Open-Face Philly Cheese Steak Sandwiches image

Try tender sliced steak dripping with real cheese sauce served on crusty bread to get your mouth watering.

Provided by BHG Test Kitchen

Time 36m

Number Of Ingredients 11

0.5 cup cold low-fat (1%) milk
1 tablespoon all-purpose flour
2 ounce extra-sharp cheddar cheese, finely shredded (1/2 cup, packed)
0.75 teaspoon salt
2 tablespoon olive oil
1 pound boneless top loin steak, very thinly sliced*
0.5 teaspoon freshly ground black pepper
1 large onion, sliced in very thin wedges
1 green sweet pepper, thinly sliced
1 red sweet pepper, thinly sliced
2 whole-grain Italian rolls (each about 6 inches long and 4 oz.), halved lengthwise

Steps:

  • For cheese sauce, in a small saucepan whisk together milk and flour to blend. Heat and stir over medium-high heat to bring to a simmer. Reduce heat to medium-low. Cook 2 minutes, stirring frequently until thickened. Stir in cheese and 1/4 tsp. salt untl cheese is melted. Simmer about 2 minutes, stirring frequently, until sauce is velvety and thick. Remove from heat. Cover surface with foil to keep warm and to prevent a skin from forming on top.
  • In a large nonstick skillet heat 1 Tbsp. of the oil over medium-high heat. Sprinkle beef with 1/4 tsp. each salt and black pepper. Add to skillet and cook for 4 to 5 minutes, just until browned and cooked through. Transfer to a plate; cover with foil to keep warm.
  • In the same skillet cook onion and sweet peppers in 1 Tbsp. hot oil over medium-high heat for 12 to 14 minutes, until edges are browned and onion is tender. Season with 1/4 tsp. each salt and black pepper.
  • Lightly toast split rolls. Evenly divide the onion-pepper mixture, meat, and cheese sauce among roll halves. TIP
  • To make slicing the beef easier, freeze it for 45 to 60 minutes before slicing. Make it vegetarian
  • Use 1 large sliced portobello mushroom per sandwich in place of the beef. Saute as directed for the beef. For big appetites
  • Serve sandwiches with both roll bottoms and tops.

From Food Network Specials, this is special with a cheese sauce you have to taste! This makes wonderful hors d'ouevres for a party!

Provided by Sharon123

Categories     Lunch/Snacks

Time 1h45m

Yield 60 hors d'ouevres

Number Of Ingredients 19

1 baguette, about 2 feet long, throw thin ends away
1/4 cup extra virgin olive oil, plus
extra extra virgin olive oil, for drizzling
salt & freshly ground black pepper
1 medium onion, diced small
1 small red bell pepper, diced finely
1 (1 lb) New York strip steak, steak 1-inch thick
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
2 cups whole milk
1 tablespoon Dijon mustard
1 tablespoon drained prepared horseradish
1 teaspoon kosher salt
1/2 teaspoon sweet paprika
1/8 teaspoon cayenne pepper, to taste
fresh ground white pepper
1 pinch freshly ground nutmeg
1 cup grated yellow cheddar cheese
1 tablespoon grated parmigiano-reggiano cheese

Steps:

  • Preheat oven to 400 degrees F.
  • Slice the baguette into 1/4-inch thick rounds, drizzle with oil, season with salt and pepper. Spread on a baking sheet, and bake until crisp and lightly golden, about 6 minutes. Transfer to a rack and cool in a single layer.
  • Heat 2 tablespoons oil in a large skillet over medium heat. Add onions and peppers and cook, stirring often, until onions are golden brown and peppers are tender.
  • Season steak with salt and pepper. In another large skillet, heat remaining 2 tablespoons oil over medium-high heat. Add steak and cook about 6 minutes per side, or until a meat thermometer registers 120 degrees F. Set aside to cool. Slice the steak "paper thin" (a slicer is great for this). Keep warm until ready to assemble.
  • To assemble:
  • Lay a slice of meat on each slice of baguette toast and top with 1 teaspoon of caramelized onions and peppers and a drizzle of the cheese sauce. Serve. Enjoy!
  • Cheese Sauce:.
  • Melt the butter in a medium saucepan over medium heat. Stir in the flour with a wooden spoon and cook stirring constantly in a figure 8, until pale yellow, about 1 minute. Slowly whisk in the milk and bring to a boil. Add the mustard, horseradish, salt, paprika, cayenne, white pepper, and nutmeg. Reduce the heat to maintain a simmer and cook, stirring constantly, until thickened, about 6 to 8 minutes. Remove from the heat and whisk in the cheeses. Set aside and keep warm.
  • Yield: about 2 cups.

