Fruit soufflés are dramatic and impressive yet so easy to make. This one will impress everyone at your table. Make the fruit puree well in advance, and beat the egg whites before you sit down to dinner. Then, when you're too full to eat anything more, fold the two together and put the soufflés in the oven. Just when you're beginning to think you could eat a little dessert, they'll be ready.

Juice of 1/2 lemon
1 pound apples, peeled, cored and diced
1 1/2 pounds ripe, juicy pears, peeled, cored and diced
1/3 cup sugar
1 teaspoon vanilla extract
1/4 teaspoon powdered ginger
Butter for the ramekin (or ramekins)
8 large egg whites
1/8 teaspoon cream of tartar

Steps:

  • Fill a bowl with water, and add the juice of 1/2 lemon. Place the fruit in the water as you prepare it. When all of the fruit is prepared, drain and transfer to a large, heavy saucepan. Add 1 tablespoon of the sugar, the vanilla and ginger, and 2 tablespoons water. Bring to a simmer over medium heat. Stir, and then turn the heat down to low, cover and simmer, stirring often, for 20 minutes. Uncover and continue to simmer for another 30 to 40 minutes, stirring often, until the fruit is very soft and beginning to stick to the pan. It may or may not look like applesauce, depending on the texture of the apples and pears that you used (Granny Smith apples, for example, will break down, whereas Galas will not). Remove from the heat, and transfer to a food processor fitted with the steel blade. Puree until smooth. Transfer to a large bowl, and allow to cool.
  • Preheat the oven to 425 degrees with the rack adjusted to the lowest position. Butter one 2-quart soufflé dish or six 6-ounce ramekins and dust with sugar (use about 1 1/2 tablespoons of the sugar).
  • In the bowl of a standing mixer fitted with the whisk attachment, or in a large bowl with a hand mixer, beat the egg whites on low speed for one minute or until they foam. Add the cream of tartar, and continue to beat on low speed for one minute. Turn the speed to medium, and slowly stream in the remaining sugar while you continue to beat until there are firm, satiny peaks. Be careful not to overbeat.
  • Fold one third of the egg whites into the apple-pear puree to lighten it. Fold in the rest. Gently spoon into the ramekins or the soufflé dish, mounding it up over the top. Put the ramekins on a baking sheet, and place in the oven. Bake individual soufflés for about 10 minutes, until puffed and golden. They should still be runny on the inside. Bake a large soufflé for 15 to 20 minutes. Serve at once.

1 cup pitted prunes
4 black tea bags
1/2 cup sugar
Pinch of salt
1 vanilla bean, split lengthwise and seeds scraped out
3 wide strips lemon zest
1/2 cup cognac or brandy
2 firm cooking apples (such as Fuji), peeled and cut into wedges
3 Bosc pears, peeled and cut into wedges
4 tablespoons unsalted butter
4 large eggs
1/2 teaspoon salt
3/4 cup half-and-half
3/4 cup all-purpose flour
1 teaspoon grated orange zest
2 tablespoons fresh orange juice
1/2 teaspoon almond extract
Confectioners' sugar, for dusting

Steps:

  • Make the compote: Soak the prunes and tea bags in 1 cup boiling water, 20 minutes. Discard the tea bags.
  • Transfer the prunes and soaking liquid to a small saucepan. Add the sugar, salt, vanilla seeds and pod, lemon zest and cognac and cook over medium heat until syrupy, 10 to 15 minutes. Add the apples and pears and reduce the heat to low; cover and simmer until tender, about 15 minutes. Transfer to a bowl and let cool. Cover and chill at least 2 hours or up to 1 week.
  • Make the pancake: Preheat the oven to 425 degrees F. Melt the butter in a 12-inch cast-iron skillet over medium heat. Transfer 2 tablespoons of the melted butter to a blender (reserve the rest in the skillet off the heat). Add the eggs, salt and half-and-half to the blender and blend. Add the flour and blend until smooth. Add the orange zest, orange juice and almond extract and blend.
  • Heat the skillet with the reserved butter over medium-high heat; swirl to coat. Add the batter, transfer to the oven and bake until puffed and golden, 15 to 20 minutes. Reheat the compote, if desired; discard the lemon zest and vanilla pod. Dust the pancake with confectioners' sugar; serve with the compote.

1/2 cup granulated sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 1/2 cups all-purpose flour

3/4 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt
1 cup old-fashioned oatmeal
1/2 pound (2 sticks) cold unsalted butter, diced

Steps:

  • Preheat the oven to 350 degrees F.
  • Peel, core, and cut the pears and apples into large chunks. Place the fruit in a large bowl and add the zests, juices, sugar, flour, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch oval baking dish.
  • For the topping: Combine the flour, sugars, salt, oatmeal, and butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed for 1 minute, until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.
  • Place the baking dish on a sheet pan and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve warm.

