MUSHROOM ORZO
After eating at an 'Italian' chain restaurant and loving this side dish, I went home and tried to recreate it. This is the recipe I finally came up with.

Steps:
- Melt 1/2 the butter in a skillet over medium heat. Stir in the onions, and cook until golden brown. Mix in orzo, mushrooms, and remaining butter. Cook and stir 5 minutes, until butter is melted and mushrooms are tender.
- Pour water and wine into the skillet, and bring to a boil. Reduce heat to low. Season with garlic powder, salt, and pepper. Cook 7 to 10 minutes, until orzo is al dente. Stir in the Parmesan cheese and parsley to serve.

ORZO WITH MUSHROOMS
A very tasty and easy side dish. My husband likes this topped with a grating for parmesan cheese. Toasted walnuts are also a nice touch for presentation.

Steps:
- Heat oil in a large heavy saucepan over medium-high heat.
- Saute onion and mushrooms until tender and golden brown.
- Pour in broth, and bring to a boil.
- Stir in orzo, reduce heat to low, and cover.
- Simmer until orzo is tender and liquid is absorbed, about 15 minutes.
- If after 15 minutes there is still liquid, remove cover, and cook until liquid is gone.
- Season with salt and pepper to taste.
ORZO WITH MUSHROOMS AND CARAMELIZED ONIONS
Caramelized onions are a most rewarding kitchen project because there are so many ways to use them. Make a double batch and freeze half to use later in a frittata or soup. Here, their sweet allium notes combine with thyme, garlic, and mushrooms in a comforting bowl of pasta.

- In a large Dutch oven, heat 2 Tbs. of the oil over high heat. Once the oil is shimmering, add half of the mushrooms and cook until lightly browned, about 3 minutes. Repeat with 2 Tbs. oil and remaining mushrooms. Transfer to a bowl and set aside. Add the remaining 1/4 cup oil to the pan, and heat over medium-high until smoking. Add onions and cook, covered, until light brown, about 10 minutes, stirring occasionally. Add 1/2 cup water to the pan and cook, uncovered, stirring occasionally, until all the water has evaporated and onions look more browned, about 5 minutes. Carefully add the wine, and stir, scraping up any browned bits on the bottom of the pan. Cook until the wine is evaporated, about 2 minutes. Add the garlic, thyme, pasta, 8 cups water, and 1 tsp. salt. Bring to a boil over high heat. Reduce heat to medium-high and cook, uncovered, stirring frequently until the pasta appears creamy and has absorbed most of the water, 10 to 12 minutes. Drain any liquid from the mushrooms. Add the mushrooms to pan, and cook, uncovered, until all the water has absorbed and the pasta has doubled in size and cooked to al dente, about 4 minutes. Remove from the heat. Remove and discard the thyme sprigs. Add the Parmigiano, and stir to combine. Season to taste with salt and pepper. Divide among pasta bowls, garnish with additional Parmigiano and the parsley, and serve immediately.

ORZO WITH ONIONS AND MUSHROOMS
This a savory side dish that goes well with pork, chicken or lamb. My family enjoys the wonderful flavors of the onions and mushrooms combined with the creamy texture of the orzo. It's a variation of a recipe from Roy Finamore's "Tasty".

- Melt the butter in a large skillet; add the chopped onions and mushrooms.
- Season with salt and pepper.
- Cook gently over medium heat, stirring occasionally, until soft (about 20-25 minutes).

CREAMY ORZO WITH MUSHROOMS

- Preheat the oven to 425 degrees F. Toss the mushrooms with 2 tablespoons olive oil, a pinch of salt and a few grinds of pepper on a baking sheet.
- Spread out in a single layer. Roast, stirring halfway through, until well browned and crisp around the edges, about 25 minutes. Let cool for a few minutes, then scrape up with a spatula and transfer to a bowl.
- Meanwhile, heat the remaining 1 tablespoon olive oil in a large pot or Dutch oven over medium-high heat. Add the leek and garlic, season with salt and pepper and cook until the leek softens, about 2 minutes. Add the orzo, 2 cups water, the milk, 1 teaspoon salt and a few grinds of pepper. Bring to a boil, stirring constantly. Reduce the heat to a simmer and cook, stirring occasionally, until the orzo is al dente, 5 to 7 minutes.
- Remove from the heat and add the cheese, spinach, lemon juice and 1 tablespoon parsley. Stir until the cheese melts and the spinach wilts; add a splash of water if the mixture is too thick. Season with salt and pepper.
- Toss the mushrooms with the lemon zest and remaining 1 tablespoon parsley. Divide the orzo among bowls and top with the mushroom mixture.

- Preheat the oven to 350 degrees F (175 degrees C). Place walnuts on a baking sheet. Bake for 8 to 10 minutes in the preheated oven, or until they release their aroma. Stir once or twice for even toasting.
- Heat oil in a large heavy saucepan over medium-high heat. Saute onion and mushrooms until tender and golden brown.

From Ricardo. I made it today. Since I had half a large onion to use, I decided to use it in this recipe instead of the green onion. I added the onion at the same time as the mushrooms. I cooked the orzo in boiling water 10 minutes. It was al dente. We loved this side dish. It was perfect with the chicken that was cooked on the barbecue.

- In a saucepan with salted boiling water, cook pasta until al dente (10 minutes). Drain and oil lightly. Set aside.
- In a large skillet, brown mushrooms in oil. Add salt and pepper. Add green onions and keep cooking 1 minute. Add chicken stock and bring to boil. Add orzo and parmesan. Stir well and adjust seasoning. Sprinkle with the green part of the green onion that you set aside for garnish.

- Heat olive oil in a large pot over medium heat. Add mushrooms and onion and cook, stirring occasionally, until lightly browned, 10 to 15 minutes. Add garlic, oregano, and thyme; cook 1 minute, stirring often. Add orzo and cook until lightly toasted, 1 to 2 minutes, stirring often. Pour in wine and cook until mostly evaporated, 1 to 2 minutes more.

MUSHROOM AND PARMESAN ORZO
This side dish is easy to make and really tasty,, everyone loves it! Try to use a good-quality Parmesan or romano cheese for this, the common store-bought brand that you buy off the shelves will not do this recipe any justice. The pasta will thicken up upon sitting so it is best served right away, or shortly after cooking. I have even added in toasted sliced almonds to the pilaf after cooking. If you want a creamier textured dish then add in another 1/2 cup broth. It is important to lightly brown the orzo with the onions and garlic in butter before adding in the broth this really improves the flavor. You will love this!

- In a saucepan, melt butter and saute the onion and garlic for about 2 minutes.
- Add in the orzo to the onion/garlic mixture, and saute the orzo until golden brown (about 6-7 minutes, could take more or less time to brown).
