This is one of the best brownie recipes I have tried.

cooking spray
4 (1 ounce) squares semi-sweet baking chocolate
¾ cup butter
1 ½ cups white sugar
3 eggs, beaten
1 teaspoon vanilla extract
1 cup packed all-purpose flour
½ cup pecans
½ cup dried cherries
½ cup chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking pan with enough aluminum foil to hang over the edges. Spray the foil with cooking spray.
  • Melt baking chocolate and butter together in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, for 1 to 3 minutes. Stir sugar into chocolate mixture until dissolved. Cool mixture slightly.
  • Mix eggs into into chocolate mixture until well mixed; stir in vanilla extract. Stir flour into chocolate mixture just until batter is moistened.
  • Process pecans and dried cherries in a food processor until chopped; fold into batter with chocolate chips. Spread batter into the prepared baking pan.
  • Bake in the preheated oven until brownies begin to pull away from the edges and are set in the middle, about 1 hour.

1 pound unsalted butter
1 pound plus 12 ounces semisweet chocolate chips
6 ounces unsweetened chocolate
6 extra-large eggs
3 tablespoons instant coffee granules
2 tablespoons pure vanilla extract
2 1/4 cups sugar
1 1/4 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
3 cups chopped walnuts

Steps:

  • Preheat oven to 350 degrees F.
  • Butter and flour a 12 x 18 x 1-inch baking sheet.
  • Melt together the butter, 1 pound of chocolate chips, and the unsweetened chocolate in a medium bowl over simmering water. Allow to cool slightly. In a large bowl, stir (do not beat) together the eggs, coffee granules, vanilla, and sugar. Stir the warm chocolate mixture into the egg mixture and allow to cool to room temperature.
  • In a medium bowl, sift together 1 cup of flour, the baking powder, and salt. Add to the cooled chocolate mixture. Toss the walnuts and 12 ounces of chocolate chips in a medium bowl with 1/4 cup of flour, then add them to the chocolate batter. Pour into the baking sheet.
  • Bake for 20 minutes, then rap the baking sheet against the oven shelf to force the air to escape from between the pan and the brownie dough. Bake for about 15 minutes, until a toothpick comes out clean. Do not overbake! Allow to cool thoroughly, refrigerate, and cut into 20 large squares.

Another happy accident. Too much milk for a two egg omelet accidentally poured into the bowl by sleepy eyes. The leftover orange ginger jam from the Thanksgiving cheese platter begging for a purpose. An unopened bag of almond flour because it was in front of the pantry and on top. Thank goodness I had baking powder. The last orange. A jar of pecans. Half a bar of dark chocolate. A bag of dried cherries. Imagination.

WET STUFF
2 large eggs
1/2 cup(s) whole milk
1/2 cup(s) honey citron ginger tea (or orange marmalade with fresh ginger and honey to taste)
2 1/2 tablespoon(s) unsalted butter, softened
POWDERY STUFF
2 cup(s) almond flour
1 teaspoon(s) vital wheat gluten
1/8 teaspoon(s) salt
1/4 teaspoon(s) baking powder
3 tablespoon(s) organic sugar
CHUNKY STUFF
3/4 cup(s) pecan halves
1/4 cup(s) dried tart cherries
1 ounce(s) good quality dark chocolate for baking
1 large zest only from navel orange

Steps:

  • Preheat oven to 325 F
  • Line a brownie pan with parchment.
  • Blend together the dry stuff: almond flour, salt, baking powder, sugar, and wheat gluten.
  • Whip eggs and milk until frothy.
  • Gently blend honey citron ginger tea and softened butter into whipped eggs and milk with a whisk. You'll see little chunks of butter - that's ok.
  • Roughly chop pecans, chocolate, and cherries.
  • Zest a whole orange with a fine zester.
  • Fold the batter and chunky stuff together to get a thick chunky batter.
  • Pour into the parchment lined brownie pan, making it as flat as possible. Don't rap the pan to even it out or the solids will fall to the bottom.
  • Bake at 325 F for about 35 minutes or until lightly browned on top and a toothpick inserted in center comes out clean.
  • Let cool before cutting.