1 lb Apples (Peeled, cored and diced)
1 1/2 lb Pears (Ripe, peeled, cored and diced)
1/4 cup Sugar
1 tsp Vanilla extract
1/4 tsp Powdered ginger
Butter
6 Egg whites

Steps:

  • Fill a large mixing bowl with water and add the lemon juice. Put the fruit in the bowl of water as you dice it. Once you are done dicing, drain and transfer fruit to a large saucepan or pot.
  • Add 1 tsp of sugar, the vanilla, ginger and 2 tablespoons of water. Bring to a simmer over medium heat. Stir to keep fruit from burning. Turn the heat down to low, cover and simmer; stirring often for about 20 minutes.
  • Uncover and continue to simmer for another 30-40 minutes, stirring often until the fruit is very soft. Remove from heat and transfer fruit to a food processor with steel blade. Puree until smooth and transfer to a large bowl; let cool.
  • Preheat oven to 425 degrees with a rack in the lowest position. Butter ramekins and dust with sugar.
  • In your standing mixer, attach your whisk. Add egg whites and beat on low for 1-2 minutes. Add remaining sugar and beat on medium/high until they form firm, satiny peaks. Do not overbeat.
  • Fold in 1/3 of the egg whites into the apple/pear puree to lighten the mixture. Fold in the rest. Gently spoon mixture into ramekins, mounding it up on the top. Place ramekins on a baking sheet and bake for 10-15 minutes; until puffed and golden on top. Do not over bake. Soufflé's should be almost runny inside. Serve warm. Enjoy!

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

1 tablespoon reduced-fat margarine
3 tart apples - peeled, cored, and chopped
3 pears - peeled, cored, and chopped
5 cups vegetable broth
½ teaspoon rubbed sage
¼ teaspoon ground black pepper
1 bay leaf
1 ½ teaspoons pureed fresh ginger
1 tablespoon chopped fresh parsley

Steps:

  • Melt the margarine in a large saucepan over medium heat. Cook and stir the apples and pears in the melted margarine for about 5 minutes. Add the vegetable broth, sage, pepper, and bay leaf to the pan; bring to a boil. Reduce heat to low. Place a cover on the saucepan and allow the mixture to simmer until hot and the apples and pears are tender, about 20 minutes. Remove from heat and allow to cool for 5 minutes.
  • Pour about 1/3 of the soup into a blender, filling the pitcher no more than halfway full. Hold the lid of the blender in place with a towel and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth; pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the saucepan. Return the pureed soup to the saucepan and warm over medium heat until completely reheated. Garnish with parsley to serve.

Apples are okay, but pears are divine. I wanted to figure out how to make a simple pear sauce because I like pears far more than apples. It had to be simple, quick, fresh, and above all else, easy to clean-up. So I decided to experiment and started with the most basic recipe possible. I love the flavor, and you can't get much simpler: 3 pieces of raw fruit, a knife, cutting board, blender, and 2 bowls.

The pears give it a bit of a crunch, even though we don't leave the chunks. We puree it smooth. And there's no sugar in this recipe. We usu. leave out the mace and it tastes fine.

3 ripe pears, peeled, cored and quartered
1/2 cup water
1 tablespoon lemon juice

1/8 teaspoon grated nutmeg

Steps:

  • Place all ingredients in a heavy saucepan.
  • Bring to a boil over medium heat, then reduce heat to a simmer.
  • Cover and cook, stirring occasionally, until reduced to a chunky sauce, about 10 minutes.
  • Remove from the heat, cool, and refrigerate until needed.

2 1/4 cups sugar
8 ripe Bartlett or Anjou pears
4 tablespoons eau de vie de poire
1 1/2 tablespoons unsalted butter
8 large egg whites

Steps:

  • In a saucepan, combine one and one-third cups of the sugar with three cups of water. Bring to a simmer and cook until the sugar dissolves. Remove from the heat.
  • Peel, core and quarter the pears. Place them in the saucepan, adding a little more water if necessary, so they are just covered with the syrup. Simmer gently until the pears are tender, about 20 minutes. Remove from the heat and drain. Discard the syrup.
  • Dice eight quarters of the pears. Puree the rest in a food processor. Return the puree to a saucepan and cook until it is reduced to about two cups.
  • In a saucepan, dissolve two-thirds cup of the sugar in one-third cup water. Cook over medium-high heat, without stirring, until the mixture reaches the hard-crack stage, 300 degrees on a candy thermometer. This is just before the sugar turns to caramel.
  • Immediately pour the hot sugar into the warm pear puree and stir. Add the eau de vie de poire.
  • Butter eight one-cup souffle dishes and dust them with the remaining sugar. Divide the diced pears among them. The souffle can be prepared ahead up to this point.
  • Preheat the oven to 475 degrees.
  • Beat the egg whites until they hold firm peaks but are still creamy. Fold the pear puree and egg whites together and spoon the mixture into each of the prepared souffle dishes.
  • Bake 8 to 10 minutes, until the souffles are puffed and nicely browned. Serve at once.
