ORANGE-SESAME CHICKEN

Chinese is not always healthy so I created my own recipe that is healthy, quick & easy. Once you do the prep, it cooks in less than 10 minutes and toasted sesame oil is key. Get your rice started first and try a side of steamed broccoli. This is really good! - Jenny Jones

Number Of Ingredients 17

1/4 cup fresh squeezed orange juice (one large orange)
1 teaspoon low sodium soy sauce
1 Tablespoon toasted sesame oil
1 clove garlic, crushed
1/4 teaspoon salt
1/4 cup fresh squeezed orange juice
1/4 cup water
1 Tablespoon rice vinegar
1 teaspoon low sodium soy sauce
1 clove garlic, crushed
1 1/2 Tablespoons sugar (works with less sugar)
1/4 teaspoon salt
1 Tablespoon cornstarch
about 3/4 pound boneless chicken breast cut in 1-inch pieces
2 teaspoons vegetable oil
1/2 teaspoon toasted sesame oil
2 teaspoons toasted sesame seeds (optional)

Steps:

  • Combine marinade ingredients in a small zip lock bag. Add chicken and marinate for 15-20 min.
  • Combine sauce ingredients in a measuring cup. Set aside.
  • Heat oil in a pan on medium-high heat and add chicken, discarding marinade. Sauté 2-3 minutes per side.
  • Reduce temperature, add sauce & cook 2-3 minutes until thick.
  • Stir in 1/2 tsp. sesame oil (and toasted sesame seeds if you like).
  • Serve over rice. A side of steamed broccoli goes really well.

1 tablespoon cornstarch
2 1/2 teaspoons oil
1 bunch bok choy, stalks and leaves cut in half lengthwise then in pieces crosswise. leaves and stalks separated
2 small red peppers, cut into strips
1/3 cup stir-fry sauce
1/3 cup orange juice
1/3 cup water
1 teaspoon orange zest

Steps:

  • Cook sesame seeds on large nonstick pan over medium heat until golden. Set aside. Cut chicken into chunks.
  • Put chicken and cornstarch into a ziptop bag. Seal and shake to coat chicken.
  • Heat 2 tsp oil in the same pan until hot and add chicken. Stir fry 5 minutes until opaque in center. Remove to large plate.
  • Heat remaining oil in pan and add bok choy stalks and red pepers.Stir fry for 5 minute.
  • Add leaves , stir fry 2 minutes.
  • Mix remaining ingredients, stir into pan , return chicken , stir until simmering.
  • Serve with rice and sprinkle with sesame seeds.

Steps:

  • Stir orange juice, soy sauce, garlic, orange zest, ground ginger, and red pepper flakes together in a bowl until thoroughly combined.
  • Heat oil in a large skillet or wok over medium-high heat. Cook and stir chicken and orange juice mixture in the hot oil until the chicken is no longer pink in the middle and the juices run clear, 7 to 10 minutes.
  • Whisk chicken broth and cornstarch together in a small bowl; stir into the chicken and sauce mixture in small amounts until sauce has thickened to your liking.

1/2 cup orange juice

½ cup low-sodium soy sauce
½ medium orange, juiced
2 teaspoons sesame oil
2 teaspoons stevia powder
½ teaspoon garlic powder
⅛ teaspoon ground ginger
1 tablespoon vegetable oil
2 (8 ounce) skinless, boneless chicken breasts, cut into bite-sized pieces
3 cloves garlic, minced
1 cup broccoli florets
½ cup canned bamboo shoots, drained
½ cup chopped red bell pepper
½ cup chopped yellow bell pepper
½ cup chopped orange bell pepper
½ cup thinly sliced green onion
1 tablespoon black sesame seeds
1 cup cooked long-grain white rice

Steps:

  • Combine soy sauce, orange juice, sesame oil, stevia powder, garlic powder, and ginger for teriyaki dressing in a small saucepan. Bring to a boil over medium-high heat, stirring constantly; continue cooking until the mixture thickens slightly. Remove and set aside.
  • Heat a large skillet over medium-high heat. Add vegetable oil and heat until shimmering, 1 to 2 minutes. Add chicken and garlic; stir-fry for 2 to 3 minutes. Add broccoli and continue to stir-fry, 4 to 6 minutes. Add bamboo shoots and bell peppers; cook for an additional 4 to 6 minutes.
  • Carefully pour the teriyaki dressing into the skillet (watch for splattering); cook until chicken is no longer pink in the center and juices run clear, and the vegetables are tender, about 5 minutes more.
  • Remove from heat and stir in green onion and sesame seeds, reserving some of each for garnish. Serve immediately over cooked white and wild rice with the reserved green onions and sesame seeds.

