OVEN FRIED SWEET POTATOES
When we first got married my husband wouldn't go near sweet potatoes. Now he asks me to specifically make these for him.

Steps:
- Cut the potatoes into thin wedges.
- Pile them in a bowl and cover them with cold water.
- Let rest 15 minutes.
- Preheat oven to 375 degrees F.
- Coat a baking sheet with vegetable spray.
- Set aside.
- Drain the potatoes and dry them with paper towels.
- Press the potatoes with paper towels to remove all water.
- Transfer the potatoes to a large bowl.
- Sprinkle the potatoes with oil, tossing the potatoes to disburse it.
- Then sprinkle with pepper, salt, paprika and cayenne pepper.
- Bake the potatoes at 375 degrees F for 20 minutes.
- Turn over the potatoes.
- Sprinkle potatoes with garlic and continue cooking for another 15-20 minutes or until crisp and brown.
- Serve immediately.

BAKED SWEET POTATO "FRIES"

- Preheat the oven to 450 degrees.
- Halve the sweet potatoes lengthwise and cut each half into 3 long spears. Place them on a sheet pan and toss with the olive oil. Spread the potatoes in one layer. Combine the brown sugar, salt, and pepper and sprinkle on the potatoes. Bake for 15 minutes and then turn with a spatula. Bake for another 5 to 10 minutes, until lightly browned. - 1. Cut the potatoes into 1/4″ thin strips, or to your desired thickness and length. Mix all other ingredients together in a large bowl and toss with the potatoes until they are evenly coated.

- Slice your sweet potatoes into long, thin strips, about 1/4-inch wide. It's important that the fries are uniformly sized for even cooking. Add the fries to a large bowl of cold water and soak for at least 30 minutes (or up to overnight).
- Preheat the oven to 425°F. Line a large baking sheet (or two medium baking sheets*) with parchment paper, or mist with cooking spray. Set aside.
- Drain the fries, rinse out and dry your bowl of water, then blot dry the fries with a clean towel.
- Add the fries back to the clean bowl.* Then drizzle evenly with the olive oil, and toss until they are evenly coated.
- In a separate small bowl, whisk together the cornstarch, garlic powder, smoked paprika and black pepper until combined. Sprinkle the mixture evenly over the bowl of fries, then toss until the fries are evenly coated and the cornstarch has soaked into the oil.
- Spread the fries out in an even layer on the prepared baking sheet. Be sure that the fries aren't overlapping, or else they will not cook evenly.

- Cut them thin and even. I opt for 1/4 inch thick spears. Any of the spears that are different should go on a different baking sheet so they can cook at a different length.
- Give them an ice bath. Yup! Soak them in a big bowl of ice water for 30 minutes minimum (60 minutes if you have the time). This helps to remove the excess starches and allows them to then crisp up in the oven.
- Set your oven to 415 degrees convection. This yields crispy but not burnt fries and the convection function allows them to cook evenly. I find with the convection setting the sugars from the sweet potatoes begin caramelizing sooner, creating crisp edges.
- Use arrowroot starch. The starch helps them to crisp up similar to how corn starch works. Toss them well in the arrowroot starch so they are evenly coated before you add the oil.
- Salt AFTER they are done cooking. Salt draws out the moisture from the sweet potatoes so you want to salt at the end once they are slightly cooled.
- Space them out! Do not allow the spears to touch or overcrowd the pan, otherwise they will steam.
- What you cook them ON matters. For best results line a baking sheet with a silicone baking mat (or parchment paper). Definitely do not grease a baking pan and put them directly on the baking pan without some barrier such as parchment paper as mentioned.
- Bake for the right amount of time and flip! Bake for 15 minutes then flip 180 degrees and bake another 10-13 minutes watching closely at the end.
- Allow them to rest before enjoying. Allow them to rest in the oven or on the counter for 10 minutes before enjoying. They will crisp up as they cool.
