OLD SCHOOL-DEJA VU CHOCOLATE PEANUT BUTTER SQUARES
Here is one for the chocolate/peanut butter lover, old or young. I say old first; this was served as the dessert on our lunch tray, 1st grade through 12th grade, usually on "Pizza Friday." And one would not think twice by propositioning a trade of their rectangle slice of frozen pizza for your peanut butter square. (This is where that term you learned in social studies class, "bartering", came into good use!) Can be served for up to 12-24 servings; 24 small servings or 12 nice big servings, like the ones served in the cafeteria at Whitehall School District, Pennsylvania. To this day, they are still served! (Prep/cook time does not include chill time).

Steps:
- Mix first 5 ingredients together with a heavy duty mixer.
- Meanwhile, melt the milk chocolate on stovetop.
- Spread in a 13x9 inch pan and top with the melted milk chocolate.
- Chill; cut into squares upon serving.
- *Forthe Old School Deja Vu effect: serve each square in a muffin/cupcake paper.
EASY PEANUT BUTTER SQUARES
These are very rich so you will want to cut them in small pieces. They keep well (if no one eats them first!) either in the fridge or the freezer. I've seen other recipes for these but I find that this method works the best at making them smooth and creamy. The original recipe calls for walnuts so I have put them in here but I never use them. My great aunt and my mother made these often, also without the nuts. We like to use the coloured marshmallows because they look prettier. They have always been favourites with the kids (of all ages!). NOTE: preparation time includes cooling time

Steps:
- In top of double boiler, melt butter, peanut butter and butterscotch chips.
- Remove from stove and cool (not in the refrigerator) until bottom of pan is touchable.
- Add marshmallows and nuts.
- Mix together.
- Place in a buttered pan and refrigerate.
SCHOOL CAFETERIA PEANUT BUTTER COOKIES
This is supposedly the recipe for the awesome peanut butter cookies that the East Penn School District cafeterias made from scratch each day when I was in school. With the revamping of the lunch program to promote healthy foods, they discontinued making these cookies sometime in the early 90s. I thought these were the best cookies ever. This makes a lot of cookies. You may need to use your hands near the end of mixing as the dough gets stiff. You can cut this recipe in half, but use 3 eggs.

Steps:
- Preheat oven to 350.
- Use a very large mixing bowl and cream together shortening, butter and both sugars.
- Beat in eggs.
- Beat in peanut butter.
- Gradually add in flour and baking soda. You may only need the 4 3/4 cups of flour and not a full 5 cups.
- You may need to use hands as dough gets very stiff.
- Drop them by tbsp on to ungreased cookie sheets.
- Bake at 350 degrees for about 10-13 minutes or until lightly browned at edges.
- Makes about 100 cookies.

Oh boy, are these good! On a hot summer's day when you want something sweet, these won't heat up the kitchen. Kids love them!

Steps:
- Line a 9 inch square pan with aluminum foil.
- Beat powdered sugar, butter, 1 cup peanut butter and the vanilla in large bowl with electric mixer on medium speed.
- Stir in graham cracker crumbs and peanuts (mixture will be stiff).
- Press into pan.
- Melt chocolate chips and 1/4 cup peanut butter over low heat, stirring frequently, until smooth.
- Spread over bars.
- Refrigerate about 1 hour or until chocolate is firm.
- Remove from pan, using foil to lift; fold back.

- Refrigerate about 2 hours or until firm.
- Store covered in refrigerator.
