Want to try your hand at making homemade sausage? This simple recipe yields great, consistent results. Kitchen Aid has a meat grinder attachment for its stand mixers which makes this a breeze.

Number Of Ingredients 6

6 1/2 pounds boneless pork shoulder roast
1/3 cup dried sage
1/4 cup salt
2 tablespoons brown sugar
2 tablespoons ground black pepper
1/8 teaspoon ground red pepper

Steps:

  • Trim any excess fat from the pork and cut into chunks. Place the meat through a meat grinder. Combine the ground meet and remaining ingredients in a bowl and mix well. Shape the sausage into patties. The sausage can be cooked immediately but for best flavor wrap the sausage patties in plastic wrap and freeze for 1-2 weeks. Thaw before cooking.

4 pounds boneless pork butt
1 pound veal (or chicken) stew meat
2 teaspoons coarse ground pepper
1 tablespoon marjoram leaves
4 to 6 cloves garlic, minced
1/4 teaspoon ground allspice
1 cup cold water
3 to 4 teaspoons salt
Hog casings (if making links)

Steps:

  • Cut the meat into one-inch cubes. Put through medium grinder. Using your hands (wear latex or rubber gloves, if you prefer), mix the pepper, marjoram, garlic, allspice, water and salt into the meat. Cover and chill at least two hours or overnight. Make into patties or links using hog casing. If links, spread on a tray and refrigerate for up to three days, turning daily to allow sausages to dry and cure. Makes five pounds of sausage. To cook, you can grill or brown in a skillet. Cook thoroughly, at least 20 minutes.

This recipe was copied from a little sausage booklet and has been well enjoyed over the years. Make these for those special holiday weekend breakfasts. The aroma alone has everyone up waiting for breakfast to be served. You can double or triple the recipe as these freeze well.

2 lbs pork (a good mix of fat and lean using a fine grind works best)
1 cup fine dry breadcrumb
2 -3 teaspoons salt
1/2 teaspoon white pepper
1/4 teaspoon ground ginger
3/4 teaspoon ground sage
1/4 teaspoon thyme leaves
1/8 teaspoon ground allspice
1/2 cup ice water

Steps:

  • Place all ingredients in a large bowl,mixing well to assure spices are evenly distributed.
  • Form into patties, refrigerate several hours to allow spices to blend.
  • Fry over medium heat until well browned and cooked through, with no pink showing.
  • NOTE this mixture may be stuffed into small casings, making 3-4 inch links, your guests will be so impressed!

This recipe is as old as the hills. I've made it for the last 50 years and it was old when I got it. I thought it would be a good addition, so that young cooks can see how easy it is to make a basic sausage. You can play with it, add more spice or whatever. I do suggest trying it as written first. Just as good as what you can buy, but you know what is in there. I make a double recipe and then freeze it. It is really easy and quick to whip this up and costs a lot less than store bought. Prep time does not include sitting in the fridge for 24 hours.

2 lbs ground beef
1 cup water
1/2 teaspoon liquid smoke
1/2 teaspoon onion powder
1/2 teaspoon coarse black pepper
1/2 teaspoon garlic powder
1/2 teaspoon mustard seeds
2 tablespoons quick curing salt (Mortons Tender Quick salt)

Steps:

  • Mix together all ingredients in a nonmetal bowl. It is easier to mix the seasoning with the water, then incorporate the meat, using your hands to distribute all spices evenly (like making a meatloaf). A note, based on a review, do not over mix the meat or it will be tough. This is true about any kind of meat, work it just enough to get every thing incorporated.
  • I use an ice cream bucket and place a lid on top.
  • Refrigerate for 24 hours.
  • Remove from bowl and roll into 4 rolls, about 1 1/2 to 2 inches thick.
  • Wrap in aluminum foil with shiny side towards meat.
  • Punch tiny holes along one side and place in a broiler pan with holes down to drain out liquid.
  • Bake at 325 degrees for 1 1/2 hours.
  • Remove foil and rewrap in plastic wrap.
  • Ready to use or freeze.

5 tsp. dried sage
5 tsp. salt
2 tsp. black pepper
½ tsp. garlic powder

  • Combine all ingredients in a small bowl.
  • Use immediately or store in a sealed container at room temperature for up to 2 months.
