SKILLET SWISS STEAK
This quick and easy Swiss Steak is cooked in a skillet, so you can enjoy this serious comfort food even on a busy weeknight.

- Preheat your oven to warm (roughly 200F).
- Melt 1 Tbsp butter in a large, cast iron skillet over medium high heat.
- Mix the flour, salt, and pepper together on a large plate. Dredge the cube steak by pressing it into the flour to coat it lightly.
- Place the dredged steak into the hot skillet and cook the steak 3-4 minutes on each side, reducing the heat to medium if the pan gets too hot. Once the steak is cooked, transfer it to a serving platter (or 8x8 baking dish) and place it in the oven to stay warm.
- Add the remaining 1 Tbsp butter to the skillet. Once the butter is hot, add the sliced celery, onion, and garlic. Sauté over medium heat 5 minutes, or until softened.
- Add the tomatoes (with their juice), Worcestershire sauce, flour, and thyme. Mix well and bring the sauce to a simmer over medium high heat. Simmer the sauce until thickened 3-5 minutes. Season with salt and pepper to taste.
- To serve, spoon the vegetable mixture over the cooked steak.
- Serve with mashed potatoes*, pasta, or rice.

SWISS STEAK
This classic Swiss steak is made with a thick slice of top round steak slow cooked in tomato sauce until completely tender. One steak will easily feed a whole family.

- Sauté onions and garlic: Remove the steak from the pan and set aside. Add onions and garlic to the pan and another tablespoon of oil. Cook the onions and garlic for 3-5 minutes, using a metal spatula to scrape up any steak drippings, mixing them in with the onions. Add half of the herbs to the onions.
- Cover and simmer: Cover the pan with a tight fitting lid. If you have a domed lid that fits, use it. A domed lid will help circulate the steam and moisture from the cooking juices and keep the steak moist. Bring the steak in the tomato purée to a simmer and then lower the heat to the lowest heat possible to maintain a low simmer. (We use the warm setting on our electric range, if using a high BTU gas range you may want to prop the pot up on some balled up foil to give it more distance from the heat.) Cook for 1 1/2 hours.
INSTANT POT® SWISS STEAK
Bottom round steak and a few kitchen staples is comfort food. When the leaves start to fall and the temperatures drop it's time for something hearty. I've used bottom round but any tough, lean cut of beef will work. Serve over noodles or rice to soak up all of that great sauce.

- Dry steak well with paper towels and cut into four 4-inch pieces. Season with salt and pepper.
- Place flour into a shallow bowl. Dredge steak pieces in flour, shaking off excess.
- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Once the pot is hot, add 1 tablespoon avocado oil. Brown the steak in batches, so you don't crowd the pot, 2 minutes per side. Transfer browned meat to a warm plate and set aside.
- Add 1 tablespoon of avocado oil to the pot and cook onion, carrot, celery, and bell pepper until onions are soft and translucent, 3 to 4 minutes. Stir in garlic and cook until fragrant, about 1 minute. Deglaze the pot with Merlot. Mix in tomatoes, Worcestershire sauce, 1 teaspoon salt, oregano, and paprika. Return steak to the pot and push down into the tomato mixture.
- Close and lock the lid. Select manual pressure according to manufacturer's instructions; set timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.
- Allow pressure to release naturally according to manufacturer's instructions for 5 minutes. Carefully open the valve to release the remaining pressure, about 5 minutes more. Unlock and remove the lid.

ONE-POT SWISS STEAK WITH MUSHROOMS
This recipe will need some time to cook and develop the flavors, it's an easy recipe that is done all in one pot and even tastes better the next day! You can use diced tomatoes with juice in place of the stewed tomatoes but I have to say that the stewed tomatoes are better ;-) The water/cornstarch is only optional add in for a thicker sauce.

Steps:
- Heat oil and butter in a large Dutch oven over medium heat.
- Add in 2 steaks at a time and brown on each side, remove to a plate.
- Continue with remaining steak/s and remove to a plate.
- Add more oil into the pot if needed,.
- Add in onions, celery, bell pepper, chili flakes (if using) and dried oregano; saute stirring with a wooden spoon for about 3 minutes scraping up any browned bits on bottom of the pot.
- Add in garlic and bay leaves and saute for 2 minutes.
- Add in mushrooms, stewed tomatoes with juice, Worcestershire sauce and beef bouillon powder (if using) bring to a simmer over medium-high heat.
- Add the browned steaks back to the pot.
- Season with salt and black pepper to taste.
- Reduce heat to medium-low and cook covered for about 1-1/2 hours.
- If you wish to thicken the juice, remove the beef to a bowl or plate.
- Mix the water or beef broth with cornstarch until smooth and add into the simmering liquid, stir until thickened (about 2 minutes) then add in the steaks back to the pot.

- In a large cast-iron or ovenproof skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain, reserving 1/4 cup drippings. Crumble bacon and set aside. , Trim beef; cut into serving-size pieces. Brown on both sides in drippings. Top meat with mushrooms, tomatoes and onion. Sprinkle with tarragon and bacon. Cover and bake at 325°, until meat is tender, 1-1/4 to 1-3/4 hours, basting twice. , Remove meat to a serving platter; keep warm. Combine cornstarch and water until smooth; add to skillet. Bring to a boil; cook and stir until thickened, about 2 minutes. Reduce heat; stir in cream. Simmer, uncovered, until heated through, 3-4 minutes. Return meat to skillet and turn to coat with sauce. MY MOM'S SWISS STEAK
This is so easy and all done in one pot! It is delicious and everyone including kids will love it! This recipe is tried and true, impossible to fail! It can also be doubled or tripled without problems, but lower the heat on the second and third batch when browning, as not to burn.

- Heat oil in a large Dutch oven over medium-high heat. Place steaks into the pot one at a time, quickly browning on each side. Remove steaks, and set aside.
