An EASY vegan recipe ready in 30 minutes that makes it easy to eat your veggies while enjoying the comforts of pasta, too!! The lemon and basil make the dish taste fresh and light!!

1 pound orzo, cooked according to package directions and drained
4 tablespoons olive oil for pan + more for finished dish, as desired
1 medium/large sweet Vidalia onion, diced small
4 cloves garlic, pressed or finely minced
one 15-ounce can garbanzo or cannelinni beans, drained and rinsed (I used no salt added)
1 medium/large zucchini, diced into half-moons
1 medium head broccoli florets (about 4 to 5 cups)
1/2 red bell pepper, diced small
2 teaspoons kosher salt, plus more as desired
1 teaspoon freshly ground black pepper, plus more as desired
1 to 2 teaspoons cardamom
pinch cayenne pepper, optional and to taste (does not make it spicy, only enhances flavor)
1 teaspoon lemon zest, or to taste
1/4 cup lemon juice, or to taste
1/3 cup chiffonaded basil, loosely packed
lemon wedges, optional for garnishing

Steps:

  • To a very large pot, add the orzo and cook according to package directions. Tip - Add 1 to 2 tablespoons olive oil to the water to prevent orzo from sticking, Drain and return to pot; set aside.
  • While orzo is cooking, to a separate large skillet add 3 tablespoons olive oil, onions, and cook for about 5 minutes; stir intermittently.
  • Add the garlic and cook for about 1 minute, or until fragrant; stir nearly continuously.
  • Add the beans, zucchini, broccoli, bell peppers, season evenly with salt, pepper, cardamom, optional cayenne, stir, cover the pot, reduce the heat to medium and allow vegetables to steam for about 5 minutes, or until as tender as desired.
  • Transfer the beans and vegetables to the pot with the orzo, add the lemon zest, lemon juice, basil, stir to combine, taste and check for seasoning balance. At this point I added 2 additional teaspoons salt, 1 additional teaspoon pepper, and 3 tablespoons of olive oil. This is a very large pot of pasta and vegetables, don't be afraid to season it generously; the olive oil keeps everything from sticking, especially the leftovers.
  • Optionally garnish with lemon wedges and serve immediately.

2 medium zucchini, cut into 1/4-inch slices
1 medium onion, chopped
2 cloves garlic, finely chopped
8 oz uncooked orzo pasta (1 cup)
1 1/2 cups Progresso™ vegetable broth (from 32-oz container)
1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
1 can (19 oz) Progresso™ chick peas, drained, rinsed
2 teaspoons grated lemon peel
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon lemon juice
1/4 cup julienned fresh basil leaves

Steps:

  • In 12-inch nonstick skillet, heat 1 tablespoon oil over medium-high heat. Add zucchini; cook 2 to 3 minutes, stirring occasionally, until zucchini is lightly browned. Transfer zucchini to plate.
  • Add remaining 2 tablespoons oil, the onion and garlic to skillet. Cook and stir 2 to 3 minutes or until softened. Add orzo; cook and stir 2 to 3 minutes or until orzo is lightly toasted. Stir in broth, tomatoes, chick peas, lemon peel, salt and pepper. Heat to boiling; cover, and reduce heat to low. Cook 8 to 10 minutes or until most of liquid has absorbed and orzo is almost tender.
  • Add zucchini and lemon juice to orzo mixture; stir to combine. Remove from heat, cover and let stand 3 to 5 minutes or until all the liquid is absorbed. Stir in basil, and serve.

2 tablespoons extra-virgin olive oil
1 cup diced onion
1 1/2 cups orzo or pearl barley
1/2 cup dry white wine
3 cups chicken stock or low-sodium broth
1/2 cup frozen petite green peas
1/3 cup grated Parmesan cheese
2 tablespoons chiffonade fresh basil
1 teaspoon lemon zest
1/4 cup heavy cream
Juice of 1 lemon
Salt and freshly ground black pepper

Steps:

  • In a heavy-bottomed medium saucepan, heat the olive oil over medium-high heat. Add the onion and saute until fragrant and translucent. Add the orzo and toast for 2 minutes, stirring occasionally. Add the wine and cook until absorbed.
  • Gradually add the chicken stock, stirring frequently. Bring to a simmer, lower the heat, and cover. Cook for 8 to 10 minutes, until the liquid is almost absorbed and orzo is tender. Remove from the heat.
  • Stir in peas, Parmesan, fresh basil, lemon zest, heavy cream, and lemon juice. Season the orzo with salt and pepper, to taste, and serve.