ground pepper, to taste
2 heads broccoli, chopped
2 carrots, sliced
1 red bell pepper, sliced
½ cup orange juice
1 tablespoon soy sauce
1 tablespoon honey
1 tablespoon rice vinegar
2 cloves garlic, minced
½ teaspoon ginger, minced
¼ teaspoon orange zest
1 tablespoon cornstarch

Steps:

  • In a large nonstick skillet, heat a small amount of cooking oil. Add chicken. Season with salt and pepper and cook until browned, about 5 minutes. Remove from pan and set aside.
  • Add carrots and broccoli and cook for 1 minute. Add bell pepper and cook for an additional 1-2 minutes. Remove ingredients from pan and set aside.
  • Add orange juice, soy sauce, honey, rice vinegar, garlic, ginger, and cornstarch. Whisk. Simmer until sauce starts to thicken, about 5 minutes.
  • Add chicken back into pan.
  • Serve over cooked veggies.
  • Enjoy!

1 boneless skinless chicken breast half, cut into thin strips
2 teaspoons canola oil
7 snow peas
1 cup fresh broccoli florets
1/3 cup julienned sweet red pepper
3 medium fresh mushrooms, sliced
3/4 cup chopped onion
1 tablespoon cornstarch
1 teaspoon sugar
1/2 cup cold water
3 to 4 tablespoons soy sauce
Hot cooked rice
1 teaspoon sesame seeds, toasted

Steps:

  • In a large skillet or wok, stir-fry chicken in oil for 6-8 minutes or until juices run clear. Remove chicken and set aside. In the same skillet, stir-fry peas, broccoli and red pepper for 2-3 minutes. 1/2 cup all-purpose flour
4 pounds boneless skinless chicken thighs
2/3 cup honey barbecue sauce
2/3 cup orange marmalade
1/2 cup orange juice
1/4 cup reduced-sodium soy sauce
1 tablespoon minced fresh gingerroot
1/2 teaspoon crushed red pepper flakes
2 tablespoons sesame seeds, toasted
Hot cooked rice

Steps:

  • Place flour in a large resealable plastic bag. Add the chicken, a few pieces at a time, and shake to coat. Transfer to a 4- or 5-qt. slow cooker. , In a large bowl, combine the barbecue sauce, marmalade, orange juice, soy sauce, ginger and pepper flakes. Pour over chicken. Cover and cook on low for 4-6 hours or until chicken is tender. Sprinkle with sesame seeds. Serve with rice. Freeze option: Before sprinkling with sesame seeds, cool chicken mixture. Freeze in freezer containers. To use, partially thaw in refrigerator overnight.   • First make your cauliflower rice. Remove all greens from cauliflower and break into florets. You can either use a box grater, or a food processor to process the cauliflower into rice. If using a food processor (the easier method), simply add half of cauliflower florets to bowl of the food processor with a blade attachment. Pulse until cauliflower resembles rice. Add in remaining florets and process again until cauliflower becomes rice-like. Transfer to a large, clean dish towel and squeeze all the moisture out of the cauliflower. Set aside in a large bowl until ready to cook.
  • Next make the sauce: Add the orange juice, honey, soy sauce, ginger, cornstarch/arrowroot starch, red pepper flakes and orange zest to a large bowl; whisk until the cornstarch is dissolved. Set aside for later.
  • Next preheat a large skillet or pan over medium-high heat and add in 1 tablespoon of the toasted sesame oil. Add in chicken, season with salt and pepper, and cook for 5-6 minutes or until fully cooked and no longer pink. Once chicken is cooked, transfer to a bowl and set aside. Keep the heat in the pan.
  • Add the other 1/2 tablespoon of sesame oil to the pan (over medium-heat); add in onion and saute until onions become slightly translucent, about 2 minutes.

  • In a bowl, whisk together the 1/4 cup cold water and 1/2 Tbsp starch, then whisk in the rest of the Marinade Ingredients: 1/2 Tbsp orange zest, 1/2 cup fresh OJ, 4 Tbsp soy sauce, 2 tsp sesame oil, 1 Tbsp grated fresh ginger, 3 minced garlic cloves and 2 Tbsp honey.
  • Add 1/4 of your marinade to your prepared chicken thigh meat, stir and let it marinate while preparing the rest of your veggies (15-30 min).
  • Heat a large wok or heavy-bottomed saute pan over high heat. Add 1/2 cup water. As soon as it boils, add broccoli, carrot and asparagus. Cover and let it steam cook for 2 minutes over high heat until the veggies are crisp tender and bright green. Remove veggies to a bowl then rinse and dry your pan.
  • Again, heat the pan over high heat and stir in 1 1/2 Tbsp oil. Add diced onion and saute 1 minute, stirring constantly.
