15 ounces ricotta cheese
1 1/4 cups parmesan cheese
1/2 cup of chopped fresh basil
1 egg, slighty beaten
1/2 teaspoon salt
1/2 teaspoon pepper
9 -12 fresh lasagna noodles (whole foods or trader joe's) or 9 -12 no-boil lasagna noodles
2 -4 cups mozzarella cheese (depending on how much you like)
1 (32 ounce) jar your favorite marinara sauce (2jars if using no boil noodles, I prefer Rao's or Emeril's eggplant based sauce)

Steps:

  • Preheat oven to 375.
  • Mix, ricotta, 1 cup parmesan, egg, salt, pepper, and basil until well blended and creamy.
  • Layer sauce on bottom of lasagna pan, 3 noodles, thin layer of ricotta mix (approx. 3 tablespoons per noodle), mozzarella, and sauce.
  • Repeat layers till last 3 noodles.
  • Top last noodles with remaining sauce, mozzarella, and parmesan.
  • For fresh noodles, cook 25 minutes, remove foil and cook 15 more, cool for 10.
  • For no boil noodles, cook for about 1 hour, remove foil, cook till browned (5-10 minutes) cool for 10.

After trying several different recipes for lasagna, and combining the best of the best, I think I found the best combination yet. I will admit that this is not for the faint of heart; this is a very hearty dish. *At the suggestion of a fellow Zaarian, use regular lasagna noodles (not the no boil type).

1 lb Italian sausage (Johnsonville bulk)
1 lb ground round
2 (28 ounce) jars spaghetti sauce, of your choice, divided
1 (15 ounce) can Italian tomatoes, diced
1 1/2 cups water
3 garlic cloves, chopped
2 teaspoons oregano leaves
1 tablespoon basil leaves
1/4 cup parsley
1 teaspoon ground black pepper, divided
2 (15 ounce) packages ricotta cheese (Sargento)
6 cups mozzarella cheese, grated, divided
1 cup parmesan cheese, grated
3 eggs
1 (10 ounce) package frozen chopped spinach, cooked, drained & cooled
1 (8 ounce) package lasagna noodles, uncooked
6 slices smoked provolone cheese

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • In a large skillet brown the sausage and ground round; drain well.
  • Add 1-1/2 jars spaghetti sauce, diced tomatoes, water, garlic, oregano, basil, parsley & 1/2 teaspoons black pepper.
  • Stir to mix well; cover and simmer for 15 minutes.
  • In large bowl combine ricotta cheese, 4 cups mozzarella cheese, parmesan cheese, eggs, remaining black pepper, and spinach. Mix well.
  • In 10x11x3 lasagna pan, cover bottom with approximately 1 cup meat sauce.
  • Place 4 uncooked lasagna noodles over sauce;cover with an additional 1 cup sauce.
  • Spread 1/2 of the cheese mixture over the sauce.
  • Place the 6 slices of Provolone over cheese mixture.
  • Repeat layers of noodles, sauce, cheese, noodles and remaining sauce (including remaining jar).
  • Cover with foil and bake for 1 hour.
  • Remove foil; top with remaining 2 cups cheese.
  • Bake for additional 15 minutes.
  • Remove from oven and let stand 20 to 30 minutes before cutting.

1 pound ground Italian sausage
1 onion (chopped)
4.5 ounces sliced mushrooms (1 can)
28 ounces spaghetti sauce (1 jar)
16 ounces cottage cheese (1 container)
1 pint ricotta cheese
¼ cup grated parmesan cheese
2 eggs
16 ounces lasagna noodles (1 package)
2 cups shredded Mozzarella cheese (divided)

Steps:

  • Preheat oven to 350 degrees F.
  • In a large skillet, cook and stir Italian sausage until brown.
  • Add onions and mushrooms; saute until onions are clear.
  • Stir in spaghetti sauce, and heat through.
  • In a medium size bowl, combine cottage cheese, ricotta cheese, grated Parmesan cheese, and eggs.
  • Spread a thin layer of the meat sauce in the bottom of a 9x13-inch pan.
  • Layer with 1/2 of the uncooked lasagna noodles, 1/2 of cheese mixture, 3/4 cup mozzarella cheese, and 1/2 of meat sauce. Continue layering until all ingredients are used, reserving 1/2 cup mozzarella.
  • Cover pan with aluminum foil.
  • Bake in preheated oven for 45 minutes. Uncover, and top with remaining half cup of mozzarella cheese.
  • Bake for an additional 15 minutes.
  • Remove from oven, and let stand 10 to 15 minutes before serving.

1 cup ricotta cheese
1/3 cup grated Parmesan cheese
1 egg
1 jar (14 ounces) spaghetti sauce with meat
4 no-cook lasagna noodles
1-1/3 cups shredded part-skim mozzarella cheese, divided

Steps:

  • In a small bowl, combine the ricotta cheese, Parmesan cheese and egg; set aside. Spread 1/3 cup sauce in an 8x4-in. loaf pan coated with cooking spray. Top with one noodle. Spread 1/3 cup sauce to edges of noodle. Top with a third of reserved cheese mixture and 1/3 cup mozzarella cheese. Repeat layers twice. Top with remaining noodle and sauce., Cover and bake at 400° for 25 minutes. Uncover; sprinkle with remaining mozzarella cheese; bake 5-10 minutes longer or until cheese is melted.   • To prepare the lasagna meat, place the ground beef and ground sausage into a large pot over medium heat. Season with salt, pepper and Italian Seasoning, cooking until meat is browned. Drain and transfer meat to a large mixing bowl and stir in 1 jar of pasta sauce. Add 1/2 cup water to pasta jar, shake and add to meat sauce. Set aside meat sauce while you prepare the Ricotta mixture.
  • To prepare the Ricotta cheese mixture, place both containers of Ricotta into a large mixing bowl. Add the Parmesan cheese, salt, pepper and Italian Seasoning. Stir to combine.
  • Use two 9 x 13 inch baking pans or one large lasagna pan. Pour one jar of pasta sauce evenly into bottom of lasagna pans. Place lasagna noodles in a single layer over bottom of pan(s).
