1 lb fresh mushrooms, thinly sliced
1/4 cup dry breadcrumbs
1/2 cup sour cream
4 tablespoons butter
1/4 cup finely chopped onion

Steps:

  • In a heavy 10-12 inch stainless-steel or enamel skillet, melt 4 Tblsp. butter over moderate heat.
  • When the foam subsides, add the chopped onions and cook 3 to 5 minutes, or until the onions are soft and transparent but not brown.
  • Now add the mushroom slices and cook another 3 to 5 minutes. Shake the pan from time to time so that the mushrooms do not stick.
  • When the mushrooms are a light, delicate brown, sprinkle in the bread crumbs and toss the contents of the pan gently with a rubber spatula or wooden spoon. Remove the pan from the heat.
  • In a small bowl, beat the sour cream with a wooden spoon or whisk for a minute or two, then stir it into the skillet. Toss lightly until the mushrooms are well coated with the cream.
  • Serve as a vegetable accompaniment to meat or fish dishes.

Steps:

  • Sauté mushrooms and onion in butter, stirring constantly, until lightly browned.
  • Stir in rest of ingredients and simmer over medium low heat long enough to heat through and thicken a bit, but do not allow to come to a boil.

1 large onion, chopped
1 1/2 lbs wild mushrooms, quartered
2 tablespoons vegetable stock
3/4 cup heavy cream
salt and black pepper

Steps:

  • Heat the butter in a large frying pan, add the onions and sauté over a medium heat until soft and transparent.
  • Add the mushrooms and raise the heat to high and cook for about 10 minutes, stirring constantly, or until most of the moisture has evaporated .
  • Add the stock, cream, salt and pepper, bring to the boil and cook for a further 10-15 minutes, stirring from time to time, or until the sauce has thickened. Serve immediately.

At my house, we don't like those fried mushrooms that are black and slimy where the breading slides easily off. This recipe is just a very crisp breading on a fresh mushroom. They'll 'pop' when you cut into them they are so fresh. Panko breadcrumbs are a polished bread crumb that you can find in an Asian market or the International section of your favorite food store and they make just a wonderful crunchier coating, too.

10 ounces fresh white mushrooms, wiped clean
1 cup flour
1/2 cup cornstarch
3/4 teaspoon baking powder
1/4 teaspoon salt
1 cup water
2 cups breadcrumbs (Panko if you can find them)

Steps:

  • Mix flour, cornstarch, baking powder and salt in a bowl.
  • Add water to make a batter.
  • Dip clean mushroom into batter letting excess batter drip off.
  • I find it easier to stick a toothpick into the mushroom to dip it.
  • After dipping into batter roll in Panko breadcrumbs to coat.
  • Deep fry in oil until golden.
  • We like to serve with cocktail sauce.

1 lb whole mushroom

Steps:

  • HEAT OIL IN DEEP FRYER TO 375 DEGREES.
  • OR IN A SKILLET DEEP ENOUGH TO COVER AND FRY MUSHROOMS
  • MIX PANCAKE MIX WITH WATER.
  • DIP MUSHROOMS ONE AT A TIME INTO PANCAKE MIX, COATING WELL.
  • DEEP FRY TILL GOLDEN BROWN ABOUT 5 MINUTES AND DRAIN ON PAPER TOWELS.
  • YOU CAN USE ANY COMPLETE PANCAKE MIX. MRS. BUTTERWORTHS, AUNT JAMIMA OR ANY OTHER. IF YOU NEED MORE BATTER JUST MIX IT TO PACKAGE DIRECTIONS.
  • Number of servings varies depending on amount of mushrooms in package. You can also fry Cauliflower or Onions the same way.
