  • Soak 1/4 thinly sliced red onion in cold water, about 10 minutes. Whisk 1/4 cup orange juice, the juice of 1 lime, 1 tablespoon honey, 2 teaspoons dijon mustard, 1/2 teaspoon salt, and pepper to taste in a bowl. Whisk in 3 tablespoons olive oil. Drain the onion; toss with 2 bunches watercress, 2 sliced avocados, 2 segmented oranges and the dressing. Top with chopped toasted hazelnuts.

3 oranges
1 clove garlic, coarsely chopped
Kosher salt
2 tablespoons red wine vinegar
Freshly ground pepper
1/3 cup extra-virgin olive oil
1 medium bunch watercress, tough stems removed
1 cup fresh parsley leaves
1 small head escarole, outer leaves removed, torn
1/3 cup roughly chopped toasted hazelnuts
1/3 cup roughly chopped dried dates
1/3 cup crumbled blue cheese
Toasted cornbread, for serving (optional)

Steps:

  • Cook the bacon in a large skillet over medium-high heat until crisp, 8 to 10 minutes. Transfer to a paper towel-lined plate to drain.
  • Meanwhile, segment the oranges: Cut the ends off, then cut away the peel and white pith. Working over a bowl, cut along both sides of each membrane with a paring knife to remove the segments, allowing them to drop into the bowl. Discard any seeds.
  • Put the garlic on a cutting board and sprinkle with 1/4 teaspoon salt, then mash into a paste with the flat side of a large knife. Whisk the vinegar and garlic paste in a large bowl and season with salt and pepper, then whisk in the olive oil. Add the watercress, parsley and escarole and toss to coat. Divide the salad among plates and crumble the bacon on top. Sprinkle with the oranges, hazelnuts, dates and blue cheese. Serve with cornbread, if desired.

2 tablespoons red-wine vinegar
1 tablespoon grainy Dijon mustard
1 tablespoon olive oil
Coarse salt and ground pepper
1 pound flank steak
2 to 3 bunches watercress (about 1 pound total), stemmed
3 navel oranges, peeled and sliced
1/4 cup roasted cashews, coarsely chopped

Steps:

  • In a large bowl, whisk together vinegar, mustard, and oil; season with salt and pepper. Set dressing aside.
  • Season the steak generously on both sides with salt and pepper, and place in a shallow baking dish. Drizzle with 2 tablespoons dressing and turn to coat; leave remaining dressing in bowl. Let steak marinate 5 to 10 minutes.

1 small red onion, peeled and cut into thin slices, about 1 1/2 cups

1/4 cup olive oil
Salt to taste, if desired
Freshly ground pepper to taste

Steps:

  • Trim off any tough stems from the bottoms of the watercress. Rinse the leaves and drain well. There should be about 10 cups of loosely packed leaves.
  • Put the leaves into a salad bowl. Add the orange wedges and onion rings.

Steps:

  • Slice off both ends of oranges. With a sharp knife, cut away peel and pith. Cut along membranes to remove segments. Squeeze 2 tablespoons juice from membranes into a small bowl.

1 1/2 lbs fresh spinach, cleaned and torn into bite size pieces

3/4 medium red onion, sliced and separated into rings
3/4 cup walnuts, coarsely chopped (I used pecan halves)
3 teaspoons butter
1 1/2 cups vegetable oil
3/4 cup white vinegar
3/4 cup sugar
1 1/2 teaspoons salt
1 1/2 teaspoons celery seeds
1 1/2 teaspoons dry mustard
2 1/2 teaspoons paprika
1 1/2 teaspoons grated onions

Steps:

  • In large salad bowl, combine lettuce, spinach, oranges and onion.
  • Melt butter and sauté walnuts until lightly browned (this will just take 2 or 3 minutes).
  • Sprinkle over lettuce mixture.
  • To make dressing, combine all of the ingredients in a jar, shake well and chill in refrigerator.
  • Shake again before serving.
  • Hint: To cut oranges so there is no membrane--cut peel and outer membrane off with paring knife.
  • Cut orange in half across segments.
  • Slip knife around and free each segment from membrane.

  • Make caramelized walnuts:
  • Preheat oven to 350°F.
  • In baking pan toast nuts in oven until golden and fragrant, about 10 minutes. In a small bowl stir together caramelized-walnuts ingredients and in a small nonstick skillet cook over moderate heat, stirring, until sugar caramelizes and coats nuts. Transfer mixture to a bowl and cool. Break walnuts apart.
  • Make dressing:
  • Mince and mash garlic to a paste with salt and in a bowl whisk with mustard and lemon juice. Add oils in a slow stream, whisking until emulsified and whisk in tarragon and salt and pepper to taste.
  • Trim endive and cut into julienne strips. Discard coarse stems from watercress and toss with endive and dressing. Top salad with Roquefort and walnuts.

⅓ cup sliced almonds
2 tablespoons minced shallot
½ cup olive oil
2 tablespoons red wine vinegar

6 ounces watercress
¼ cup orange segments

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Spread bread cubes on a rimmed baking sheet and drizzle with 2 tablespoons olive oil.
  • Bake in the preheated oven until bread is toasted but still chewy, about 8 minutes. Remove from the oven and let cool, about 10 minutes.

Simple tangy salad with crunchy,oily walnuts making it more of an indulgence, than a neccesary chore. The measurements are less than exact as I don't know how juicy your oranges will be and everyone likes their salad dressing their own way.

100 g watercress
25 g walnuts
100 g unsmoked streaky bacon
1 -2 orange
1 -2 tablespoon walnut oil
balsamic vinegar
chili flakes (optional)

Steps:

  • Peel the oranges and cut out the segments,catching the juice as you go. Set aside.
  • Chop the bacon finely and start to fry in a pan (I don't use any oil as the fat from the bacon will run.).
  • When the bacon is nearly cooked to your likeing, throw the walnuts in the pan.
  • While they are browning off, divide the watercress into two bowls and place the orange segments on top.
  • Add the chili flakes to the pan if using and tip the contents onto the salad leaves and oranges.
  • Make the dressing by adding the walnut oil to the captured orange juice, adding the balsamic if you think neccesary. Whisk vigorously and season-remember bacon is pretty salty. Drizzle dressing over the salads.
