Steps:
- Heat oven to 425°F. Heat butter in a medium Dutch oven or ovenproof pot over medium-high heat. Add the shallot, ½ teaspoon salt, and ¼ teaspoon pepper and cook, stirring often, until soft, 3 to 5 minutes.
- Add wine and cook, stirring, until almost evaporated, 2 to 3 minutes. Add broth and rice, and then bring to a boil.
- Cover the pot and transfer to the oven. Cook until the rice is tender and creamy, 20 to 25 minutes.
- Out of the oven, add peas, spinach, Parmesan, ½ teaspoon salt, and ¼ teaspoon pepper to the pot and stir to combine. If the risotto is too thick, stir in up to ¼ cup hot water. Sprinkle with additional Parmesan before serving.

- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In baking dish, stir rice and broth until blended.
- Bake uncovered 45 minutes, stirring once, until most of liquid is absorbed and rice is tender.
- Stir in cooked spinach, Parmesan cheese, butter, salt, pepper and feta cheese. Sprinkle with pine nuts. Serve immediately.

BAKED LEMON SPINACH RISOTTO
Steps:
- Place a rack in the center of the oven and preheat oven to 375 degrees F. Butter a 9×13-inch baking pan and set aside.
- In a medium skillet, heat oil over medium heat. Add the onions and garlic and cook until transluscent and browned, about 5 minutes. Just as the mixture is browning nicely, add dry rice and toss to coat. Cook for 3 to 5 minutes until the rice is toasted and just beginning to brown. Add the lemon zest, thyme leaves, chili flakes, salt and pepper and spinach. Toss to heat through.
- Transfer the onion and rice mixture to the prepared buttered dish. Pour warm chicken broth, water, and lemon juice over the rice mixture. Add cheese and stir gently to ensure even cooking.
- Place in the oven and allow to cook, uncovered for 40 - 45 minutes, stirring after 20 minutes. Rice is done when liquid is absorbed and mixture is cooked through and creamy. If rice mixture is still crunchy, add more hot water or hot chicken broth about 1/3 cup at a time.
- When cooked though, remove from the oven and allow to cool for 15 minutes before tasting. Add salt to taste. Serve topped with fresh parsley, crushed red pepper, and more cheese. Rice will last, in an airtight container in the fridge, for up to 3 days. If the rice becomes too thick in the refrigerator, loosen while heating with water or broth.

- Set oven to 375 degrees F.
- Butter a 1-1/2-quart casserole dish.
- Heat oil and butter in a skillet over medium heat.
- Add in green pepper, onion and garlic; saute for about 5 minutes.
- Add in the rice; stir to coat well.
- Stir in fresh spinach leaves, chicken broth and about 1/4 cup Parmesan cheese, black pepper and salt and cayenne pepper; bring to a boil; simmer for about 3 minutes stirring constantly.
- Transfer mixture to the prepared casserole dish.

BAKED RISOTTO

- Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter the bottom and sides of a 9-inch springform pan. Wrap the outside of the pan with foil.
- For the rice: Bring the marinara sauce and rice to a boil in a medium saucepan over medium-high heat, stirring occasionally. Reduce the heat to a simmer and cook for 6 minutes. Remove the pan from the heat and set aside to cool.
- For the bechamel sauce: Melt the butter in a 1-quart saucepan over medium-low heat. Add the flour and whisk until smooth, 1 to 2 minutes. Gradually add the milk, whisking constantly to prevent lumps. Simmer over medium-low heat, whisking constantly, until the sauce is thick and smooth, about 6 minutes. Remove the pan from the heat and stir in the salt and nutmeg.
- For assembly: Mix together the bechamel sauce, rice mixture, 1/2 cup of the Parmesan, prosciutto and peas in a medium bowl. Slowly mix in the eggs, salt and pepper.
- Pour the mixture into the prepared springform pan and cover with foil. Place in a shallow roasting pan. Add enough hot water to come halfway up the side of the springform pan. Bake for 1 hour.
- Preheat the broiler. Remove the foil and sprinkle the top with the remaining 1/3 cup Parmesan and the breadcrumbs. Broil just enough to melt the cheese and create a crispy crust, about 2 minutes. Cool for 15 minutes. Loosen the risotto from the sides of the pan by running a thin metal spatula around the edge. Remove the sides of the pan. Cut into wedges and serve.

- Heat 1/2 cup (100 ml) of olive oil into a pan. Add the finely chopped onion and saute shortly. Add the chopped spinach, mushrooms and rice.
- Season with salt, black pepper and a pinch of spearmint. Pour in 1 and 3/4 cup (250 ml) of hot water or vegetable stock.
- Cover with a lid and simmer for around 15 min, stirring occasionally.
- Transfer into a small baking tray. Whisk the eggs and yogurt and season with a pinch of salt. Pour the mix on top of the risotto making sure it covers it completely.
- Bake in a preheated oven to 390°F (200 degrees) for 25 min, or until he crust turns golden brown.
- Serve warm with a scoop of yogurt on the side.

BAKED RISOTTO WITH GREENS AND PEAS
This easy baked risotto eliminates the constant stirring required in traditional risotto recipes. It's laden with vegetables, namely kale and spinach, but other leafy greens like Swiss chard or collard greens would work equally well. If you happen to have some extra asparagus, sub it in for the peas. This risotto makes a great starter or side dish, but you can also turn it into a vegetarian main course by using vegetable or mushroom stock in place of the chicken broth, and topping it with sautéed mushrooms, a fried egg or crispy tofu slices. Leftovers can be refrigerated for two days and reheated with more broth, or repurposed into crunchy rice cakes or arancini. Simply form into patties or balls, coat in bread crumbs and shallow-fry until golden and crunchy.

- Preheat oven to 425 degrees. In an ovenproof saucepan or Dutch oven, heat oil over medium-high heat. Add the onion and cook, stirring, until translucent, 2 to 3 minutes. Add the rice and cook, stirring to coat the grains with oil, about 1 minute.
- Stir in the wine and cook until it has completely evaporated, about 1 minute. Stir in 1 1/2 cups water, the stock, salt, and pepper. Bring to a boil. Cover, transfer to the oven, and bake, until most of the liquid has been absorbed by the rice, 20 to 25 minutes.

- In a large saucepan, heat broth and keep warm. In a large skillet, saute mushrooms and onion in butter until tender. Add garlic; cook 1 minute longer. Stir in wine. - Heat oven to 200C/fan 180C/gas 6. Fry the bacon pieces in an ovenproof pan or casserole dish for 3-5 mins until golden and crisp. Stir in the onion and butter and cook for 3-4 mins until soft. Tip in the rice and mix well until coated. Pour over the wine if using and cook for 2 mins until absorbed.
