This frosting takes approximately seven minutes to make.

1 ½ cups white sugar
½ cup water
2 egg whites
½ teaspoon salt
1 tablespoon light corn syrup
1 teaspoon vanilla extract

Steps:

  • Combine sugar, water, egg whites, salt, corn syrup, and vanilla in the top of a double boiler. Beat all ingredients about one minute before placing bowl or pan over the heat.
  • Place over rapidly boiling water; beat at high speed until the mixture forms soft peaks. (This may take longer than 7 minutes).
  • Transfer frosting mixture to large bowl; beat until the mixture is thick and cool enough to spread.

Use this recipe to frost the outer layer of the Birch de Noel cake. The simplest way to test whether the sugar has dissolved is by rubbing the mixture between your fingers; it should feel completely smooth with no remaining granules.

Number Of Ingredients 4

3/4 cup plus 1 tablespoon sugar
1 tablespoon light corn syrup
3 large egg whites, room temperature
3/4 teaspoon pure vanilla extract

Steps:

  • In a small, heavy saucepan, combine 3/4 cup sugar, 1/3 cup water, and corn syrup; cook over medium heat, stirring occasionally, until sugar dissolves. Increase heat to high and bring to a boil, washing down sides of pan with a pastry brush dipped in water (to stop crystals from forming). Cook, without stirring, until a candy thermometer registers 230°, about 5 minutes.
  • Meanwhile, in a mixer fitted with the whisk attachment, beat egg whites on medium speed until soft peaks form, about 2 1/2 minutes. Gradually add remaining 1 tablespoon sugar until combined.
  • Once sugar syrup has reached 230°, immediately remove from heat. With mixer on medium-low, carefully pour syrup into egg-white mixture, in a steady stream down sides of the bowl (to prevent splattering). Increase speed to medium-high and beat until mixture is completely cool and stiff peaks form, about 7 minutes. Add vanilla and beat until fully incorporated and frosting is shiny and smooth. Use immediately.

Beat constantly with electric beater while it cooks for 7 minutes or until it will stand in peaks when beater is raised. Remove from heat. Add vanilla. Beat. Fills and frosts 2 layer cake, 8 or 9 inch.

Number Of Ingredients 5

1 3/4 cups sugar
1/4 cup water
2 tablespoons light corn syrup
6 large egg whites, room temperature
1/2 teaspoon pure vanilla extract

Steps:

  • Heat 1 1/2 cups sugar, the water, and corn syrup in a small saucepan over medium heat, stirring occasionally, until sugar dissolves. Raise heat to medium-high, and bring to a boil. Cook, washing down sides of pan with a wet pastry brush to prevent sugar crystals from forming, until syrup reaches 230 degrees on a candy thermometer. Once syrup reaches 230 degrees, remove from heat immediately.
  • Meanwhile, with a mixer on medium speed, whisk egg whites to soft peaks. Whisk in remaining 1/4 cup sugar. Reduce speed to medium-low, and pour syrup into egg whites in a slow, steady stream down the side of the bowl. Raise speed to medium-high, and whisk for 6 minutes. Add vanilla; whisk until soft peaks form, about 1 minute. Use immediately.

Steps:

  • Put egg whites , sugar , orange juice and corn syrup in an upper part of a double broiler.
  • Beat with rotary beater until well mixed. Place over rapidly boiling water and beat constantly , cooking 7 minutes ; or until the frosting stands in peaks.
  • Remove from the heat , add grated orange rind and beat until thick enough to spread.
  • ** Water may be substituted for the orange juice and 1 teaspoon vanilla for the grated orange rind.

1 cup plus 2 tablespoons sugar
3 large egg whites
1/4 teaspoon cream of tartar
1/8 teaspoon salt
1 tablespoon pure vanilla extract

Steps:

  • In large metal bowl, whisk together 1/3 cup water, sugar, egg whites, cream of tartar, and salt. Set bowl over pan of barely simmering water and mix with handheld electric mixer at low speed. Gradually increase speed to high, beating until mixture holds stiff peaks, about 5 minutes.
  • Transfer bowl from pan to folded kitchen towel on counter and continue beating until mixture is cool and billowy, about 2 minutes more. Beat in vanilla. (Frosting can be made 4 hours ahead and chilled, covered.)

This is a diet buster, it's wickedly delicious and it is so easy and quick. It's from my all time favorite cookbook Fanny Farmer's, my copy was printed in 1965 and it's still the best basic cookbook I've come across.

Number Of Ingredients 9

3/4 cup sugar
2 tablespoons water
1/8 teaspoon cream of tartar
1 pinch salt (3-5 grains)
1 egg white
vanilla
lemon, juice and zest
orange, juiceand zest
coconut, freshly grated

Steps:

  • Mate a stainless steel mixing bowl and a large sauce pan. You're making a double boiler.
  • Put a few inches of water in the pan and bring to a boil without the mixing bowl on top.
  • In the bowl mix all of the ingredients except flavor options with a hand mixer.
  • Place the bowl on the boiling pan and mix 'til it's thick enough to stand, about 4 min.
  • Remove the bowl from the pan and mix 'til it's thick enough to spread.
  • Flavors in the order of my favorites; Vanilla; Mix 1/2 tsp into the finished frosting.
  • Lemon; Subtitute 2 TBS Lemon juice for water and mix 1/2 tsp Lemon Zest into the finished Frosting.
  • Orange; Same as lemon but use Orange.
  • Coconut; Mix 1/4 cup freshly grated coconut into the finished frosting, spread on the cake and sprinkle the top with a bit more coconut.
