¾ cup butter
1 cup packed brown sugar
1 egg
1 tablespoon orange zest
1 teaspoon vanilla extract
2 cups sifted all-purpose flour
3 teaspoons baking powder
½ teaspoon salt
½ cup chopped walnuts
¼ cup white sugar

Steps:

  • Cream margarine or butter, add brown sugar gradually. Add unbeaten egg, grated orange rind and vanilla. Beat well.
  • Add flour sifted with baking powder and salt. Mix well. Chill dough until firm.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix granulated sugar and nuts. Roll dough into small balls the size of walnuts. Flatten on greased cookie tin and sprinkle with sugar and nut mixture. Bake for 10 minutes. Cool on racks. Store in tightly covered jar or tin.

10 tablespoons (1 stick plus 2 tablespoons) unsalted butter, softened at room temperature
Freshly grated zest of 2 medium oranges
2/3 cup sifted confectioners' sugar
3/4 teaspoon pure vanilla extract
1/8 teaspoon salt
1 1/2 cups sifted flour
Confectioners' sugar for dusting
Cookie filling, recipe follows
1/2 cup sifted unsweetened cocoa powder
2/3 cup granulated sugar
3 tablespoons unsalted butter
1/3 cup heavy cream

Steps:

  • Preheat the oven to 325 degrees.
  • In a mixer fitted with a paddle attachment (or using a hand mixer), mix the butter, orange zest and confectioners' sugar until light and fluffy. Add the vanilla and salt and mix. Add the sifted flour and mix until smooth. Refrigerate 30 minutes. On ungreased cookie sheets, working in batches if necessary, drop level teaspoons of the chilled dough 2 1/2 inches apart. One by one, pick up the dough balls, roll into a smooth ball, and replace on the cookie sheet. Spread about 3 tablespoons of confectioners' sugar on a plate. Dip the bottom of a drinking glass into the sugar and use it to press the dough balls flat, into 1 1/4-inch circles. Repeatedly dip the glass into the sugar as needed to keep the bottom dry and coated. Bake until golden brown around the edges, 12 to 15 minutes. Let cool on the cookie sheets for 2 minutes. Transfer to wire racks and let cool completely.
  • To assemble the cookies, liberally spread half of the orange cookies with cocoa filling, keeping the filling a little bit away from the edges. Cover with a plain cookie and press together gently to create a sandwich. Store in an airtight container.
  • Filling: In a small bowl, mix the cocoa and sugar. In a saucepan, melt the butter over low heat. Add the cocoa mixture and the cream and cook, stirring, until thickened, about 3 minutes. Set aside to cool; the mixture will thicken as it cools.

Grated zest of 1 orange
2/3 cup granulated sugar
1/4 cup confectioners' sugar
1 tablespoon finely chopped fresh rosemary
1/2 teaspoon kosher salt
2 sticks unsalted butter, at room temperature
1 large egg, separated, plus 1 egg yolk
2 cups all-purpose flour
2 tablespoons sanding sugar

Steps:

  • Combine the orange zest, granulated sugar, confectioners' sugar, rosemary and salt in a food processor and process, scraping the bowl occasionally, until the mixture is sandy and turns orange, about 1 minute. Add the butter and process until creamy, 1 to 2 minutes. Add the egg yolks and process, scraping the bowl occasionally, until combined, about 1 minute. Add the flour and process until smooth, about 1 minute. (The dough will be very soft.)
  • Divide the dough between 2 sheets of plastic wrap. Using the plastic to help you, shape each into a 10-inch-long log. Wrap and refrigerate until firm but not hard, 1 hour.
  • Unwrap and reshape each into a smooth, even cylinder. Wrap again tightly and refrigerate until very hard, at least 2 hours or overnight.
  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Lightly beat the egg white in a small bowl. Unwrap 1 log and brush all over with some of the egg white, then sprinkle with 1 tablespoon sanding sugar. Using a sharp knife, slice into 1/4- to 1/2-inch-thick rounds. Arrange 2 inches apart on one of the prepared pans. Repeat with the second log of dough.
  • Bake, switching the pans halfway through, until the cookies are golden around the edges, 20 to 24 minutes. Let cool 5 minutes on the pans, then transfer to racks to cool completely.

1 teaspoon cream of tartar
1 cup butter
1 ½ cups sifted confectioners' sugar
1 teaspoon orange extract
1 tablespoon grated orange zest
1 beaten egg
½ cup confectioners' sugar, for dusting

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper, and set aside.
  • Mix the flour, baking soda, and cream of tartar in a bowl. In another bowl, beat the butter and 1 1/2 cups confectioners' sugar together with an electric mixer until light and fluffy. Mix in orange extract, grated orange zest, and egg. Stir in the flour mixture, and blend well.
  • Drop teaspoon-sized portions of dough about 2 inches apart onto the parchment lined baking sheets. The cookies will spread out to about 1 1/2 inches when baked.
  • Bake in the preheated oven for 10 to 14 minutes, until the cookies are light brown. Remove from the oven, and sift remaining confectioners' sugar onto the hot cookies. Allow to cool, and store in an airtight container.

2/3 cup brown sugar, packed

Steps:

  • Preheat oven to 325-degrees F.
  • Spead oats on baking sheet and toast in preheated oven for 10 minutes or until oats are golden brown, stirring occassinally. Set aside.
  • Increase oven temperature to 350-degrees F.
  • Combine flour, orange peel, baking soda, baking powder and salt in a large bowl.
  • In a separate bowl cream butter and peanut butter until light.
  • Add sugars (brown and white) and beat until light and fluffy.
  • Add eggs one at a time and continue beating. Stir in vanilla.
  • Fold in flour mixture.
  • Fold in browned oatmeal and peanuts.
  • Drop batter onto baking sheets by tablespoons, spacing 3-inches apart. Flatten cookies slightly with a fork making criss-cross lines on the cookies.
  • Bake for 10-12 minutes or until done (cookies will begin to brown around edges).
  • Cool in pans for 5 minutes before transferring cookies to racks to finish cooling.

  • In a large bowl, cream butter and cream cheese until light and fluffy. Gradually beat in confectioners' sugar. Beat in the orange juice concentrate, zest and vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in food coloring. (Dough will be soft.), Drop by rounded tablespoonfuls 3 in. apart onto ungreased baking sheets. Flatten slightly with a glass dipped in confectioners' sugar., Bake at 400° for 6-9 minutes or until edges begin to brown. Remove to wire racks to cool completely., For filling, in a small bowl, cream the butter, cream cheese and vanilla until light and fluffy. Gradually beat in confectioners' sugar. Add orange juice concentrate and zest., Spread filling on the bottoms of half of the cookies; top with remaining cookies. Store in the refrigerator.
