ROYAL ICING
Ice your cookies, cakes and cupcakes with Alton Brown's glossy Royal Icing recipe from Good Eats on Food Network.

Steps:
- In large bowl of stand mixer combine the egg whites and vanilla and beat until frothy. Add confectioners' sugar gradually and mix on low speed until sugar is incorporated and mixture is shiny. Turn speed up to high and beat until mixture forms stiff, glossy peaks. This should take approximately 5 to 7 minutes. Add food coloring, if desired. For immediate use, transfer icing to pastry bag or heavy duty storage bag and pipe as desired. If using storage bag, clip corner. Store in airtight container in refrigerator for up to 3 days.
ORNAMENTAL ICING
This is a good wedding cake icing. While frosting cake, keep bowl covered with a damp cloth to prevent excessive evaporation. Makes enough to frost one 3 tiered wedding cake, and to decorate with garlands and flowers.

- In the bowl of an electric mixer fitted with the paddle attachment, combine confectioners' sugar and egg whites. Mix on medium-high speed until combined and thickened, about 8 minutes. - Cut or stir margarine or butter into confectioners' sugar.
- Cool, if melted butter or margarine used.
- Add egg whites, vanilla and cream of tarter.
- Beat well.
- Stir in milk or beet juice a little at a time, until mixture is of spreading or barely pouring consistency.
- Tint with food coloring, if using.
- Spread on cookies or place cookies on rack over waxed paper and pour frosting over them, spreading as needed.
- Frosting can be refrigerated for several days.
- Add more liquid if needed.
