CRISPY OVEN-FRIED FISH TACOS

Crispy Oven-Fried Fish Tacos image

Fish tacos make a satisfying meal the entire family will love. Many restaurant versions are deep-fried, but our technique includes coating the fish in a seasoned whole-grain breading and spritzing it lightly with cooking spray before baking on a rack until golden brown. The result is a crispy exterior with moist and flaky fish inside.

Time 45m

Number Of Ingredients 17

Cooking spray
1 cup whole-grain cereal flakes
¾ cup dry whole-wheat breadcrumbs
¾ teaspoon ground pepper, divided
½ teaspoon garlic powder
½ teaspoon paprika
½ teaspoon salt, divided
½ cup all-purpose flour
2 large egg whites
2 tablespoons water
1 pound cod, cut into 1/2-by-3-inch strips (cut in half horizontally, if very thick)
2 tablespoons avocado oil
2 tablespoons unseasoned rice vinegar
3 cups coleslaw mix
1 avocado, diced
8 corn tortillas, warmed
Pico de gallo

Steps:

  • Preheat oven to 450 degrees F. Set a wire rack on a baking sheet; coat with cooking spray.
  • Place cereal flakes, breadcrumbs, 1/2 teaspoon pepper, garlic powder, paprika and 1/4 teaspoon salt in a food processor and process until finely ground. Transfer to a shallow dish.
  • Place flour in a second shallow dish. Whisk egg whites and water together in a third shallow dish. Dredge each piece of fish in the flour, dip it in the egg white mixture and then coat on all sides with the breadcrumb mixture. Place on the prepared rack. Coat both sides of the breaded fish with cooking spray. Bake until the fish is cooked through and the breading is golden brown and crisp, about 10 minutes.
  • Meanwhile, whisk oil, vinegar and the remaining 1/4 teaspoon each pepper and salt in a medium bowl. Add coleslaw mix and toss to coat.
  • Divide the fish, coleslaw mix and avocado evenly among tortillas. Serve with pico de gallo, if desired.

EASY SHEET PAN FISH TACOS

Easy Sheet Pan Fish Tacos image

Flaky white fish with crusty, caramelized edges is topped with a cilantro slaw and drizzled with a smoky sour cream sauce in this simple fish taco recipe. Baking the fish on a sheet pan is a little heathier and a lot less messy than frying it, and means cleanup will be a breeze! For family dinners or casual get-togethers, set this up as a taco bar with other toppings such as pico de gallo, avocado slices, pickled red onions, crumbled cotija cheese, and black beans.

8 small flour tortillas
1 medium lime, cut into wedges
4 cups coleslaw mix
½ cup finely chopped fresh cilantro
1 medium jalapeno pepper, seeded and minced
2 tablespoons olive oil
1 medium lime, juiced
1 teaspoon red wine vinegar
¼ teaspoon garlic powder

  • While the fish is baking, prepare slaw by combining coleslaw mix, cilantro, jalapeno pepper, oil, lime juice, vinegar, garlic powder, salt, and pepper in a bowl; toss until well combined.
  • Stir together sour cream, chipotle in adobo, adobo sauce, and salt for crema together in a small bowl.
  • Char tortillas over a gas flame.
  • Remove fish from the oven and flake it with a fork.
  • Fill tortillas with fish and slaw. Drizzle with crema and squeeze lime wedges over top.

BAKED PUFFY FISH TACOS

Baked Puffy Fish Tacos image

I'm showing you how to make amazing, puffy tacos baked in the oven. These are very easy, and I think, the best way to make fish tacos, as you get crispiness in every bite.

Provided by Chef John

Categories     Mexican Fish Tacos

Time 40m

Yield 4

Number Of Ingredients 22

¼ cup sour cream
¼ cup mayonnaise
¼ teaspoon ground chipotle pepper
1 pinch salt
1 dash hot sauce, or to taste
1 tablespoon fresh lime juice, or to taste
¾ pound rockfish
2 teaspoons olive oil
½ teaspoon kosher salt
⅛ teaspoon cumin
⅛ teaspoon ground chipotle pepper
¼ teaspoon chili powder
2 cups very thinly sliced green cabbage
¼ teaspoon kosher salt
2 teaspoons fresh lime juice
1 pinch dried Mexican oregano
4 (6 inch) flour tortillas
2 teaspoons olive oil, divided
2 tablespoons thinly sliced radishes
1 tablespoon thinly sliced jalapeno pepper
2 tablespoons torn cilantro leaves
1 medium lime, cut into wedges

Steps:

  • Whisk sour cream, mayonnaise, chipotle powder, salt, hot sauce, and lime juice for sauce in a bowl until smooth. Taste and adjust as needed. Refrigerate until needed.
  • Cut fish into eight 1 ½-inch pieces.
  • Transfer fish to a bowl; add olive oil, salt, cumin, chipotle pepper, and chili powder. Toss with tongs, thoroughly but gently, until coated.
  • Let fish marinate in the refrigerator for 15 minutes.
  • Meanwhile, preheat the oven to 500 degrees F (260 degrees C). Line a baking sheet with parchment paper.
  • Toss cabbage, salt, lime juice, and dried oregano together in a bowl with your hands until coated.
  • Place 2 tortillas on the prepared baking sheet and coat lightly on both sides with some olive oil. Place 3 ounces of sliced fish on each tortilla, on only one side so that you can fold the tacos after baking.
  • Bake in the center of the preheated oven until fish flakes easily with a fork and tortillas are browned and puffy, 7 to 8 minutes.
  • Fold tacos in the center of each tortilla to crease. Top with cabbage, followed by jalapenos, radishes, and sauce. Sprinkle with cilantro and serve with lime wedges to squeeze over. Repeat for remaining 2 tacos.

  • Fish Tacos: Preheat oven to 425°F. Lightly spray a sheet pan with oil or cooking spray. Set aside. In a shallow pan, stir the cornmeal and spices with a fork until blended. In a small bowl, whisk water and egg together. Pat the fish dry. Dip fish strips in the egg wash then the cornmeal mix. Press firmly to get it to stick. Add the fish strips to the prepared pan. Lightly mist the fish with cooking spray. Bake 10 minutes. While the fish bakes, make the slaw.
  • Honey Lime Cilantro Slaw: Add all ingredients except cabbage to a blender. Puree until smooth. Add salt to taste. In a medium bowl, toss the sauce and cabbage. Heat the tortillas in a dry skillet or get a slight char (as I have) by carefully heating them over an open flame using tongs.
  • Add 1-2 fish strips to each tortilla. Top with the slaw, more lime juice, and sprinkle with fresh chopped cilantro.
