Steps:

  • Beat the butter until it has the appearance of thick cream, stir in confectioners sugar, a little at a time, and continue working until mixture is very smooth. Beat in egg yolk and lemon juice. Stir in enough orange juice to make a spreadable frosting, then add grated rind of 1 lemon and 2 grated orange rinds. Spread on sides and top of cake.

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10x15 inch jellyroll pan.
  • In a small saucepan over medium heat, combine sugar, 1/2 cup butter, water and dates. Cook, stirring frequently until dates have softened and the mixture is well blended. Remove from heat. Combine the flour, baking soda and salt; stir into the date mixture, then mix in the 1/4 cup orange juice, milk, eggs and 1 tablespoon orange zest. Spread the batter evenly into the prepared pan.
  • Bake for 15 to 20 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. I got this great recipe from one of my favorite cookbooks, "Cupcakes! By: Elinor Klivans". These cupcakes are so yummy the only thing I changed was the frosting, I used my cream cheese frosting recipe instead, which is less sweet.

1 cup chopped pitted dates
1/2 cup boiling water
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda

1/4 cup butter, softened
3/4 packed brown sugar
1 egg
1 tablespoon molasses
1 teaspoon vanilla extract
1/2 cup buttermilk
1 cup walnuts, chopped
1/4 butter, softened
4 ounces cream cheese, softened
1 cup powdered sugar
1/2 teaspoon vanilla extract
1 teaspoon grated orange zest

Steps:

  • For the cupcakes: Preheat oven to 325 degrees. Line a cupcake pan with 12 paper baking cups, spray inside each liner with nonstick cooking spray.
  • Put dates into a small bowl and pour boiling water over them. Set aside to cool to room tempature, about 10 minutes.
  • In a medium mixing bowl stir together flour, baking powder, baking soda, cinnamon, and salt, set aside.
  • In a large mixing bowl with an electric mixer on medium speed cream butter and sugar until fluffy. Beat in egg, molasses, and vanilla. On low speed gradually add flour mixture alternating with milk and beat until blended. Stir in dates and walnuts.
  • Divide batter evenly between prepared baking cups. Bake until toothpick inserted into the center comes out clean, about 25 minutes. Cool cupcakes in pan for 10 minutes. Transfer cupcakes to a cooling rack to cool completley.
  • For the frosting: In a medium mixing bowl with an electric mixer on medium speed cream butter and cream cheese until smooth.
  • On low speed gradually add powdered sugar. Add vanilla and orange zest and beat until smooth and creamy. Spread frosting on cupcakes.

1/2 cup orange juice

3 tablespoons softened butter

Steps:

  • Cream butter and sugar, add eggs one at a time and mix smooth.
  • Add Baking Powder, Baking Soda, salt and Graham crumbs.
  • Add nuts and dates.

  • Bake in a 9x9 greased pan at 350 degree oven 35 to 40 minutes. When cool you may want to ice with orange icing.
  • Orange Icing: In a medium bowl mix butter, cream and orange juice.
  • Add in icing sugar, adding more if needed to make for desired consistency.

On Christmas Day so very long ago, I watched quietly from the living room window for Santa to disappear in his sleigh as the morning dawned clear and brisk. I knew he had come, and even though my parents always laughed off the idea, I *KNEW* he existed. I could peek and see there are a large, brand new spanking "Easy Bake Oven" and I almost passed out from the excitement I could hardly conceal. I ran in my room, and promptly jumped up and down on my bed until the springs creaked with enough noise to wake all the sleeping cats in the house. "He had come! and.....Santa had brought a perfectly sized oven for just me." To be truthful, I shouldn't of even peeked, but I did. The first wonderful treat I made with my oven was the tiniest little cake. My mother and I had worked together to get the ingredients right, and I learned how to put this delightful frosting together, which; to this day I still prepare with the fresh oranges that come at Christmastime. I don't have the "Easy Bake Oven" but I do have the memories.

2 egg whites
3 tablespoons water
1/4 teaspoon cream of tartar
1 cup sugar (I assume they mean granulated in this recipe)
1/3 cup date filling (Date Filling for Hamentaschen)

Steps:

  • Mix egg whites, water, cream of tartar and sugar together in a mixing bowl.
  • Fill the bottom of a double boiler or saucepan with water and bring to a boil.
  • Remove water from heat.
  • Immediately place mixture into the top half of a double boiler or in a metal mixing bowl and place on top of the double boiler or saucepan, whichever you have.
  • Beat mixture in the bowl for 3 minutes, using a mixer or beater.
  • Stir in date filling.
  • Goes great with both yellow and spice cakes.

  • Sift together flour, baking soda and salt; combine 1 cup with dates and walnuts. Set both mixtures aside. , In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add orange zest. Add reserved flour and date mixtures. Stir in buttermilk just until blended. , Spoon into a greased and floured 10-in. tube pan. Bake at 300° for 1-1/2 to 1-3/4 hours or until a toothpick inserted in the center comes out clean. , For syrup, in a small saucepan, heat orange juice and sugar until sugar is dissolved.
