PEACH BELLINI CUPCAKES

Moist champagne cake with peach schnapps and bits of diced peaches baked in, topped with a peachy champagne buttercream frosting! Taken from Sing For Your Supper.

Number Of Ingredients 17

1 cup unsalted butter, at room temperature
2 cups sugar
1 teaspoon vanilla
6 egg whites
3 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup champagne
1/4 cup peach schnapps
1 small peach, peeled and diced
3/4 cup unsalted butter, at room temperature
4 cups powdered sugar
1/4 cup champagne
1 tablespoon milk
1 teaspoon peach schnapps
1 teaspoon vanilla
2 -3 drops red food coloring, if desired

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium sized bowl combine flour, baking powder and salt.
  • In a large mixing bowl beat together butter and sugar for 3-5 minutes, until light and fluffy. Add vanilla; then beat in egg whites one at a time.
  • Stir together the champagne and schnapps in a spouted measuring cup.
  • To the butter mixture, gradually add in flour mixture and the champagne/schnapps mixture, in three alternating additions, beginning and ending with the flour mixture.
  • Gently stir in the diced peaches.
  • Pour batter into cupcake liners, filling 2/3 full.
  • Bake at 350 degrees F for 25-30 minutes, or until toothpick inserted into center comes out clean.
  • To make the frosting:.
  • Beat together the butter and vanilla.
  • Add powdered sugar in one cup increments, then add champagne, milk, peach schnapps and food coloring.
  • Frost cupcakes once they have completely cooled. I also sprinkled with a little orange and yellow sugar, for decoration.
  • Makes 2 dozen cupcakes.

3 ½ cups pureed peaches
2 tablespoons white sugar
2 tablespoons cornstarch
2 tablespoons water
2 ⅔ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
2 cups white sugar
8 tablespoons unsalted butter, at room temperature
2 large eggs
2 teaspoons vanilla extract
1 teaspoon peach extract
1 ½ cups buttermilk
½ cup pureed peaches
2 cups heavy whipping cream
2 tablespoons instant vanilla pudding mix
1 teaspoon vanilla extract

Steps:

  • Combine pureed peaches and sugar for filling in a medium saucepan over medium heat. Bring to a slight boil.
  • Mix cornstarch and water together in a separate bowl until there are no lumps. Stir mixture into the pan. Reduce heat to medium-low and cook until thick and bubbly, about 1 minute. Let filling cool completely.
  • While filling cools, preheat the oven to 350 degrees F (175 degrees C). Line two 12-cup muffin tins with paper liners.
  • Whisk flour, baking powder, baking soda, and salt together in a medium bowl for cupcakes.
  • Beat sugar and butter together in a large bowl using an electric mixer until creamy. Beat in eggs, vanilla extract, and peach extract until smooth. Add 1/2 of the flour mixture and stir until combined. Add buttermilk and 1/2 cup pureed peaches; stir until almost combined. Add remaining flour mixture and stir until all ingredients are mixed in.
  • Spoon batter into the prepared muffin cups, filling each 2/3 full.
  • Bake in the preheated oven until tops spring back when lightly pressed, 18 to 20 minutes. Cool in the tins for 10 minutes. Transfer to a wire rack and let cool, about 20 minutes.
  • Remove a bit of the center of each cupcake using a cupcake corer; fill with cooled peach filling.
  • Beat whipping cream, pudding mix, and vanilla extract for frosting together using a wire whisk attachment until firm peaks form. Frost cooled cupcakes.

1/2 cup(s) water
1/2 cup(s) peach schnapps
4 - eggs
1/2 cup(s) cooking oil
FILLING
4 ounce(s) cream cheese
1/4 - stick of butter
1/2 teaspoon(s) orange flavoring
1/2 teaspoon(s) orange zest
pinch(es) salt
1 cup(s) confectioners sugar( you may need more to get a good consistency
FROSTING
1/3 cup(s) butter
2 cup(s) confectioners' sugar
1/8 cup(s) champagne
1 teaspoon(s) milk
1/2 teaspoon(s) peach schnapps
1/2 teaspoon(s) vanilla

Steps:

  • Preheat oven to 350 degrees. Line cupcake pans with liners.
  • Mix all ingredients together until combined. Bake for 20-25 minutes until a tooth pick comes out clean.
  • Filling: Mix the butter and cream cheese and add orange flavor, vanilla, salt, and orange zest. Beat in confectioners sugar until smooth and creamy.
  • When the cupcakes have cooled with a sharp knife cut a divit in the center of the cupcake out and with a pastry tube fill the hollow with the filling. The bigger the divit the more orange flavor. Refrigerate.
  • Frosting: Beat together the butter and the vanilla. Add powdered sugar in one cup increments, then add champagne, milk, peach schnapps. By this time the filling should have firmed up....frost the cupcakes and enjoy. You can decorate them with yellow and orange sprinkles or what ever you like.