PEPPERCORN DEMI NY STRIP STEAK WITH OLIVE OIL POACHED MUSHROOMS

Peppercorn Demi NY Strip Steak with Olive Oil Poached Mushrooms image

Provided by Robert Irvine : Food Network

Time 40m

Yield 4 servings

Number Of Ingredients 10

2 cups olive oil
1 1/2 cups button mushrooms
2 cups mashed potatoes
2 tablespoons unsalted butter, at room temperature
20 stalks asparagus, pencil or small size, poached in water and dry white wine
Four 10- to 12-ounce NY strip steaks
Salt and ground pepper
1/4 cup green peppercorns
1 cup prepared demi-glace
1 tablespoon minced garlic

Steps:

  • For the mushrooms: In a saucepan over medium-high heat, bring the oil to a light simmer and reduce to medium heat. Then add the mushrooms and cook until the exterior of the mushrooms softens, about 4 minutes. Remove and hold on a plate until serving.
  • For the steak: Preheat the oven to 400 degrees F. Warm the prepared potatoes and hold warm. Heat a thick-bottomed pan until the verge of smoking over medium-high heat. Then sprinkle the steaks with salt and pepper on both sides. Apply the steak to the heated pan. Sear on the first side for 4 minutes. Reduce the heat to medium, and then flip and repeat the process on the second side. This will result in a medium-rare steak. Finish the oven for higher temperatures.
  • Once the steak is cooked, remove from the pan to rest, and then add the peppercorns to the pan and warm for 20 seconds. Then add the demi-glace and garlic, warming for 3 minutes. Once warmed, remove from the heat and stir in the butter until smooth.
  • To serve, place a quarter of the mashed potatoes in the center of a plate, then place the cooked steak and drizzle with 1/4 cup sauce. Finish with a quarter of the mushrooms and 5 pieces of poached asparagus and serve.

Provided by Tyler Florence

Categories     main-dish

Time 1h25m

Yield 2 servings

Number Of Ingredients 6

Two 8-ounce New York strip loin steaks
Kosher salt
2 tablespoons extra-virgin olive oil, plus more for drizzling
2 tablespoons unsalted butter, at room temperature
1 small bunch fresh thyme sprigs
Sea salt, for sprinkling

Steps:

  • Preheat the oven to 275 degrees F.
  • Allow the steaks to come to room temperature, 30 to 45 minutes. Season the steaks with some kosher salt. Heat a large, oven-safe skillet over medium-high heat until hot, about 2 minutes. Add the olive oil to the pan. Carefully place the steaks in the pan and allow them to sear untouched until golden brown, about 4 minutes. Flip the steaks and take the pan off the heat. Add the butter and thyme sprigs. Spoon the melted butter over the steaks and continue to baste for about 45 seconds. Transfer the skillet to the center of the oven and cook the steaks until an instant-read thermometer inserted into the thickest part reads 135 degrees F., 5 to 7 minutes for medium-rare.
  • Carefully remove the hot skillet from the oven, transfer the steaks to a cutting board and allow the meat to rest for 10 to 15 minutes. Slice the steaks and arrange on a serving plate. Spoon the remaining pan sauce over the steaks, sprinkle with sea salt and drizzle with olive oil.

Provided by Food Network

Categories     main-dish

Time 43m

Yield 4 servings

Number Of Ingredients 30

3 tablespoons kosher salt
1 tablespoon sansho (Japanese pepper)
1 tablespoon coarsely ground black pepper
1 teaspoon smoked paprika
1/2 teaspoon chili powder
1/2 teaspoon cayenne
1/4 teaspoon ground tamarind
1/4 teaspoon red pepper flakes
1/4 teaspoon toasted coriander seeds
1/4 teaspoon dried juniper berries
1/4 teaspoon dried thyme
1/4 teaspoon dried rosemary
1/4 teaspoon dried oregano
1/4 teaspoon dried sage
1/4 teaspoon ground cloves
1/4 teaspoon ground cumin
1 dried bay leaf, crumbled
3 large Spanish onions, thinly sliced
2 tablespoons vegetable oil
1/3 cup ketchup
2 tablespoons capers
2 tablespoons cornichons, diced
2 tablespoons drained green peppercorns (packed in water)
1 1/2 teaspoons celery salt
5 tablespoons champagne vinegar
3 tablespoons balsamic vinegar
2 teaspoons vegetable oil
1 pound rib-eye, very thinly sliced by your butcher
12 slices white American cheese
4 poppy seed kaiser rolls, split

Steps:

  • Make Gary's secret onions: In a bowl, combine all the ingredients except the onions and oil. Working in batches, grind the spice mixture in a clean coffee grinder. Return half of the spice mixture to the bowl and reserve the remaining spice mixture. Add the onions to the bowl of spice mixture and mix to combine. Store the onions in the refrigerator, covered, to marinate for at least 3 hours and up to overnight. Heat the 2 tablespoons oil in a large skillet over medium heat. Add the marinated onions and reserved spice mixture and cook, stirring occasionally, until translucent. Set aside covered with foil to keep warm.
  • Make the tangy relish and cheese steak: In a mini food processor, combine the ketchup, capers, cornichons, green peppercorns, and celery salt and pulse four or five times. Add the vinegars and pulse two to three times until just blended. Set aside.
  • When ready to serve, heat the 2 teaspoons oil in a large nonstick skillet over medium-high heat. Add the beef and cook, stirring, until just cooked through. Remove from the heat.
  • Slather the bottom halves of the rolls with the tangy relish and top with the beef, onions, cheese and the top halves of the rolls. Slice and serve.

PHILLY CHEESE STEAK

Philly Cheese Steak image

I went to college in Tucson, Arizona and loved this little spot named Greasy Tony's. My friends and I would go there after the bars closed for amazing spicy philly cheesesteaks. I moved back to Michigan, and haven't been able to find a replacement since. Here is my adaptation. These are great sandwiches to have when the weather starts to turn cool. I also make a horseradish sauce to put on top but they taste great without the sauce! These make heaping sandwiches. When my market is out of hoagie rolls, I have used hot dog buns, hamburger buns and onion rolls. If you like it spicy, add more pepperoncini. Also, red pepper can be used in lieu of green pepper.
