One Pot Greek Orzo Pasta image

With ground chicken, tomatoes, kalamatas, spinach + feta! this pasta is savory, rich and slightly sweet from the red pepper sauce swirled in.

1 cup chickpea rice or orzo pasta
2 cups chicken broth
1 lb. ground chicken
1 yellow onion (diced)
1 clove garlic (minced)
1 pint cherry tomatoes
2 cups fresh spinach
1 cup kalamata olives (sliced)
¼ cup feta crumbles
1 tsp. paprika
1 tsp red pepper flakes
olive oil
salt and pepper
1 6-oz. jar roasted red bell peppers
1 clove garlic (minced)
2 tbs. almond butter
juice from 1/2 lemon

Steps:

  • Start by cooking ground chicken: in a deep sauté pan or dutch oven, heat 1 tbs. olive oil then add ground chicken. break up with wooden spoon and season with 1 tsp. each of salt, pepper, paprika and red pepper flakes. once cooked (about 4-5 minutes), remove with slotted spoon and set onto plate.⁣
  • In same pan, add a little more oil and then diced onion. cook for 5 minutes then add the pint of cherry tomatoes, turning heat up slightly. cover and cook for another few minutes, then add in 1 clove garlic. after one minute, add in rice and toss to coat. add chicken broth, and bring to a boil. lower heat to simmer and cover, letting cook for about 10 minutes or until most all the liquid has absorbed into rice.⁣
  • In the meantime, make red pepper sauce if using: combine all ingredients in food processor and season to taste. ⁣
  • Once rice has cooked, turn heat off and add cooked ground chicken, spinach, sliced kalamata olives and crumbled feta. swirl in pepper sauce and serve! this tastes great warm, room temperature and cool.
