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 10x12-inch baking pan.
  • Combine half-and-half, eggs, sugar, heavy cream, raisins, cinnamon, and vanilla extract in a bowl; mix well.
  • Arrange bread pieces on the bottom of the prepared pan. Pour cream mixture over bread. Allow to soak 10 to 15 minutes.
  • Place the baking pan into a larger pan; fill the larger pan with water halfway up the sides of the smaller pan.

Through the years, I've made this bread pudding quite often and am asked for the recipe each time. I think folks find this dessert so appealing because of its comforting taste and texture.

2 cups fat-free milk
1/2 cup egg substitute
1 teaspoon vanilla extract
Artificial sweetener equivalent to 1 teaspoon sugar
4 slices stale bread, cut into 1-inch cubes
2 tablespoons raisins
1/2 teaspoon ground cinnamon

Steps:

  • Combine milk, egg substitute, vanilla and sweetener in a bowl. Add bread cubes and raisins; stir gently. Pour into a 1-qt. baking dish coated with cooking spray. Sprinkle with cinnamon. I recently found an old handwritten cookbook of my late grandmother's. This is one of the recipes I've made from it. I had not really ever tried bread pudding but I really liked it. I've made it as the recipe states and also with a sweet bread I had on hand. I like it best served warm but it is good cold as well.

6 slices stale bread
3 eggs, slightly beaten
1/2 cup sugar
1/4 teaspoon salt
1 quart milk

Steps:

  • Generously spread each slice of bread with butter. Place buttered side down in greased casserole dish.
  • Combine the eggs, sugar, salt and milk. Strain liquid while pouring over bread in dish.
  • Let stand for 30 minutes.
  • Bake at 325 degrees for 1 hour. Cover during first half hour of baking.
  • Serve warm or cold.
