This Oven Baked Salmon is brushed with garlic butter, then sprinkled with a delicious brown sugar spice mix for the perfectly baked, flavorful salmon fillet.

1 (2-pound) whole salmon fillet (skin-on preferred)
3 tablespoons melted butter (OR olive oil)
2 cloves garlic (minced)
1 tablespoon brown sugar
1 teaspoon Italian seasoning
1 teaspoon ground paprika
1 teaspoon garlic powder
¾ teaspoon salt

Steps:

  • Prep: Heat oven to 375°F. Place a large piece of foil on rimmed baking sheet, place salmon fillet on top (skin side down, pink side up). Crimp edges of foil around salmon to make a little "boat".
  • Season: Combine melted butter and minced garlic. Brush half of mixture over salmon. Combine remaining ingredients in a small bowl, evenly sprinkle over salmon. Drizzle with remaining garlic butter.
  • Bake: Bake salmon for 15-22 minutes, depending on preferred doneness (see notes for internal temperatures). Baste salmon with juices halfway through baking, if desired. Once done, remove salmon from oven and rest for 5 minutes, then serve.

4 tablespoons cilantro
3 fresh garlic cloves, minced
3 shallots, minced
2 roma tomatoes, sliced (not chopped)
1/2 anaheim chili, chopped
1/2 cup lemon juice
fresh ground black pepper (a lot is better than not enough)

Steps:

  • Spray a glass baking dish lightly with FAT-FREE butter-flavored cooking spray. Preheat your oven to 350. Place 1 lb of salmon in your baking dish, skin-side down. Squeeze the juice of 1/2 a lemon over the top, then coat liberally with fresh ground pepper.
  • Mince your garlic and shallots, finely chop your anaheim chile peppers, mix together in a small bowl, then sprinkle contents evenly over the top of your salmon. If anaheim chile peppers aren't to your liking, substitute cubanelle peppers, which are mild and sweet, rather than hot.
  • Slice your onion into rings, then arrange the rings over the top of your salmon. Slice your roma tomatoes. Discard the end slices. Arrange the remaining slices on and around your salmon. Sprinkle with more pepper and the juice of 1/2 a lemon.
  • Place your baking dish in your oven and cook for about 20 minutes. Salmon is done when it flakes with a fork.

1 tsp paprika
1/2 tsp garlic powder
1/2 tsp kosher salt
1/2 tsp black pepper
1 tbs melted butter

Steps:

  • Preheat oven to 450°(F)
  • Line a baking sheet with aluminum foil and spray with cooking spray.
  • Place salmon filets on pan, skin-side down, and brush with melted butter. (Melt the butter in a small dish in the microwave for about 30 seconds).
  • Generously add all the seasoning to the salmon.
