RHUBARB JAM WITHOUT PECTIN



Rhubarb Jam without Pectin image

This simple rhubarb jam has just two ingredients and no added pectin.

Number Of Ingredients 2

2 lbs Rhubarb, chopped into 1/4 inch pieces (about 6-7 cups)
1/2 to 2 cups sugar (see note)

Steps:

  • Mix the chopped rhubarb and sugar together. Allow the rhubarb pieces to macerate in the sugar overnight.
  • Strain the juice from the rhubarb pieces and place the sugar/juice mixture into a jam pot.
  • Bring the juice to a simmer over medium heat and cook for a few minutes until thickened.
  • Add the rhubarb and cook for another 5 minutes until the rhubarb is cooked and the jam thickens to your preference. (You can test consistency on a small plate placed in the freezer.)
  • Pour the jam into prepared canning jars with 1/4 inch headspace. Either store in the refrigerator/freezer for immediate use, or process in a water bath canner for 10 minutes for a shelf stable rhubarb jam.

2 pounds rhubarb, trimmed and cut crosswise, 1/2 inch thick (6 1/2 cups)
1 pound sugar (2 1/4 cups)
Salt
Fresh lemon juice (optional)

Steps:

  • Bring rhubarb, sugar, and 1/4 teaspoon salt to a boil in a large pot, stirring often. Cook, stirring often, until bubbles slow, foam subsides, fruit rises to the top, and jam sticks to a wooden or metal spoon when lifted from mixture, about 10 minutes. Stir in lemon juice to taste. Let cool for 1 hour. Refrigerate overnight.

5 cups chopped fresh rhubarb
4 cups white sugar
1 (20 ounce) can crushed pineapple, drained
1 (6 ounce) package strawberry flavored Jell-O®

Steps:

  • In a large saucepan or stock pot, combine the rhubarb, sugar and pineapple. Bring to a boil over medium-high heat. Boil for 10 minutes, stirring frequently. Jars can be sterilized at the same time.
  • After the rhubarb mixture has boiled for 10 minutes, remove from heat, and stir in strawberry flavored gelatin powder. Transfer to sterile jars, seal with lids, and process for 15 minutes in a boiling water bath. Allow jars to cool in a draft-free area. Refrigerate jars after seal has been broken.

2 ½ pounds fresh rhubarb, chopped
2 cups white sugar
2 teaspoons grated orange zest
⅓ cup orange juice
½ cup water

Steps:

  • In a saucepan, combine the rhubarb, sugar, orange zest, orange juice and water. Bring to a boil, then cook over medium-low heat for 45 minutes, stirring occasionally, or until thick. It will thicken more as it cools.
  • Ladle into hot sterile jars, and seal with lids and rings. Store opened jars in the refrigerator.

- 5 cups diced rhubarb 3 cups granulated sugar 1 package unflavoured gelatine

Steps:

  • Wash rhubarb stalks thoroughly and cut into 1/2 inch pieces. Put into a large bowl. Pour 2 3/4 cups of the sugar on top of the rhubarb and leave in refrigerator overnight. The sugar will draw water from the rhubarb. Bring the rhubarb and sugar mixture to a boil in a saucepan or in the microwave. Cook for 10 minutes or until tender. Meanwhile, mix the remaining 1/4 cup of sugar with the package of gelatine. When the rhubarb is cooked, remove from heat and add the gelatine while stirring until the gelatine is dissolved. Pour into containers and refrigerate.

4 cups fresh strawberries, crushed
2 cups chopped fresh rhubarb
1/4 cup bottled lemon juice
1 package (1-3/4 ounces) powdered fruit pectin
5-1/2 cups sugar

Steps:

  • In a Dutch oven, combine strawberries, rhubarb and lemon juice; stir in pectin. Bring to a full rolling boil, stirring constantly. Stir in sugar; return to a full rolling boil. Boil and stir 1 minute. , Remove from heat; skim off foam. Ladle hot mixture into 6 hot sterilized pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 5 minutes. Remove jars and cool.

Got a few rhubarb plants from my neighbor. Wanted to try something different or at least I thought. Found this in a old church cookbook. Everyone who tried it was impressed--even non rhubarb eaters.

3 cups rhubarb, cut fine
2 1/2 cups sugar
1/2 cup water
1 (3 ounce) box strawberry Jell-O gelatin dessert

Steps:

  • Cook rhubarb and water till boiling.
  • Add sugar.
  • Let mixture come to a rolling boil.
  • Boil 2 minutes, stirring often.
  • Add Jello and stir well.
  • Remove from heat.
  • When mixture is almost cool (fruit won't come to the top), put in small freezer containers or small margarine containers.
  • Freeze some and keep rest in refrigerator.
