Steps:
- Heat oven to 350°F.
- Place 9 graham squares on bottom of 9-inch square pan. Top with 36 marshmallow halves; sprinkle with chocolate. Cover with remaining graham squares.
- Arrange 4 marshmallow halves, cut sides down, on top of each graham square.
- Bake 9 to 11 min. or until marshmallows are puffed and golden brown. Let stand 5 min. Cut into 18 bars with greased knife. Serve warm.

OVEN BAKED SMORES

Steps:
- Preheat the oven to broil (525F degrees).
- Unwrap the chocolate bars and divide each into 4 pieces to make a total of 16 pieces of chocolate; set aside.
- Line a large baking sheet with foil for easy clean up. Arrange 16 of the graham cracker
- squares in a single layer on the cookie sheet.
- Top each graham cracker with 2 marshmallows.
- Toast the marshmallows for 1-3 minutes in the oven set to broil (525F degrees) until
- golden brown on top. Use the middle oven rack, not the top rack close to the broiler.
- Important: Do not walk away from the oven while the marshmallows are toasting. They
- can burn very fast! Keep a close eye on the marshmallows as they toast.
- Remove the s'mores from the oven. Turn off the oven.
- Place one square of chocolate on top of each s'more, then return the s'mores to the hot
- oven for 30 seconds to melt the chocolate.
- Remove the s'mores from the oven and top each with the remaining 16 graham cracker
- squares.
- Serve warm. Makes 16 servings.

INDOOR S'MORES
When our restaurant Tru won its first 4-star review, my partners and I thanked the staff with a "staff meal" of caviar, champagne and foie gras. So when the second 4-star review came in, we were stuck for a way to celebrate! We decided to go the other extreme, with a feast of the best bratwurst (a Chicago classic), beer and s'mores. I think we got even more respect for the second meal than we did for the first. It takes nerve for 4-star chefs to serve s'mores! My dear friend Karen reintroduced me to the molten, aromatic pleasures of this childhood treat. Just combine three bite-size ingredients - graham crackers, milk chocolate and marshmallow - and apply heat. Add your own summer camp memories and serve immediately.

- Preheat the oven to 400 degrees F.
- Lay 1/2 of the graham crackers on a cookie sheet. Top with chocolate pieces to cover. Use kitchen scissors to snip the marshmallows in 1/2 horizontally if using miniature crackers and place 1/2 a marshmallow on top of each graham cracker. If using regular size crackers use a whole marshmallow.
- Bake until the marshmallows are puffed and golden brown, about 3 to 5 minutes. Remove from the oven and top with the remaining graham crackers, pressing down slightly to make a sandwich. Serve immediately, while still warm.
EASY BAKED S'MORES
Steps:
- Gather the ingredients. Heat the oven to 350 F.
- Line a large baking sheet with foil or parchment paper . Break the whole graham crackers along the scored line so you have 48 pieces. Place 24 on the prepared baking sheet.
- Put 1 square of chocolate on each cracker.
- Place a standard-sized marshmallow on each piece of chocolate.
- Put the pan in the heated oven for about 4 to 6 minutes, or just long enough to melt the marshmallow and soften the chocolate.
- Remove the pan from the oven and place the other half of the graham cracker on top pushing down slightly so it adheres. Serve while still warm and gooey. Enjoy!

SMORES IN THE OVEN

- Move an oven rack to a position about 6 inches from the broiler element at the top of the oven.
- Turn on the broiler (on high, if you have a choice between low and high).
- Prepare a baking sheet by lining it with foil for easy cleanup,
- Place as many graham crackers as you want on the baking sheet.
- Break or cut the chocolate into large pieces that will fit on top of each graham cracker without hanging off.
- Place the marshmallows on a flat end on top of the chocolate, enough to cover but not to hang over the edge.
- Slide the baking sheet on to the oven rack by the broiler. Close the oven door and count to 10. Remove the baking sheet. The tops of the marshmallows should be brown; if not, return to oven for a couple more seconds.
- Top each smore with another graham cracker and serve immediately, while warm.

- In a medium bowl, combine butter, sugar and graham cracker crumbs until well coated. Press half of crumb mixture into the bottom of the prepared pan. I'll admit making s'mores over a campfire is the best method, but, if your living with a statewide burn ban and don't have a fireplace, this is a fabulous alternative. On the up side, this method does produce perfectly uniform, golden marshmallows.

Steps:
- Preheat the oven broiler. Line a small pan with aluminum foil and lightly coat with cooking spray.
- Break the graham crackers in half and lay 4 of the squares out on a serving plate. Break the candy bars in half and lay one piece on each of the graham crackers on the plate.
- Arrange the marshmallows in a single layer in the prepared pan.
- Broil the marshmallows until the tops brown, turn the marshmallows to brown the undersides. Keep a close eye on the marshmallows so they do not burn. They will brown very quickly.
- Remove the marshmallows from the pan and place three on each of the chocolate squares. Top with the remaining graham cracker halves.
