200g (7oz) gluten-free white bread flour
1tbsp gluten-free baking powder
284ml carton buttermilk or soya milk
3 free-range eggs, lightly beaten
2tbsp olive oil
25g (1oz) green olives, pitted and sliced
1tsp chopped rosemary leaves, plus 1 sprig, leaves removed
2tbsp grated Parmesan cheese

Steps:

  • Heat the oven to 180C/160C fan/350F/gas 4. Put the flour, 1tbsp salt and the baking powder into the bowl of an electric mixer. Add the buttermilk, eggs and oil and mix with the dough hook or beater, to make a smooth batter
  • Add the olives, chopped rosemary and 1tbsp Parmesan (omit if baking dairy-free). Pour the mixture into the prepared loaf tin and sprinkle over the rosemary leaves and remaining Parmesan. Bake for 50 minutes, until a skewer inserted into the centre comes out clean

Steps:

  • Preheat oven to 350°F. Coat a 9×5-inch loaf pan with nonstick cooking spray.
  • In a bowl combine flour, baking powder, rosemary, sugar, and salt.
  • In a bowl whisk together milk, eggs, olive oil, and garlic. Add flour mixture to egg mixture. Stir to combine. (Dough will be wet.) Using a spatula dusted with flour, transfer dough to prepared pan. Press rosemary sprigs on top; sprinkle with sea salt flakes. Bake 40 to 45 minutes or until golden and a toothpick inserted near center comes out clean. Let cool 10 minutes. Remove from pan; cool.

1 tablespoon white sugar
1 cup warm water
1 (.25 ounce) package active dry yeast
1 teaspoon salt
2 tablespoons butter, softened
2 tablespoons rosemary
1 teaspoon Italian seasoning
3 cups bread flour
1 tablespoon olive oil
1 egg, beaten

Steps:

  • Dissolve the sugar in warm water in a medium bowl, and mix in the yeast. When yeast is bubbly, mix in salt, butter, 1 tablespoon rosemary, and Italian seasoning. Mix in 2 cups flour. Gradually add remaining flour to form a workable dough, and knead 10 to 12 minutes.
  • Coat the inside of a large bowl with olive oil. Place dough in bowl, cover, and allow to rise 1 hour in a warm location.
  • Punch down dough, and divide in half. Line a baking sheet with parchment paper. Lightly grease paper. Shape dough into 2 round loaves, and place on the baking sheet. Sprinkle with remaining rosemary. Cover, and allow to rise 1 hour, or until doubled in size.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Brush loaves with egg. Bake 15 to 20 minutes in the preheated oven, or until golden brown.

However, Cook's Illustrated testers preferred a mix of both green and black olives. The bread will keep for up to 2 days, well wrapped and stored at room temperature. To recrisp the crust, place the bread in a 450°F oven for 5-10 minutes. The bread will keep froze for several months when wrapped in foil and placed in a large zipper-lock bag.

1 3/4 cups water, room temperature
2 teaspoons fast rise yeast or 2 teaspoons instant yeast
2 tablespoons honey
3 1/2 cups bread flour (plus extra as needed for dough and counter)
1/2 cup whole wheat flour
2 teaspoons salt
2 tablespoons chopped fresh rosemary
1 1/2 cups pitted olives (rinsed, chopped rough, and patted dry)

Steps:

  • Whisk water, yeast, and honey in bowl of standing mixer. Add flours and mix on low speed with dough hook until cohesive dough is formed, about 3 minutes. Cover bowl with plastic wrap and let sit at room temperature for 20 minutes.
  • Remove plastic wrap; make well in center of dough and add salt and rosemary. Knead dough on low speed for 5 minutes. Increase speed to medium and continue to knead until dough is smooth and slightly tacky, about 1 minute. If dough is very sticky, add 1-2 tablespoons flour and continue mixing for 1 minutes. Transfer dough to lightly floured counter and pat into 12x6-inch rectangle.
  • Press olives into dough. Starting at long side, roll rectangle into tight log. With seam side facing up, roll log into coil. Transfer dough, spiral side up, to oiled container or bowl, at least 2 quarts in volume, and cover with plastic wrap. Let dough rise in warm, draft-free location until it increases in size by 50 percent, about 1 hour.
  • Fold partially risen dough over itself. Turn bowl 90 degrees; fold again. Turn bowl again; fold once more. Cover with plastic wrap and let rise 30 minutes.
  • Repeat folding, replace plastic wrap, and let rise until doubled in volume, about 30 more minutes.
  • Transfer dough to lightly floured work surface, being careful not to deflate. Divide dough in half, loosely shape each piece into ball, and let rise 15 minutes. Flip each ball over and, starting from top, roll into tight oval shape. Using palms, roll each oval from center outward until 12-inch loaf is formed. Poke any olives that fall off into bottom seam, then pinch seam closed.
  • Transfer each loaf, seam side down, to 12x6-inch piece of parchment and cover with plastic wrap. Let rise until doubled in size, 1-1 1/2 hours (dough is ready when it springs back slowly when pressed lightly with finger.).
  • Adjust oven rack to lower-middle position; place baking stone on rack, and heat oven to 450°F at least 30 minutes before baking.
  • Slide parchment sheets with loaves onto peal or back of inverted baking sheet. Starting and stopping about 1 inch from each side, use razor blade or sharp knife to cut three 1/2-inch deep slashes on diagonal along top of each fully risen loaf. Use a spray bottle filled with water to spray loaves lightly with water. Carefully slide parchment with loaves into oven using jerking motion.
  • Bake 15 minutes, spraying loaves with water twice more in the first 5 minutes, and then reduce oven temperature to 375°F Continue to bake until bread is deep golden brown and instant-read thermometer inserted into center of loaf registers 210°F, 25-30 minutes. Transfer to wire rack, discard parchment, and cool loaves to room temperature, about 2 hours.

