1 pound dried navy beans
1-1/2 teaspoons salt
4 quarts cold water, divided
1 cup chopped red onion
1/2 cup molasses
6 bacon strips, cooked and crumbled
1/4 cup packed brown sugar
1 teaspoon ground mustard
1/4 teaspoon pepper

Steps:

  • In a large saucepan or Dutch oven, bring beans, salt and 2 qt. water to a boil; boil for 2 minutes. Remove from the heat; let stand for 1 hour. Drain beans and discard liquid. Return beans to pan. Cover with remaining water; bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until beans are tender. Drain, reserving liquid. In a greased 2-1/2 qt. baking dish, combine beans, 1 cup liquid, onion, molasses, bacon, brown sugar, mustard and pepper. Cover and bake at 325° for 3 to 3-1/2 hours or until beans are as thick as desired thickness, stirring occasionally. Add more of the reserved cooking liquid if needed.

1/4 pound diced salt pork or 6 bacon strips, cooked and crumbled
1 large onion, chopped

  • Sort beans and rinse in cold water. Place beans in a 3- or 4-qt. slow cooker; add 4 cups water. Cover and let stand overnight., Drain and rinse beans, discarding liquid. A wonderful old-fashioned baked bean flavor. This recipe has served by family for 29 years and originally came from my mother-in-law. It tastes great served with fresh cornbread or biscuits and honey. Although you need to allow time for soaking and simmering the beans, this recipe is still quite easy.

2 cups navy beans
½ pound bacon
1 onion, finely diced
3 tablespoons molasses
2 teaspoons salt
¼ teaspoon ground black pepper
¼ teaspoon dry mustard
½ cup ketchup
1 tablespoon Worcestershire sauce
¼ cup brown sugar

Steps:

  • Soak beans overnight in cold water. Simmer the beans in the same water until tender, approximately 1 to 2 hours. Drain and reserve the liquid.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Arrange the beans in a 2 quart bean pot or casserole dish by placing a portion of the beans in the bottom of dish, and layering them with bacon and onion.
  • In a saucepan, combine molasses, salt, pepper, dry mustard, ketchup, Worcestershire sauce and brown sugar. Bring the mixture to a boil and pour over beans. Pour in just enough of the reserved bean water to cover the beans. Cover the dish with a lid or aluminum foil.
  • Bake for 3 to 4 hours in the preheated oven, until beans are tender. Remove the lid about halfway through cooking, and add more liquid if necessary to prevent the beans from getting too dry.

This recipe came by here from Anne Lindsay's Lighthearted Everyday Cooking. I have been using this recipe since 1991 and believe....if it ain't broke, don't fix it. For us...this is THE recipe. Enjoy! I have tweaked this ever so slightly...only because we like tomatoey beans. Cooking time does not include overnight soaking.

1 lb white pea beans
2 medium onions, sliced
1/4 cup molasses
2 tablespoons tomato paste
1/2 cup ketchup, to be added near the end of cooking
1 tablespoon brown sugar, packed
1 tablespoon vinegar
1 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon black pepper or 1/4 teaspoon hot pepper flakes
4 cups hot water
2 slices bacon, chopped (I used thick slices of bacon, chopped)

Steps:

  • Rinse beans; discard any discoloured ones. In large saucepan, soak beans overnight; drain. Add water to cover by at least 2 inches. Bring to boil and simmer for 30 minutes; drain.
  • In bean pot or 8 cup casserole, spread onion slices.
  • Add drained beans.
  • Combine molasses, tomato paste, sugar, vinegar, salt, mustard, pepper and hot water.
  • Pour over beans and top with chopped bacon.
  • Cover and bake in 250 degree oven for 6 hours; uncover and add about 1/2 cup ketchup -- and stir. Add more water if you need to. Bake uncovered for another hour.

1 to 2 cup pure maple syrup, plus more if desired

  • Pour the beans onto a plate, and pick-over looking for bad beans, or stones. Place beans in bowl, cover with water by at least 2 inches, and soak overnight.
  • Preheat oven to 250 degrees F.
  • Drain beans and place in 4-quart bean pot. Add onion, dry mustard, pepper, salt, and maple syrup. Add water to cover. Cut salt pork into 1-inch pieces and place on top of beans. Bake covered, approximately 8 hours. Check each hour to see if water needs to be added. You can add more maple syrup in place of water for flavor, if desired.
  • Serve the beans with brown bread, franks, or ham. For breakfast, serve with eggs, bacon, and home-fries.

Many hours of cooking over low heat brings complexity to the flavor of baked beans. Some home cooks shy away from baking beans, wary of the long cooking time, but the amount of actual labor involved is minimal.

