CARAMELIZED ONION SAUCE

Yield about 2 cups

Number Of Ingredients 5

2 tablespoons olive oil
4 cups thinly sliced onions
Salt
Freshly ground black pepper
2 cups chicken stock

Steps:

  • In a saucepan, over medium heat, add the oil. When the oil is hot, add onions. Season with salt and pepper. Saute for about 10 to 12 minutes, or until caramelized. Add the stock and bring to a boil. Reduce the heat to medium low and simmer for 10 minutes. Remove from the heat and using a hand-held blender, puree until smooth. Strain through a sieve and cool completely. Taste, and reseason if necessary.

Number Of Ingredients 6

10 oz. extra wide egg noodle, cooked al dente in salt water and drained
4 # sweet onions
4 T. canola oil
12 eggs
1 c. butter
kosher salt and fresh ground pepper, to taste

Steps:

  • Preheat oven to 350. Spray a 9 X 13 baking dish with non stick spray and set aside. Chop up the onions. Heat up the canola oil in a large saute pan. Cook the onions in the saute pan, over medium heat, stirring occasionally, until onions are golden brown. This could take up to 40 minutes. In a large bowl combine all of the ingredients (the butter will melt easily if it is stirred into the noodles while they are still hot). Mix well. Pour into the prepared pan. Bake for 45 - 60 minutes, until the top is golden brown.

6 ounces medium egg noodles (1 3/4 cups)
1 stick (1/2 cup) unsalted butter
3 cups chopped onions (2 large)
1 1/4 cups sour cream
1 1/4 cups small-curd cottage cheese (10 ounces)
1 tablespoon poppy seeds
4 large eggs
1 teaspoon salt
1/4 teaspoon black pepper
Special Equipment
a muffin tin with 12 (1/2-cup) muffin cups

Steps:

  • Put oven rack in middle position and preheat oven to 425°F.
  • Cook noodles in a 6- to 8-quart pot of boiling salted water until al dente, about 5 minutes. Drain in a colander and rinse under cold water, then drain well.
  • Melt butter in a 12-inch heavy skillet over moderate heat and brush muffin cups with some of butter. Add onions to skillet and cook, stirring occasionally, until well browned, about 20 minutes. Transfer onions to a large bowl and stir in noodles, sour cream, cottage cheese, and poppy seeds. Lightly beat eggs with salt and pepper, then stir into noodle mixture until combined well.
  • Divide mixture among muffin cups and bake until puffed and golden, 20 to 25 minutes. Loosen edges of kugels with a thin knife and cool kugels in pan 5 minutes before serving.

This is a wonderful sauce that goes well with most meat dishes and adds a great flavour to tarts and savoury pastries. Give it a try! I love to combine this with my Red Wine Jus Gravy for Beef and Lamb Roasts!

40 g butter
2 medium red onions, sliced finely
1/4 cup brown sugar

Steps:

  • Melt butter in a small pan and add sliced onion. Cook on medium heat for 15 minutes, stirring.
  • Add sugar and stir through for a further 15 minutes until very dark brown in colour.
  • This recipe is excellent mixed with Red Wine Jus Gravy!
  • It is also a lovely compliment to savoury puff pastry dishes, pizza and most roast meats.

3 tablespoons olive oil
4 pounds (about 5 large) Spanish onions, peeled, quartered and thinly sliced
4 cloves garlic, peeled and finely chopped
1 cup white wine
1 1/2 teaspoons thyme leaves
1/3 cup toasted, chopped walnuts
Salt and freshly ground black pepper to taste

Steps:

  • Place a large heavy kettle over medium heat and heat the oil. Add the onions and garlic and cook, stirring frequently, until the onions are greatly reduced in volume and golden in color, about 50 minutes to 1 hour. (Lower the heat toward the end of cooking if the onions stick to the bottom of the pot.)
  • Add the wine, thyme and walnuts to the pan and continue to cook until all the liquid has evaporated. Season to taste with salt and pepper. Serve with grilled meat, fish or pasta.
