- In medium saucepan, combine sugar, cocoa and 1/2 C milk. Stir constantly over medium heat until mixture comes to a boil. Cook, stirring constantly for 2 minutes. Add remaining milk and heat; do not boil. Remove from heat and stir in vanilla if desired. Serve hot, with marshmallows.

- Combine the cocoa, sugar and pinch of salt in a saucepan. Blend in the boiling water. Bring this mixture to an easy boil while you stir. Simmer and stir for about 2 minutes. Watch that it doesn't scorch. Stir in 3 1/2 cups of milk and heat until very hot, but do not boil! Remove from heat and add vanilla. Divide between 4 mugs. Add the cream to the mugs of cocoa to cool it to drinking temperature.

- Heat 1 cup of milk in a large saucepan over medium-high heat. In a small bowl whisk together the cocoa powder, granulated sugar, and salt. Add the cocoa powder and sugar mixture. Whisk until smooth and all of the lumps are removed.
- Add the remaining milk and whisk even more. Heat the hot chocolate mixture until very warm, but do not boil.
