I got this yummy recipe from a friend but came up with my own tasty topping. Creamy, fruity and refreshing, this dish is simple to make ahead and cuts nicely into squares for ease in serving. It is perfect for potlucks. -Nancy Callis, Woodinville, Washington

1 package (6 ounces) orange gelatin
2-1/2 cups boiling water
2 cans (11 ounces each) mandarin oranges, drained
1 can (8 ounces) crushed pineapple, undrained
1 can (6 ounces) frozen orange juice concentrate, thawed
TOPPING:
1 package (8 ounces) cream cheese, softened
1 cup cold 2% milk
1 package (3.4 ounces) instant vanilla pudding mix

Steps:

In a large bowl, dissolve gelatin in boiling water. Stir in oranges, pineapple and orange juice concentrate. Coat a 13-in. x 9-in. dish with cooking spray; add gelatin mixture. Chill until firm. , In a large bowl, beat cream cheese until smooth. Gradually add milk and pudding mix; beat until smooth. Spread over orange layer. Chill until firm.

I love coffee jello and I love the combination of coffee and orange, so I came up with this. For the orange flavour I used orange essence # 340691. For the sweetener I just made up the amount of 1 tablespoon, but as I used rice syrup and don't make my jello really sweet, I'd suggest that you just make your coffee as sweet as you're used to. For the gelatine I used 3/4 bag of ground gelatine (1 bag is for 2 cups of liquid) which I soaked in the orange essence and two tablespoons water and then stirred into the still hot coffee. As packages of ground gelatine don't seem to be listed, I suggest 5 sheets gelatine which you should soak and dissolve according to package directions. Prep / cook time does not include chilling time.

1 1/2 cups strong brewed coffee
1 tablespoon sugar
5 sheets gelatin
1 teaspoon vanilla
2 tablespoons orange essence
1/4 cup whipping cream
1/2 teaspoon cocoa powder

Steps:

Prepare 1 1/2 cups strong coffee.
Sweeten brewed coffee to taste, then add vanilla and orange essence.
Dissolve gelatine according to package directions.
Combine dissolved gelatine and coffe.
Fill two cups or glasses with jello mixture, let cool.
Chill for at least two hours.
To serve, whip cream and top each serving with half of the whipped cream.
Sprinkle with cocoa (you can also use some chopped dark chocolate).
Enjoy!

1 Tbsp. MAXWELL HOUSE Instant Coffee
1 Tbsp. water
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1-1/2 cups sugar
3/4 cup butter, softened
4 eggs
2 cups flour
1/4 cup JELL-O Orange Flavor Gelatin
1 Tbsp. orange zest
1-1/2 tsp. baking powder
1/2 tsp. ground cinnamon

Steps:

Heat oven to 350°F.
Dissolve coffee granules in water in small bowl; set aside. Beat cream cheese, sugar and butter in large bowl with mixer until blended. Add eggs, 1 at a time, beating well after each addition. Gradually beat in flour until blended. Add dissolved coffee and remaining ingredients; mix well.
Pour into parchment-lined 9x5-inch loaf pan sprayed with cooking spray.
Bake 1 hour or until toothpick inserted in center comes out clean. Cool cake in pan 5 min. Invert cake onto wire rack; remove pan and parchment. Turn cake over; cool completely.

18 ounces yellow cake mix
4 eggs
3 ounces orange Jell-O
2/3 cup vegetable oil
2/3 cup water
1/4 cup orange juice
1/2 cup sugar

Steps:

Preheat oven 350°F Grease and flour Bundt pan.
CAKE:.
Mix all ingredients together. Pour into Bundt pan. Bake 40-60 minutes Test cake after 40 mins by inserting a toothpick; if toothpick is clean then cake is done. If toothpick is not clean cook additional 10-20 minutes Test again. Let cake cool 10 mins then invert on plate.
GLAZE:.
Mix together. Pour glaze over warm inverted cake.
