ONE-BOWL CHEDDAR BEER MUFFINS



One-Bowl Cheddar Beer Muffins image

One bowl and 7 ingredients is all you're going to need to mix up batch after batch of these insanely-soft cheddar beer muffins.---They're SO good next to a bowl of chili!

Number Of Ingredients 7

1-1/2 cups white whole wheat flour
1 tablespoon baking powder
1/2 teaspoon garlic powder
1-1/2 teaspoons salt
2 tablespoons agave syrup
12 oz light beer
3/4 cup shredded cheddar cheese

Steps:

  • Preheat oven 375F. Lightly grease a muffin tin. Set aside.
  • In a large bowl, combine flour, baking powder, garlic powder, and salt. Slowly whisk in agave and beer until batter is smooth and just combined. Fold in cheese.
  • Fill muffin tin cups 3/4 full of batter. Bake muffins at 375F 14-15 minutes or until muffins test done with a toothpick. Cool muffins in pan 10 minutes then remove and serve warm. Enjoy!

2 cups flour
4 teaspoons baking powder
1 cup sugar
1/2 teaspoon salt
1 teaspoon garlic powder
1 cup beer
1 egg, beaten
1/4 cup oil
2 cups cheddar cheese, shredded

Steps:

  • Preheat oven to 400F and lightly grease muffin tin.
  • Mix the dry stuff and the wet stuff in different bowls, them mix together along with the cheese.
  • Spoon into prepared muffin tins and bake for 18 to 20 minutes.
  • When done let them sit for 5 minutes before taking them out of the pan.

3/4 low-fat cheddar cheese
4 teaspoons sugar
1 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2/3 cup beer
1 egg (beaten)

Steps:

  • Measure out 2/3 cup beer-drink rest.
  • Preheat oven to 375°F.
  • Spray 6 muffin cups with nonstick cooking spray.
  • Spoon flour into measuring cup& level off.
  • Combine flour, cheese, sugar, baking powder, baking soda, and salt and mix well.
  • Add beer and egg, and stir into dry mixture until just moistened.
  • Divide evenly into muffin cups (about 3/4 full).
  • Bake 17-22 minutes, or until golden brown and toothpick inserted into center comes out clean.
  • Best served warm-- great with chili or tortilla soup.
