One Pot Curried Sausages and Potatoes image

Insanely delicious and super easy recipe for Curried Sausages and Potatoes which needs only one pot and is ready in under 30 minutes!

2 tablespoons Oil
6 - 8 Sausages
1 Star Anise
1 teaspoon Fennel Seeds
2 Onions (sliced)
1 Tomato (diced)
1 cup Tomato Puree
1 Potato (large , peeled and diced)
1 teaspoon Chili Powder (or Paprika)
1 teaspoon Coriander Powder
1/2 teaspoon Garam Masala
Salt to taste
Coriander (Chopped for topping)

Steps:

  • Heat oil in a pot and add sausages and 1/4 cup water. Braise the sausages till the water evaporates and the sausages are light brown on all sides. Remove on a plate and set aside.
  • In the same pot, add star anise and fennel seeds. Saute for a minute and add the onions. Cook the onions for 3-4 minutes and add tomatoes, tomato puree, chili powder, coriander powder, garam masala and salt. Cook this mixture for a few minutes so that the spices are cooked a bit.
  • Add potatoes, 1 cup water and sausages to the pot. Bring this to a boil and simmer and cook for 10-15 minutes till the potatoes are cooked through. Switch off the flame and top with chopped coriander.
  • Serve this One Pot Curried Sausages and Potatoes with steamed rice or chapatis.

This delicious family meal; sausage and potato one pot, is packed full of tender sausages, soft potatoes and plenty of flavour

700g small new potatoes
3 onions, sliced
4 carrots, peeled and cut into thick sticks
200g chestnut mushrooms
8 Lincolnshire sausages
2 - 3 tbsp olive oil
1 tsp Worcester sauce
1 tsp tomato purée
375ml hot beef stock
Salt and freshly ground black pepper
2 tsp chopped flat leaf parsley

Steps:

  • Preheat oven to 180⁰C/350⁰F/Fan 160⁰C/Gas Mark 4.
  • Put the potatoes, onions, carrot, mushrooms and sausages into a large roasting tin. Pour on the oil and toss everything together making sure everything is well coated.
  • Add the Worcester sauce and tomato purée to the stock, whisk it in well and pour around the vegetables and sausages. Season with salt and pepper.
  • Roast in the oven for 1 ¼ - 1 ½ hours until the vegetables are golden and softened and the sausages browned.
  • Lift out the vegetables and sausages and keep warm. Serve with the gravy and sprinkle on the parsley.