Easy Lemony Orzo with Roasted Vegetables and Feta image

1 med. red pepper, cut into 1" pieces
1 med. yellow pepper, cut into 1" pieces
1 med. red onion, peeled and 1" diced
1 sm. Italian eggplant, peeled and cut into ¾" pieces
⅓ cup extra virgin good olive oil
--- few fresh thyme sprigs
1 tsp. sea salt
¼ tsp. freshly ground black pepper
4 med. garlic cloves, minced
½ lb. orzo pasta
Lemon dressing:
⅓ cup freshly squeezed lemon juice
⅓ cup extra virgin olive oil
1 tsp. salt
½ tsp. freshly ground black pepper
Toppings:
4 med. scallions, minced (white and most green parts)
¼ cup pine nuts, toasted
12 oz. Greek Feta cheese, ½" diced (do not use crumbled Feta)
--- --- fresh basil leaves, cut into julienne (optional)

Steps:

  • Preheat the oven to 400° F.
  • Toss the bell peppers, onion, and eggplant with the olive oil, thyme, salt, and pepper on a large sheet pan. Roast the vegetables for about 20 minutes, and then toss in the garlic. (Do not add it earlier or it will burn). Roast for about 20 minutes more, or until browned, turning once or twice with a large spatula.
  • Meanwhile, cook the orzo in plenty of boiling salted water for about 7 minutes, until tender. Do not over cook. Drain the orzo and transfer to a large serving bowl. When the roasted vegetables are done and while they are still warm, add them to the pasta, scraping all the liquid and seasonings from the roasting pan into the pasta bowl.
  • To make the dressing, whisk together the lemon juice, olive oil, salt, and pepper in a small bowl. (It makes more than what you will actually need for this recipe)
  • Pour some (but not all of the dressing) on the pasta and vegetables. Let everything come to room temperature, then add the toppings: scallions, pine nuts, Greek Feta, and fresh basil. Gently toss everything to combine. Taste and adjust the seasonings. Serve at room temperature.

One-Pot Chermoula Shrimp and Orzo image

Traditionally used to season seafood and vegetables, chermoula is a Moroccan marinade made of herbs and spices like cilantro, parsley, paprika and cumin. In this one-pot recipe, the orzo cooks in a combination of chermoula and stock, so the orzo is seasoned all the way through. In the last few minutes of cooking, just stir the shrimp into the orzo to cook, and you have a quick and easy, yet exciting, dinner. Feel free to use a protein of your choice instead of shrimp, but adjust cook times accordingly. Also, consider making a big batch of chermoula and keep it in the fridge to use as a marinade, a dressing on salads or a condiment for sandwiches.

1 cup finely chopped cilantro
1 cup finely chopped flat leaf parsley
1/4 cup olive oil
3 garlic cloves, peeled and finely chopped
2 teaspoons paprika

1 teaspoon fine sea salt, plus more to taste
1/2 teaspoon granulated sugar
1 tablespoon unsalted butter
1 tablespoon olive oil
1 cup orzo
1 1/2 cups vegetable stock
3/4 pound peeled and deveined medium to large shrimp, tails removed

Steps:

  • Make the chermoula: Finely grate the zest from both lemons and set aside for serving, then, into a medium bowl, squeeze 2 tablespoons lemon juice. Stir in the cilantro, parsley, olive oil, garlic, paprika, cumin, salt and sugar and set aside until ready to use. (You can keep the chermoula in a sealed container in the fridge for up to 5 days.)
  • Prepare the orzo and shrimp: Heat the butter and olive oil in a large pot over medium-high until the butter is melted. Add the orzo and keep stirring until the orzo is lightly golden, about 3 minutes.
  • Add in the chermoula and stock and bring to a boil. Reduce the heat to low and cover the pot. Cook, stirring occasionally, until orzo starts to soften, about 10 minutes. If it looks like the orzo is too dry, add a couple of tablespoons of water to the pan.
  • Stir in the shrimp and cover the pot again until the shrimp and the orzo are both cooked through and most of the liquid has evaporated, 4 to 6 minutes more. Taste and adjust the seasoning with salt if necessary.
  • Serve immediately, topped with the grated lemon zest.
