½ onion (diced)
2 tablespoons butter
6 cups turkey broth (or chicken broth)
2 cups cooked turkey (or chicken)
14.5 ounces canned diced tomatoes (with juice)
2 medium carrots (sliced)
2 ribs celery (sliced)
½ cup frozen corn (defrosted & drained )
½ cup frozen peas (defrosted & drained )
1 small potato (peeled and cut into ½ " cubes)
½ teaspoon poultry seasoning
½ teaspoon dried basil
2 teaspoons fresh parsley (chopped)

Steps:

  • Cook onion in butter over medium heat until it starts to soften, about 3 minutes.
  • Place in the bottom of a 6qt slow cooker.
  • Add remaining ingredients (except parsley) and cook on low 7-8 hours or until potatoes are tender.
  • Stir in parsley and serve.

1 lb ground turkey
1/2 cup Italian breadcrumbs
1/4 cup onion
1 large egg
1/4 cup parsley, chopped
1/4 tsp salt
1/4 tsp pepper
2 tbsp extra virgin olive oil, (divided)
2 ribs celery, diced
1 medium carrot, diced
1 medium onion, diced
3 cups broccoli, cut into bite sized pieces
3 garlic cloves, minced
6 cups low sodium chicken broth
1 tbsp Worcestershire sauce
2 bay leaves
1/8 teaspoon red pepper flakes
1/2 tsp Italian seasoning
1/2 large lemon, juiced
1 cup spinach
salt and pepper
red pepper flakes (for serving)
Parmesan cheese (for serving)

Steps:

  • In a large bowl combine ground turkey, breadcrumbs, onions, eggs, parsley, salt and pepper.
  • Portion out meatballs. I got about 20 meatballs or so.
  • Heat a large pot over medium-high heat with 1 tablespoon olive oil.In two batches add meatballs and cook for 3-4 minutes or until they get golden brown on the outside. It is ok if the middle is still pink the meatballs will continue to cook in the soup.
  • Take out of the pan and set aside.
  • Add 1 tablespoon of oil to the same pot the meatballs were cooked in. Add in the celery, carrot, onion, broccoli and saute for 4-5 minutes or until the vegetables start to get tender.Add in garlic and cook for an additional minute.
  • Stir in chicken broth, Worcestershire sauce, bay leaves, red pepper flakes and Italian seasoning. Bring to a simmer and cook for 5 minutes.
  • Add in spinach and cook until wilted.Take off of the heat and add in lemon juice. Return meatballs back to the pot and season the soup with salt and pepper to taste.
  • Serve immediately with a sprinkle of red pepper flakes and Parmesan cheese.

2 skinless, boneless turkey breast halves, cubed
1 green bell pepper, diced

Steps:

  • Melt the butter in a pot over medium heat. Place onions in the pot and cook until tender. Stir in celery and carrots, and cook until tender. Stir in the potatoes and flour. Pour in the chicken stock, and season soup with marjoram. Place turkey in the pot, and bring to a boil. Reduce heat to low, cover, and simmer 30 minutes.
  • Mix the green bell pepper into the soup, and continue cooking 10 minutes, until pepper is tender.

1 tablespoon extra virgin olive oil
1 medium onion, diced
1 ½ cups sliced carrots
1 cup diced celery
1 cup sliced fresh mushrooms
salt and ground black pepper to taste
1 tablespoon minced fresh garlic, or to taste
6 cups turkey broth
2 cups chopped cooked turkey
2 cups chopped kale
1 (14.5 ounce) can diced tomatoes with juice
2 teaspoons dried Italian seasoning
1 bay leaf
½ (16 ounce) package rotini pasta, or more to taste

Steps:

  • Turn on a 6- or 8-quart multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Once pot is hot, add olive oil and heat until it shimmers, about 2 minutes. Add onion, carrots, celery, mushrooms, salt, and pepper. Saute until vegetables begin to soften, about 5 minutes. Stir in garlic and saute until fragrant, about 1 minute. Add turkey broth, turkey, kale, diced tomatoes with juice, Italian seasoning, and bay leaf and stir to combine.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 15 minutes. Carefully release the valve and release remaining pressure using the quick-release method, about 5 minutes. Unlock and remove the lid.
  • While pressure is releasing, bring a large pot of lightly salted water to a boil. Add rotini and cook at a boil until tender yet firm to the bite, about 8 minutes. Drain.
  • Ladle pasta into bowls and top with turkey, broth, and vegetable mixture.

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®), add oil, and select High Saute function. Add carrots, celery, onion, and parsnip and saute until slightly soft, about 5 minutes. 1 1/2 tablespoons olive oil
1 pound lean ground turkey
1/2 of a yellow onion, diced
1/2 teaspoon grated garlic
2 tablespoons tomato paste
1 tablespoon Italian seasoning
1 teaspoon smoked paprika
1 bay leaf
1 cup diced carrots
2 cups green beans cut into 1 inch pieces
2 cups chopped Yukon Gold potatoes
14 ounce can diced tomatoes
15 ounce can cannellini beans, rinsed and drained
6 cups low sodium chicken broth
1 parmesan cheese rind (optional)
1/2 cup frozen peas
3 cups baby spinach
Shredded parmesan cheese for serving

Steps:

  • In a large heavy bottomed pot heat the olive oil over medium-high heat. When the oil is hot add in the ground turkey, onion, salt and pepper. Crumble and cook the turkey until it's nearly cooked through.
  • Add in the garlic, tomato paste, Italian seasoning and smoked paprika. Stir until combined. Add in the carrots, green beans, potatoes, diced tomatoes, cannellini beans, bay leaf, Parmesan cheese rind, and chicken broth. Stir everything together and bring the soup to a boil.
  • Once boiling, lower the heat to medium-low and cover with a lid. Let it simmer for about 20 minutes or until the vegetables are tender. Remove the bay leaf and Parmesan cheese rind. Add in the peas and spinach. Cook until the spinach is wilted, about 2-3 minutes. Taste the soup for seasoning and add additional salt and pepper as needed. Serve topped with shredded Parmesan cheese if desired.
