Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Mix cream cheese, sour cream, refried beans, and taco seasoning in a bowl. Fold jalapeno pepper into the dip; spread into a 9x13-inch baking dish.
- Bake in preheated oven for 30 minutes. Top with shredded cheese and continue cooking until the cheese has melted, about 5 more minutes.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- In a medium saucepan over medium heat, blend the chili beef soup and taco sauce. Bring to a gentle boil and remove from heat.
- Transfer chili beef soup and taco sauce mixture to an 8x8 inch baking dish. Sprinkle with black olives and onion. Top with Cheddar cheese and Monterey Jack cheese.
- Cook in the preheated oven 10 minutes, or until the cheese has melted.

MEXICAN BEAN DIP
This recipe was given to me by my siser over 15 years ago, and I have many requests for it. When layered in a glass dish, it's very colorful for holiday parties. For a more casual get together with a festive look, such as a BBQ, layer it in a 10" iron skillet, and tie a bandana around the handle.

- Mix taco seasoning with beans and spread in a 13x9 inch glass dish.
- Layer sour cream, onion, peppers, lettuce, tomatoes, cheese& olives in that order.

- Heat oven to 375*.
- In a large bowl add beans, chiles with juice, liquid smoke and garlic. Mix together well. Stir in cilantro. Place mixture in ungreased shallow 9 inch glass pan. Top with the cheese.Cover with foil.
- Bake at 375* for 15 to minutes or until mixture is thoroughly heated.
- Serve with tortilla chips.
- Note: May add more chiles for a more spicier dip. May microwave on high (with out the tin foil) to 3 to 5 minutes. May garnish with tomatoes and green peppers if you desire.

Steps:
- Combine dry ingredients in bowl and mix well.
- Beat egg and milk together; add corn.
- Mix well.
- Saute onion, chiles and pimiento in butter inskillet until onion is tender.
- Add milk mixture, onion mixture and cheese to dry ingredients.
- Stir until just mixed.
- Pour into well buttered 8-inch square pan.
- Bake in hot oven at 400 degrees 35-40 minutes (adjust time and temp for altitude, if necessary), or until toothpick inserted in center comes out clean.

- Preheat oven to 375°. In a large skillet, cook sausage, onion and garlic over medium heat until sausage is no longer pink, breaking up sausage into crumbles; drain. Stir in wine, oregano, salt and thyme. Bring to a boil; cook until liquid is almost evaporated., Add cream cheese; stir until melted. Stir in spinach, beans and tomatoes; cook and stir until spinach is wilted. Transfer to a greased 8-in. square baking dish; if using an ovenproof skillet, leave in skillet. - Mix tomatoes, avocado, green onions, black beans, corn, vinegar, oil, and hot pepper sauce together in a bowl. Chill in the refrigerator for 1 hour.

PAM'S MEXICAN BEAN DIP
Steps:
- Brown hamburger meat and drain off grease. Add can of refried beans into frying pan and 1 cup of salsa. Stir until completely mixed together and heated completely.
- Put meat mixture in a heatproof serving dish. Top with the rest of the salsa. Add 4 cheese Mexican cheese to top of dish. Put dish in oven under broiler just until cheese melts. Watch closely.
- When recipe has cooled down some, cover with sour cream and decorate by sprinkling grated cheese on top and a spoonfull of salsa in middle of dish. Serve with Frito scoops.