This is a delicious gluten-free olive oil loaf with a more rustic style and a soft, pliable texture. The rosemary and olives lend a wonderful flavor. It doesn't need to be toasted in order to be soft and delicious (unlike most GF breads). Try a slice with butter on it, or as an accompaniment to Southern European and Mediterranean dishes, or try it with any soup or stew. As for me, I ate the entire loaf (not at once, of course) with hummus on top because I loved how the flavors went together. It would also make a killer grilled cheese sandwich with sharp cheddar.

1/2 cup amaranth flour
1/4 cup garbanzo flour
1/4 cup rice flour, plus
2 tablespoons rice flour
5 tablespoons teff flour
1/4 cup tapioca starch
1/4 cup arrowroot
2 tablespoons flax seed meal (ground flax seeds)
3 teaspoons xanthan gum
1 1/2 tablespoons fresh rosemary, finely minced
1/2 cup pitted kalamata olive, chopped roughly
2 teaspoons active dry yeast
1 teaspoon salt
2 whole eggs
2 eggs, whites separated from yolks
3/4 cup water, room temperature
5 tablespoons extra virgin olive oil
1 1/2 tablespoons honey
2 teaspoons apple cider vinegar
coarse sea salt, crystals for crust

Steps:

  • Preheat the oven to 200°F.
  • Sift the flours, yeast and all other dry ingredients (except coarse sea salt) into a medium bowl. Stir in flax meal and rosemary, and combine.
  • Combine wet ingredients, including the two whole eggs and the two separated egg whites in a large bowl, using a hand-mixer on low or medium speed. [The two separated egg yolks should be set aside in a small bowl for later use as a glaze]. When fully combined, add kalamata olives. Slowly add dry ingredient mixture and mix with a wooden spoon until fully blended, with no lumps. Scrape the sides regularly.
  • Grease a 9x5" bread pan, and pour the dough into the pan. Use a spatula or knife to evenly shape the top of the loaf. Cut two diagonal slashes in the top of the loaf. Beat the two separated egg yolks that have been set aside and brush the top of the loaf very lightly with them. Optional: Sprinkle coarse sea salt crystals very sparsely to embellish the loaf.
  • Turn off the oven and immediately place the pan in it. Do not open the door again, if possible. Allow the dough to rise for 90 minutes. It should rise to the very top of the pan.
  • Increase heat to 350F and bake for approximately 40 minutes. The crust should be golden-brown. Allow to cool slightly before removing it from the pan to finish cooling. Do not slice until the bread is no longer hot.
  • This loaf does not need to be frozen, but if there are leftovers after a few days, place slices in airtight bags and freeze.

This recipe is a classic artisan-style sourdough bread with 30% whole wheat flour. We add the kalamata olives and chopped rosemary during the initial mixing for a scrumptious flavor that is spread throughout the final bread. This loaf makes a great appetizer or snacking bread.

350g all purpose flour or bread flour (2 2/3 cups)
150g whole grain Kamut flour (1 heaping cup)
380g water (1 2/3 cups)
70g sourdough starter (1/4 cup)
8g salt (1 1/2 teaspoons)
90g halved pitted kalamata olives (about half the olives in a 12-ounce jar)
1 to 2 Tbsp chopped dried or fresh rosemary

Steps:

  • Mixing and Bulk Fermentation
  • Thoroughly mix the flours, water, starter, and salt in a bowl that has enough room for the dough to double in size.
  • Add the olives and rosemary and continue mixing until they're evenly distributed. Note the level of the dough and the time. Cover the dough and let it rest on your counter for 30 minutes.
  • With damp fingertips, stretch and fold the dough, lifting the edges of one side of the dough and folding it over to the other side. Go around the bowl 2 to 3 times, stretching and folding, and stop when the dough feels tighter. Cover and let the dough rest again for 30 minutes.
  • Perform three more rounds of stretching and folding as in step 2, separated by 30-minute rests.
  • When the dough has almost doubled in size and the surface is puffy and bubbly, end the bulk fermentation. Depending mostly on temperature, this will likely be 6 to 10 hours from mixing.
  • Pre-Shaping, Bench Rest, and Shaping
  • Scrape the dough out of the bowl onto a well-floured countertop and pre-shape it into a ball.
  • Cover the dough with your inverted mixing bowl and let it bench rest for about 20 minutes.
  • Flour the top of the dough and use your bench knife to flip it onto the floured side. Shape the dough into the appropriate shape for your baking vessel.
  • Final Proof
  • Let your shaped dough rest on its seam while you flour your proofing basket, then place the dough in the basket seam-side up.
  • Cover the basket and let the dough rise for another 1 to 3 hours for the final proof. The dough will expand in the basket but not double in size. If you want to bake much later, you can do the final proof in the refrigerator for 10 to 12 hours and bake the dough directly from the cold.
  • Baking and Storage
  • Before the end of the final proof, preheat your oven and baking vessel for 30 minutes at 500°F (or 450°F if that is the heat limit of your baking vessel).
  • Remove your dough from the refrigerator, flip it out of the basket onto a piece of parchment paper, and score the top of your dough.
  • Transfer the parchment and dough to the base of your baking vessel, cover, and return the vessel to the oven.
  • Bake for 20 minutes and then drop the oven temperature to 450°F. After another 10 minutes, take off the lid, and after another 5 to 10 minutes, remove the bread from the oven. The internal temperature should be 205°F or higher.
  • Let the bread cool on a rack for about 2 hours before slicing.
  • Store the bread cut-side down on your cutting board with a cloth over it. Slice and freeze after 3 to 4 days.
