ONE DOUGH, TWO COOKIES



One Dough, Two Cookies image

2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon kosher salt
1 1/4 cups packed brown sugar
1 cup (2 sticks) salted butter, softened
1/4 cup granulated sugar
2 large eggs
1 tablespoon vanilla
1/2 cup chocolate chips
1/4 cup chopped pecans
1/2 cup chopped dried cherries
Zest of 1 lime

Steps:

  • Whisk the flour, baking soda and salt in a bowl and set aside.
  • Cream together the brown sugar, butter and granulated sugar in a stand mixer, scraping the bowl once while mixing. Add the eggs 1 at a time, mixing, then add the vanilla. Add the flour mixture in increments, mixing gently after each addition. Scrape the bowl once and mix again. Divide the dough in half. Fold the chocolate chips and pecans into half the dough and the cherries and lime zest into the other half.
  • Spoon each portion of dough onto a long piece of plastic wrap. Carefully roll the dough inside the wrap, pressing gently to get it to form into a firm cylinder. Use immediately or freeze until ready to bake.
  • When ready to bake, preheat the oven to 375 degrees F.
  • Slice off as many cookies as you'd like and lay the slices on a baking sheet. (The thicker the slices, the farther apart the cookies need to be. They bake up flat.) Bake the cookies until nice and golden brown, about 10 minutes. Cool on a rack and serve.

1 cup butter-flavored shortening
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon water
1 teaspoon vanilla extract
2 cups quick-cooking oats
1-1/2 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon baking soda
1 teaspoon salt
1 package (10 ounces) peanut butter chips
1 cup chopped nuts

Steps:

  • In a large bowl, cream shortening and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in water and vanilla. Combine the oats, flour, cocoa, baking soda and salt; gradually add to the creamed mixture and mix well. Stir in peanut butter chips and nuts., Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 10-12 minutes or until edges are firm. Remove to wire racks to cool.

1 teaspoon vanilla
1 egg
2 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon coconut extract, if desired
1/2 cup flaked coconut
1/2 teaspoon almond extract
3 or 4 drops red food color
1/4 cup chopped maraschino cherries, well drained
1 tablespoon unsweetened baking cocoa
1/2 cup miniature semisweet chocolate chips
Additional sugar

Steps:

  • Heat oven to 375°F. In large bowl, mix 1 cup sugar, the butter, vanilla and egg with spoon. Stir in flour, cream of tartar, baking soda and salt. Divide dough into thirds.
  • Mix coconut extract and coconut into one third of dough. Mix almond extract, red food color and cherries into another third of dough. Stir cocoa and miniature chocolate chips into last third of dough.
  • Shape dough by rounded teaspoonfuls into 1-inch balls with floured hands. Place 2 inches apart on ungreased cookie sheet. Flatten each with greased bottom of glass dipped in additional sugar.
  • Bake cookies 7 to 9 minutes or until edges are set. Cool slightly; remove from cookie sheet to wire rack. Cool completely, about 15 minutes.
