MY PIZZA DOUGH (FAT FREE)



My Pizza Dough (Fat Free) image

I sometimes use this pizza dough as a substitute for my grandmother's recipe (which contains leaf lard). This recipe works, but I prefer Nana's, LOL ;) NOTE: The 2 hour "cooking time" is the rising time for the dough.

Number Of Ingredients 4

3 1/2 cups sifted unbleached flour (all-purpose)
1/4 teaspoon salt
1 (1/4 ounce) envelope dry yeast
1 1/4 cups warm water

Steps:

  • Dissolve yeast in 1/4 cup water, let stand for about 5 minutes.
  • Dissolve salt in 1 cup of warm water, place in a large bowl; add yeast and about 2 1/2 cups of sifted flour to the bowl - stir well to make a soft dough.
  • On a board, place remaining flour, make a well in center and add the dough to the well.
  • Knead the remaining flour into the soft ball of dough, turning the dough 1/4 turn as you knead and add flour, until dough is smooth and elastic and does not stick to hands or unfloured board.
  • Cover dough and let rise in a warm place for about 45 minutes.
  • Divide dough into 2 equal pieces, knead each piece for a few minutes, shape each into a ball, cover with a cloth and let rise for about 1 hour 15 minutes or until doubled.
  • Place the dough on a floured board and pound it lightly to deflate it.
  • Work and stretch each piece of dough until large enough to cover a round 12-inch pie plate (flouring both sides of dough to keep it from sticking to the board, hands or pie plate/pizza pan).
  • Add sliced tomatoes and toppings as desired, bake in preheated 400° oven for 20-30 minutes, remove from oven, let cool for 5 - 10 minutes before slicing, serve hot.

This is a super fast pizza crust I fall back on when there is absolutely no time. It makes a thick doughy crust. I top it with a jar of spaghetti sauce, shredded mozzarella, and veggies for a quick and reasonably healthy meal the kids will eat! Modified from "500 Fat Free Recipes"

2 cups white flour
1 cup whole wheat flour
1 tablespoon baking powder
12 ounces beer

Steps:

  • Preheat the oven to 425.
  • Mix all ingredients.
  • Spray a 9x13 inch baking pan (casserole size) with cooking spray or grease in your usual manner.
  • Top with your favorite pizza sauce, cheese, and toppings.
  • Bake for 25 minutes or until the crust is crispy and golden.

I was making pizza for my kids and their friends tonight. I had 3 crusts to make and was already on my second when I realized that I had forgotten to add the oil to my first crust. I made yet another in case the fat free one did not work out, but it was just great. Therefore, this is my new normal crust!

Number Of Ingredients 5

1/2-1 cup warm water
1 tablespoon yeast
1 teaspoon sugar
2 cups white flour
1/2 teaspoon salt

Steps:

  • In a small bowl mix 1/4 cup of the warm water with the yeast and the sugar. Stir it well to try to dissolve the yeast and sugar. Let it sit for about 5 minutes or until it gets foamy.
  • Meanwhile, in a food processor, combine the flour and salt. Pulse for about 5 seconds.
  • When the yeast mixture is foamy add it to the flour and pulse for about 10 seconds.
  • Turn the machine on. Start adding the remaining water a little at a time until the dough forms a ball.
  • Once it forms a ball let it spin 25 times.
  • Spray a cookie sheet with cooking spray. Put the ball of dough on top and cover it with a metal bowl you have sprayed with cooking spray. Let it sit there between 15 and 30 minutes depending on how much you want it to rise.
  • Heat the oven to 425. When the dough is done rising, pat it out on your cookie sheet into the shape you want for your pizza.
  • (Mine are often triangles because I am not very good at this step! But they sure are tasty!) Prick the crust repeatedly with a fork and bake it for about 5 minutes.
  • Take it out of the oven. You can top it immediately or let it sit depending on your need.
  • Once you have topped it, the pizza will need about 15-20 minutes to cook, or until brown.

3/4 cup warm water (110 degrees F.)
1 tablespoon extra virgin olive oil
1/4 teaspoon salt
2 garlic cloves, minced
1 teaspoon dried basil leaves
1 teaspoon dried oregano leaves
2 cups bread flour
2 teaspoons fast-rising active dry yeast

Steps:

  • Add all the ingredients in the bread pan of bread machine. Process according to manufacturer's instructions for a dough setting.
  • Meanwhile preheat the pizza stone or tiles to 450 degrees for 30 minutes. Prepare your favorite toppings.
  • When the bread machine has completed the dough cycle, remove the dough from the pan to a lightly oiled surface. Knead the dough several times and form the dough into an oval; cover with a towel and let rest for 10 minutes.
  • NOTE: Dough may be refrigerated at this point and stored until ready to use. To store each batch of dough, spray a plastic bag with nonstick spray and place the dough in it. Store no longer than 7 to 10 days, or if frozen for up to 2 months. If refrigerated or frozen prior to use, allow the portions to come to room temperature before they are rolled out.
  • Roll and stretch the dough into a 14-inch circle. Place the dough on the prepared peel. Brush the dough with some olive oil and layer your ingredients. Bake for approximately 15 minutes or until golden brown on the bottom and the top is bubbly.
  • Makes 1 large pizza or 16 servings.

Made without cream cheese, this crust is not only keto-friendly but also tastes just like pizza! Even though it's thin, the xanthan gum helps make it sturdy enough to pick up and hold all your favorite pizza toppings. Note that the yeast won't help the dough rise since it's lacking sugar to activate it; it is solely included to add traditional bread-like flavor. Shred your own mozzarella from a block of cheese instead of buying pre-shredded; the latter does not melt well.

1 ½ cups shredded part-skim mozzarella cheese
1 large egg, lightly beaten
1 cup blanched almond flour
1 teaspoon xanthan gum
⅛ teaspoon salt

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  • Dissolve yeast in warm water in a bowl. Set aside for about 5 minutes.
  • Place mozzarella cheese into a microwave-safe bowl. Microwave for 90 seconds, stirring every 30 seconds until cheese is completely melted. Stir in yeast mixture and egg and stir to combine; mixture will not incorporate well at this point.
  • Stir in almond flour, xanthan gum, and salt. If mixture is difficult to mix, reheat in the microwave for 20-30 seconds to soften the cheese. Stir again until well incorporated. Using your hands, knead the dough for 2 minutes.
  • Place dough on baking sheet and press with your fingers into a thin crust, approximately 11-12 inches in diameter.
  • Bake in the preheated oven until crust is lightly browned, about 10 minutes. Remove from oven, top with your favorite pizza toppings, and return to the oven for 5 minutes, or until cheese is melted.

1 (1/4 ounce) package active dry yeast
1 teaspoon white sugar
1 cup warm water (110 degrees F/45 degrees C)
2 1/2 cups bread flour
2 tablespoons olive oil
1 teaspoon salt

Steps:

  • 1. Preheat oven to 450 degrees F (230 degrees C). In a medium bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
  • 2. Stir in flour, salt and oil. Beat until smooth. Let rest for 5 minutes.
  • 3. Turn dough out onto a lightly floured surface and pat or roll into a round. Transfer crust to a lightly greased pizza pan or baker's peel dusted with cornmeal.
