Steps:
- In a sauce pan combine sugar, vinegar, garlic and ginger.
- Cook on low. heat for eight minutes or until caramelized.
- Add all the other items, bring to a boil then reduce heat and let simmer for 10 minutes.
- Note: I had to add about 1 tblspn corn starch to thicken sauce for my liking.
ORANGE-SESAME CHICKEN
Chinese is not always healthy so I created my own recipe that is healthy, quick & easy. Once you do the prep, it cooks in less than 10 minutes and toasted sesame oil is key. Get your rice started first and try a side of steamed broccoli. This is really good! - Jenny Jones

Steps:
- Combine marinade ingredients in a small zip lock bag. Add chicken and marinate for 15-20 min.
- Combine sauce ingredients in a measuring cup. Set aside.
- Heat oil in a pan on medium-high heat and add chicken, discarding marinade. Sauté 2-3 minutes per side.
- Reduce temperature, add sauce & cook 2-3 minutes until thick.
- Stir in 1/2 tsp. sesame oil (and toasted sesame seeds if you like).
- Serve over rice. A side of steamed broccoli goes really well.

- Place flour in a large resealable plastic bag. Add the chicken, a few pieces at a time, and shake to coat. Transfer to a 4- or 5-qt. slow cooker. , In a large bowl, combine the barbecue sauce, marmalade, orange juice, soy sauce, ginger and pepper flakes. Pour over chicken. Cover and cook on low for 4-6 hours or until chicken is tender. Sprinkle with sesame seeds. Serve with rice. Freeze option: Before sprinkling with sesame seeds, cool chicken mixture. Freeze in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, gently stirring and adding a little broth or water if necessary. Serve as directed.

SESAME-ORANGE BEEF
Steps:
- To make the marinade, combine 2 teaspoons of the cornstarch and soy sauce in a bowl and mix well. Add the beef and stir to coat evenly. Let stand for 10 minutes.
- To make the sauce, combine the orange juice, oyster sauce, honey and remaining 2 teaspoons cornstarch in a small bowl and stir until honey dissolves. Set aside.
- In a small frying pan, toast the sesame seeds over medium heat, shaking the pan frequently, until lightly colored, 3 to 4 minutes. Immediately pour onto a plate to cool.
- Place a stir-fry pan over high heat until hot. Add the oil, swirling to coat on all sides. Add the ginger and cook, stirring, until fragrant, about 10 seconds. Add the beef and stir-fry until caramelized on the edges and still slightly pink in the center, 2 to 3 minutes. Add the sauce and cook, stirring, until the sauce boils and thickens slightly, about 20 seconds. Stir in the orange segments and pineapple chunks and cook for 30 seconds to heat through.
- Transfer to a serving plate, sprinkle with the sesame seeds and serve.

- Cook rice according to package directions. In a large skillet, saute peas in butter and honey until crisp-tender. Add oranges and cashews; cook and stir 1 minute longer., Brush tuna with 2 tablespoons marinade. Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. Grill tuna, covered, over high heat or broil 3-4 in. from the heat for 3-4 minutes on each side for medium-rare or until slightly pink in the center., Brush tuna with remaining marinade; serve with rice and snap pea mixture.

- Cut 1 orange into wedges (peel intact); set aside. Of the remaining 2 oranges, remove zest of 1 and juice of both; place zest and juice in a glass bowl. Add lemon juice, vinegar, pepper, and mustard; whisk. Slowly whisk in sesame oil; set aside.
- Place chicken between two sheets of plastic wrap; pound with a meat tenderizer to 1/2 inch thick. Place chicken in a glass bowl; pour half reserved vinaigrette over chicken. Coat thoroughly, cover with plastic wrap, and chill 1 to 2 hours.
- Heat a grill or grill pan until very hot. Coat asparagus and zucchini with olive oil; sprinkle with 1/2 teaspoon salt. Grill vegetables and reserved orange wedges until tender. Remove chicken from marinade; season with remaining teaspoon salt; discard marinade. Grill until browned on both sides and cooked through. Arrange chicken and vegetables on platter; sprinkle with sesame seeds. Serve with remaining reserved vinaigrette.

ORANGE SESAME PORK
Dry-roasted sesame seeds, often found in Chinese-inspired dishes like this one, add a rich nuttiness that teams well with pork. You'll be tempted to eat every bite, but save some to make Cook's-Choice Fried Rice (page 210).
Yield serves 4, 3 ounces pork per serving (plus 12 ounces pork reserved)

- Preheat the oven to 425°F. Lightly spray a 13 x 9 x 2-inch baking pan with cooking spray.
- In a small bowl, stir together the vinegar, soy sauce, orange juice concentrate, garlic, and red pepper flakes.
- Tucking any thin ends under so they cook evenly, put the pork in the baking pan so the pieces do not touch. Pour the vinegar mixture over the pork.
- Roast for 10 minutes. Turn over. Roast for 10 to 15 minutes, or until the internal temperature registers 150°F on an instant-read thermometer or is slightly pink in the very center. While the pork cooks, if the sauce appears to be burning (it may in corners or in dark pans), tilt the pan and loosen and stir the thicker sticky substances. Add the water if needed.
- Meanwhile, in a small skillet, dry-roast the sesame seeds over low heat for about 2 minutes, or just until fragrant and golden, stirring frequently. Watch carefully so they don't get too brown. Pour onto a small plate.
- Transfer the pork to a cutting board. Let stand for about 10 minutes. The pork will continue to cook during the standing time, reaching about 160°F. Cut diagonally, making long, thin slices. Refrigerate half the pork (12 ounces) in an airtight container for use in Cook's-Choice Fried Rice. Transfer the remaining pork to plates. Spoon the pan juices over the pork. Sprinkle with the sesame seeds.
