BACON-PARMESAN BRUSSELS SPROUTS
I never thought I liked brussel sprouts until I was given this very old recipe. It's delicious and may just change your mind about Brussel sprouts! *It's not a good idea to add salt to this recipe, as the bacon and parmesan cheese are already salty enough. I've substituted broccoli and/or cauliflower for the sprouts and they are also delicious prepared in this way. The only change I make is that I generally use a microwave steamer to cook the broccoli and cauliflower.

- Cook bacon in a large skillet over medium heat until crisp. Remove to paper towels; drain, reserving 1 tablespoon drippings., In the same skillet, saute Brussels sprouts and onion in reserved drippings until lightly browned. Add water and pepper. Bring to a boil. Reduce heat; cover and simmer for 3-4 minutes or until Brussels sprouts are heated through. Remove from the heat. Stir in bacon and sprinkle with cheese.

- Cook the bacon in a skillet over medium heat until browned and crispy. Scoop out the bacon onto a plate lined with paper towel to drain.
- Drain most of the bacon grease, leaving about 3-4 tablespoons in the skillet.
- Add the brussels sprouts halves, water, salt and pepper to the skillet. Cover skillet with lid and let them cook for about 6-8 minutes. Check every few minutes and stir, ensuring that the brussels sprouts do not stick to the bottom of the skillet.
- Remove the lid, lower heat and continue to cook until the brussels sprouts are tender and nicely browned. This should take another 5 minutes or so and all the water should be evaporated.
- Remove from the heat and place the brussels sprouts in a serving bowl. Toss with the cooked bacon and crisp fried onions.

- Wash the brussels sprouts and cut them in half.
- In a pan, add the bacon lardons and fry until brown.
- Remove from the pan and set aside.
- In the same pan, add the oil and brussels sprouts and leave to cook for 2-3 minutes, shaking the pan now and then.
- Add the garlic and half of the water, place a lid on and leave to cook on a medium heat until the water evaporates, that should take 1-2 minutes.
- If the brussels sprouts are not tender enough at this point, add the remaining water, and cook again with the lid on; once the vater evaporates, the sprouts are tender, and slightly caramelised on the edges.
- Add the cooked bacon, and parmesan, and remove from the heat.

- Heat olive oil in a cast-iron skillet over medium heat until the oil shimmers, and cook garlic, stirring often, until golden brown and fragrant, about 3 minutes. Stir in onion and cook until soft, stirring often, about 5 minutes. - Preheat oven to 400°F (200°C)
- Cook bacon in a cast iron pan over medium heat. Once bacon fat coats the pan, add the Brussels sprouts, salt, pepper, apple cider vinegar, brown sugar, garlic. Stir until fully coated.
- Cook until the bottom of the Brussel sprouts begin to brown on the bottom.
- Transfer the cast iron pan to the oven and roast for 20 minutes, or until tender, flipping the brussel sprouts over every 5 minutes or so.
- Sprinkle Parmesan cheese evenly over the Brussels sprouts, then place the pan back in the oven and bake for other 3 to 5 minutes.
- Sprinkle with additional bacon and chives then serve.

- Place bacon into a large cast iron skillet over medium heat and cook until fully browned, 7 to 10 minutes. Remove bacon to a paper towel-lined plate, but leave the bacon grease. Chop bacon when cool enough to handle.
- Add 1/4 cup butter and black garlic clove to the bacon grease. Mash the black garlic thoroughly, then cook and stir until fragrant, 1 to 2 minutes. - Prepare garlic aioli by mixing mayonnaise, garlic, lemon juice, salt, and pepper in a bowl. Cover and refrigerate for at least 30 minutes before serving.

- Add the sprouts, cut side down, to the skillet with bacon grease and cook until charred around the edges, about 5 minutes. Stir and continue cooking another 5 minutes or until the Brussels sprouts have softened some. Remove the sprouts from the heat and season with salt and pepper to taste.
