SPICED GINGER-GLAZED HAM



Spiced ginger-glazed ham image

Treat guests over for Christmas to a Boxing Day ham. You don't need a long shopping list - this easy, sweetly spiced version uses just five ingredients

2kg unsmoked boneless gammon joint
2 ½l ginger ale (not sugar-free)
2 tsp allspice berries , plus 1 tsp, crushed
300g light brown soft sugar
3 tbsp finely grated ginger

Steps:

  • Put the gammon in a large pan and cover with 2 litres of ginger ale. Top up with water to cover the joint, if you need to. Add the whole allspice berries and bring to a boil. Turn the heat down to low, and simmer gently, covered, for 2½ hrs. Top up with water, if you need to, while it's simmering.
  • Drain the ham and leave until it's cool enough to handle while you make the glaze. Put the remaining ginger ale in a pan with the sugar, grated ginger and crushed allspice. Simmer, uncovered, for 20-25 mins until syrupy.
  • Heat the oven to 190C/170C fan/gas 5. Remove the skin from the ham, leaving a layer of fat, then score the fat in a criss-cross pattern. Transfer the ham to a foil-lined roasting tin, and brush over half the glaze. Roast for 15 mins, then glaze with the remaining syrup. Increase the temperature to 200C/180C fan/gas 6 and roast for a further 15-20 mins until you get a sticky golden crust. Leave to cool for 15 mins before carving. Drizzle over more glaze from the tin to serve, if you like. Can be made ahead and chilled for up to four days.

1 teaspoon salt
1 garlic clove, minced
2 to 3 fresh thyme sprigs or 1/4 teaspoon dried thyme
1/4 teaspoon ground ginger
1/4 teaspoon pepper
1 boneless pork loin roast (5 pounds)
GLAZE:
1 cup orange juice
1/4 cup packed brown sugar
1 tablespoon Dijon mustard
1/3 cup cold water
1 tablespoon cornstarch

Steps:

  • Preheat oven to 350°. Combine the first 5 ingredients; rub over roast. Place fat side up on a rack in a shallow roasting pan. Bake, uncovered, for 1 hour. , Meanwhile, in a saucepan over medium heat, combine orange juice, brown sugar and mustard. In a small bowl, mix water and cornstarch until smooth. Add to orange juice mixture. Bring to a boil; cook and stir 2 minutes. Reserve 1 cup glaze for serving; brush half of remaining glaze over roast. , Bake until a thermometer reads 145°, 20-40 minutes longer, brushing occasionally with remaining glaze. Let stand 10 minutes before slicing. Reheat reserved glaze; serve with roast.

1 4 lb. bone-in ham (fully cooked)
Whole cloves (optional)
1 cup light brown sugar (packed)
½ cup grainy mustard
¼ cup honey
¼ cup fresh orange juice
2 Tsp. grated orange zest
1 Tsp. ground ginger

Steps:

  • To bake: Preheat the oven to 325° F / 165° C / gas mark 3. Line a shallow roasting pan with foil. To grill: Preheat the grill. Lightly grease the bottom of a foil pan.
  • Place the ham in the pan cut-side down. Using a paring knife, score the ham's fat in a diamond-shaped pattern, taking care not to cut into the meat. (Optional: insert cloves into the center of the diamonds.)
  • In a small saucepan, combine the glaze ingredients and bring to a boil over medium heat. Remove from heat and set aside.
  • Add 1/2 cup of water to the roasting pan with the ham in it. Cover the pan with foil and tightly crimp it at the edges. Bake or grill over indirect heat for 30 minutes.
  • Remove the foil and generously baste the ham with the glaze. Resume baking or grilling. Baste with more glaze every 10 minutes until the ham has reached an internal temperature of 140°F / 60°C (approximately 30 minutes).
  • Allow the ham to rest at room temperature for 10 minutes before serving. Remove cloves before serving.

1 Cook's® brand Bone-in Spiral Sliced Ham, Butt or Shank Portion Ham, or Half Ham
¾ cup orange marmalade
1 tablespoon freshly minced gingerroot
2 teaspoons Dijon mustard
½ cup ginger ale
6 tablespoons orange juice
2 teaspoons brown sugar, dark or light brown
1 tablespoon cornstarch

Steps:

  • Prepare and heat ham according to package directions.
  • Meanwhile, prepare glaze. Combine marmalade, gingerroot and mustard in small bowl; mix thoroughly. Set aside.
  • Remove ham from oven 30 minutes before meat is done. Brush marmalade mixture over ham. Pour ginger ale and 1/4 cup orange juice into pan bottom. Increase oven temperature to 425 degrees. Return to oven and bake, uncovered, for 30 minutes, basting ham with pan juices every 10 minutes. Let rest on cutting board, loosely covered, about 15 minutes.
  • Pour cooking juices into small saucepan; stir in brown sugar and heat to simmer. Combine remaining 2 tablespoons orange juice and cornstarch in dish, stirring to blend. Add to simmering juices; cook and stir until slightly thickened, one to two minutes.
  • Drizzle ham slices with warm sauce before serving.