2 pounds dried pinto or navy beans
1/2 cup unsulfured molasses
1 tablespoon plus 1 teaspoon dry mustard
1/2 cup packed dark-brown sugar
4 canned plum tomatoes, seeded and crushed
2 dried bay leaves
1 tablespoon plus 1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 large onion (about 1 pound), peeled, halved
12 whole cloves
12 ounces salt pork

Steps:

  • Soak the beans in cold water overnight in a large container. Drain in a colander.
  • Heat oven to 300 degrees. In a small saucepan, combine molasses, mustard, brown sugar, tomatoes, bay leaves, salt, pepper, and 5 cups water. Bring to a boil, and whisk until the sugar has dissolved. Stud the onion halves with the cloves, and place in the bottom of a terra-cotta bean pot or Dutch oven.
  • Score the salt pork 1/4 inch deep 1 inch apart, and slice into two even pieces. Transfer to the bean pot. Add the soaked beans. Pour the molasses mixture over beans, stir, and cover. The liquid should cover the beans by 1/2 inch. Add more water if necessary.
  • Transfer to oven to bake, without stirring, until the beans are tender and the liquid has thickened, about 6 hours. Check the beans every 45 minutes, adding more hot water if necessary to keep beans slightly soupy at all times. For the last 50 to 60 minutes of cooking, uncover beans, and, using tongs or a long fork, pull the pork to the surface. Remove from oven, and adjust the seasoning with salt and pepper, if necessary. Serve.

1 lb dried navy beans
1/2 cup chopped onion, plus
1 small onion, whole, peeled
1/2 cup molasses
1 teaspoon dry mustard
1/4 cup brown sugar, packed

1 tablespoon ketchup
2 teaspoons prepared yellow mustard
1/2 cup orange juice
1 teaspoon salt
1/4 lb salt pork, slices

Steps:

  • Rinse beans and pick them over. Put beans in a large plastic container with three times as much water as beans. Cover and refrigerate overnight.
  • Drain beans. Combine beans and chopped onion in a large saucepan. Add water to cover them and heat to boiling. Cover and let simmer about 30 minutes. Drain liquid into a small bowl to reserve for sauce and for cooking.
  • Measure 1/2 cup of the bean liquid into a bowl. Add the orange juice, molasses, maple syrup, ketchup, and prepared mustard. Then add the brown sugar, stirring to dissolve. Lastly, add the dry mustard and salt and combine.
  • In a 2-quart bean crock or covered baking dish layer half the salt pork and all of the beans, making sure to bury the peeled, whole onion in the bottom. Pour the sauce mixture over beans and add just enough reserved bean liquid to cover them. Top with remaining salt pork.
  • Bake, covered, at 300 degrees for 4 hours, checking on the hour. If beans seem too dry, add a little of the remaining bean liquid. Uncover and then bake for one hour more.

Easy Boston Baked Beans with a rich, sweet sauce.

3 (15.5 ounce) cans white navy beans
10 strips bacon
1 onion (diced)
6 Tablespoons molasses
4 teaspoons salt
1 teaspoon pepper
1/2 teaspoon dry mustard
1 cup ketchup
1 cup brown sugar
2 Tablespoons Worcestershire sauce

Steps:

  • Preheat oven to 325 degrees F.
  • Spray a 9x13-inch baking pan with nonstick cooking spray.
  • Rinse and drain beans, then spread in the bottom of prepared pan.
  • Lay bacon slices on top of beans in the pan.
  • Sprinkle diced onion over bacon.
  • In a saucepan over medium heat, whisk together molasses, salt, pepper, dry mustard, ketchup, brown sugar and Worcestershire sauce.

  • The night before you plan to cook your beans, take your two cups of beans and put them in a saucepan or pot (after picking through them first quickly just to make sure there aren't any broken or shriveled ones). Pour enough water into the pan to cover the beans and let them sit over night.
  • In the morning, strain the beans and discard the water. (Since it was freezing cold outside, I ignored Fannie's instruction about throwing the water outside instead of in the sink. I'm not quite sure why she said that anyways...)
  • Give the beans a quick rinse in the strainer and then put them back in the saucepan with some fresh water. Let the beans simmer in the water for about 40 minutes. (Note: It's important not to let them go above a simmer or they could end up getting mushy.)
  • Strain the beans again and put them in whatever pot you plan to bake them in. If you want them to look truly authentic and old-fashioned, you can use a baked bean pot, or if you don't have one of those then you can use a casserole dish that will fit at least a quart or larger.
