Cheesy bacon dinner rolls that are both tasty and filling and are made quickly in just 40 minutes!

12 purchased round soft smooth-topped dinner rolls (about 1 to 1 1/2 oz each)*
8 slices bacon
1/4 cup chopped ripe olives, drained (from 4 1/4-oz can)
1/4 cup finely chopped pimiento-stuffed olives (about 16 olives)
4 medium green onions, finely chopped (1/4 cup)
1/4 cup mayonnaise or salad dressing
1 cup finely shredded Cheddar cheese (4 oz)

Steps:

  • Heat oven to 350°F. In each roll, cut a pocket from the top down to within 1/2 inch from each side, cutting almost to but not through the bottom; set aside.
  • Line bacon rack or microwavable plate with microwavable paper towels; place bacon on rack. Cover with paper towel. Microwave on High 4 to 6 minutes or until bacon is crisp. Crumble bacon when it is cool enough to handle.
  • In small bowl, mix bacon, olives, onions, mayonnaise and 1/2 cup of the cheese. Fill each pocket with 1 heaping tablespoon bacon mixture. On ungreased cookie sheet, place rolls; sprinkle each roll with 2 teaspoons cheese. Bake 14 to 16 minutes or until filling is hot.

7-ounces7-ounces (200g) city ham
3.5-ounces3.5-ounces (100g) black olives
3.5-ounces3.5-ounces (100g) green olives
2tablespoons2 tablespoons chopped parsley

Steps:

  • NOTE: City ham is the already cooked ham and is sold as "ready to serve". Buy it still on the bone, because it's better! If you don't want to bring back the whole ham at home, ask your butcher to slice it off for you. In a large bowl, whisk together the wine, oil, eggs, and salt. Separately, mix the flour and baking powder, sift and stir into the liquid preparation. Chop the onion finely and sautee in a skillet with a bit of olive oil or butter. Add the bacon to onions and cook for a few minutes then keep aside. Take care of draining the mixture to avoid a soggy dough. Slice the olives and parsley then cut the ham. Add all ingredients and grated cheese to the basic preparation and mix. Pour into a buttered pan. Bake in the oven for 1 hour at 360°F (180°C).

2 1/2 cups all-purpose flour
2 1/2 tablespoons sugar
2 teaspoons double-acting baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoon dry mustard
1/8 teaspoon cayenne
1/4 cup unsalted butter
1 cup sharp cheddar cheese, grated
1 large egg
1 cup buttermilk
1 teaspoon Worcestershire sauce
5 slices bacon, cooked, drained and crumbled
1 cup black olives, chopped

Steps:

  • Preheat oven to 375°F.
  • In a bowl combine the flour, sugar, baking powder, baking soda, salt, dry mustard and the cayenne. Add the butter and blend the mixture until it resembles meal. Stir in the cheddar cheese gently.
  • In a small bowl whisk together the egg, buttermilk and the Worcestershire sauce; stir the mixture into the flour mixture until it is not quite combined.
  • Add the bacon and olives and stir once again briefly until the dough is just combined.
  • Turn the batter into a well buttered loaf pan and bake the bread for 30 to 40 minutes, or until a tester comes out clean. Let the bread cool in the pan on a rack for 5 minutes, then turn it out onto the rack and let it cool completely.

1 cup water (70° to 80°)
4 teaspoons sugar
3/4 teaspoon salt
1-1/4 cups shredded sharp cheddar cheese
3 cups bread flour
2 teaspoons active dry yeast
3/4 cup pimiento-stuffed olives, well drained and sliced

Steps:

  • In bread machine pan, place the first six ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust, color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., Just before the final kneading (your machine may audibly signal this), add the olives.

Steps:

  • Place ingredients in bread pan in order listed or according to manufacturer' s directions.
  • The cheddar cheese and bacon are added at the fruit and nut signal. Depending on your machine this could be anywhere from 30 to 40 minutes into the cycle.
  • Remember, when adding the yeast last, make a small well with your finger to place the yeast. This will insure the proper timing of the yeast reaction. This bread is processed at the Basic (Standard) or Rapid cycle, or according to manufacturer' s directions.

¼ cup creamy salad dressing
3 tablespoons finely chopped onion

1 (1 pound) loaf French bread, cut in half lengthwise
1 tablespoon sliced ripe olives

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a bowl, mix the Cheddar cheese, creamy salad dressing, onion, and chili powder. Spread each bread half with an equal amount of the mixture, and top each half with equal amounts olives. Close halves, and cut the loaf into 12 slices. Wrap loaf in aluminum foil.
  • Bake 10 to 15 minutes in the preheated oven, until cheese is melted.
