ORANGE DROP COOKIES IV
Delicious cake-like cookies with orange frosting.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- In a medium bowl, cream together the margarine, sugar and sour cream until smooth. Beat in the eggs one at a time, then stir in 3 tablespoons orange zest. Combine the flour, baking powder, baking soda and salt; stir into the sugar mixture alternately with 2/3 cup orange juice. Drop by teaspoonfuls onto ungreased cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 2 minutes before removing to a wire rack to cool completely. In a small bowl, stir together the melted margarine, confectioners' sugar and 1 tablespoon orange zest. Mix remaining orange juice in 1 tablespoon at a time until desired consistency is reached. Spread over cooled cookies.

ORANGE SOAKED COOKIE CREAM LOG
Cream covered orange and grand marnier soaked chocolate chip cookies shaped into a log.

- Pour a little orange juice into a shallow bowl and add a glug of grand marnier. Place a few of the chocolate cookies in the liquid and allow to soak for a couple of seconds then carefully turn over for the same amount of soaking time, do not allow to go too soggy otherwise they will break up too much. Place immediately onto a rectangular or oblong shaped plate at a slightly slanted angle to create a long log shape. Carry on doing this until you have used up all the biscuits you may need to keep refilling the shallow dish with more orange juice and grand marnier. If you have got to the end of the plate with the biscuits use some of them to cover the sides of the log as well.
- In a a large bowl whisk the cream until softly whipped. Using a spoon, place mounds of the cream over the chocolate cookie log and spread evenly with a palette knife.
- Grate over 1 chunk of dark choclate or top with chocolate shavings and sprinkle over the grated orange zest.
- Place in the fridge for at least 2 hours before serving.
FRESH ORANGE COOKIES WITH ORANGE GLAZE
This recipe comes courtesy of one of my co-workers who made them for our holiday cookie exchange. I fell in love with them and had to have the recipe. The secret is only using fresh orange rind and juice!

- Preheat oven to 375°F.
- In a medium bowl, cream together the butter, sugar and sour cream until smooth.
- Beat in eggs one at a time then add orange zest.
- In another bowl, combine flour, baking powder, baking soda and salt. Stir into sugar-sour cream mixture, alternating with orange juice.
- Drop by teaspoonfuls onto ungreased cookie sheets or in madeleine-style pans.
- Bake for 8-10 minutes in preheated oven. Allow to cool on baking sheet for 2 minutes before moving to wire cooling rack.
- In a small bowl, combine melted butter, sugar and orange zest. Mix in orange juice, 1 Tbs. at a time until desired consistency is reached. Spread over cooled cookies.

Steps:
- Grease or spray and baseline a 20cm round or square tin.
- Preheat oven to 190c (375f).
- ---------For the Sponge-------------.
- Place eggs,sugar,lemon and orange rinds in a bowl over simmering water.
- Whisk with an electric whiskfor about 8 minutes til the mixture is pale and creamy.
- Remove from the heat.
- Sift together the flours and fold in to the egg and sugar mixture along with the melted butter.
- Pour into pre-pared cake tin and bake in the centre of the oven for 40 minutes or til well risen.
- ---------------For the Syrup------------------.
- Place syrup ingredients in apan and heat gently til sugar dissoles.
- Bring to boil and simmer for 2 minutes.
- Spoon syrup over the cooked sponge and leave to cool in tin til cool.
- Turn cake out and split into 3 layers carefully.
- ----------FILLING---------------.
- Beat the orange curd and fold in the whipped cream.
- reserve a third and use the rest tofill the cake and also the sides and top.
- Spoon the reserved mixture and place in a piping bag and pipe rossettes on top of the cake and decorated with the crystallised fruit.
- ----------The Cake----------.
- Place rind and sugar in a bowl.
- In another whisk lemon juice together with the eggs,then pour this mixture over the sugar.
- Add the butter in little peices and place the bowl over a pan of simmering water.
- Stir frequently til thickened about 20 minutes.
- leave to cool.
- Store in fridge if not using for cake straight away.

- In a small bowl, combine flour, baking soda, and salt; set aside.
- In a large bowl, cream butter and sugars until light and creamy. Beat in egg and vanilla until smooth. Gradually add flour mixture until combined.
- Stir in orange zest and white chocolate chips.
- Drop by rounded teaspoonfuls onto ungreased cookie sheets. Do not flatten cookies; it will make them dry.
