ORANGE-GINGER SHRIMP SKEWERS

- Combine first 9 ingredients in a bowl. Add shrimp; toss to coat. Cover and marinate in refrigerator for 15 minutes.
- Remove shrimp from dish, reserving marinade. Thread shrimp and orange quarters alternately onto each of 8 skewers (8 inches in length).
- Heat large grill pan, coated with cooking spray, over medium-high heat. Cook skewers 4 minutes on each side or until done, basting with reserved marinade.

- Stir shrimp, orange juice, garlic, and ginger together in bowl; season with salt and pepper. Refrigerate 15 minutes.
- Heat 1 tablespoon vegetable oil and sesame oil in a wok or large skillet over medium-high heat. Remove shrimp from the marinade; cook and stir in the hot oil until opaque, about 2 minutes per side. Transfer shrimp to a plate.
- Heat 1 tablespoon vegetable oil with the oil remaining in the wok. Cook and stir bell pepper, squash, broccoli, onion, carrot, orange zest, and cayenne pepper in the hot oil until the vegetables are tender, about 5 minutes. Return shrimp to the skillet, stir into the vegetable mixture, and continue cooking 1 minute more.
- Serve over cooked rice.

GRILLED SHRIMP SKEWERS WITH ORANGE GLAZE
The secret ingredient in these quick and tangy grilled shrimp skewers is orange-juice concentrate, which brings a sweet-tart intensity to the basting mixture that is balanced out by savory onion, sharp pickled jalapeños, and earthy thyme.

- Heat oil in a small saucepan over medium-high. Add onion, garlic, and thyme; season with salt. Cook until onion is translucent, about 3 minutes. Add orange concentrate and brown sugar. Bring to a boil, then cook until syrupy and reduced to a scant 1 cup, 8 to 10 minutes. Add vinegar and jalapeños; cook 1 minute. Let cool 10 minutes. Set aside 1/4 cup glaze for serving.
- If using wooden skewers, first soak in water 30 minutes, then drain (to prevent burning). Lay 6 shrimp side by side; slide a skewer through head ends to secure together. Thread a second skewer through tail ends. Spread shrimp slightly so there are small gaps between them. Repeat with remaining shrimp.
- Preheat grill to high; brush grates with oil. Grill bread, flipping once, just until lightly charred and crisp in places, 1 to 2 minutes total. Transfer to a platter or board; brush with oil.
- Brush shrimp with half of remaining glaze and grill, turning once, until opaque and almost cooked through, about 3 minutes. Brush with more glaze, turning a few times to caramelize, until just cooked through, about 1 minute more. Remove from grill and brush with some of reserved glaze. Serve over grilled bread, with remaining reserved glaze on the side.

ASIAN GINGER SHRIMP SKEWERS
Boston lettuce leaves hold grilled shrimp and a crunchy salad - both covered in Marzetti® Asian Ginger Dressing.

- Prepare grill to medium hot. Soak 6 wooden skewers in water for 5 minutes. Toss shrimp with vegetable oil. Thread shrimp (6 pieces each) onto the skewers.
- While grill is heating prepare the vegetables for the salad. Rinse Boston lettuce, remove 6 large outer leaves and set aside, chop remaining lettuce. Combine lettuce, green onion, peas, carrots, cucumber and basil with 3/4 cup Marzetti Asian Ginger Salad Dressing. Toss well. Arrange larger Boston lettuce leaves on a platter and top with salad mixture.
- Spray grill with non-stick cooking spray for the grill. Grill shrimp for 5 to 6 minutes or until shrimp are opaque; turning half way through grilling time, and brushing with 1/4 cup remaining Marzetti Asian Ginger Salad Dressing the last minutes of cooking. Serve shrimp over arranged salad platter, offer additional Marzetti Asian Ginger salad dressing if desired.

- Combine the orange juice and zest, green onions, fresh ginger, cilantro, rice vinegar, soy sauce, vegetable oil, crushed red pepper flakes together in a large zip lock bag. Mix until well combined. Add the shrimp to the zip lock bag and place into the refrigerator for 30 minutes.
- Remove from the zip lock bag and thread them onto the skewer sticks (I did six shrimp per skewer on 10 skewers).
- Heat a grill pan coated in cooking spray over medium-high heat. Cook the skewers for 2 minutes on each side or until done. Serve immediately. Enjoy.
