PAN SEARED PARMESAN CRUSTED CHICKEN RECIPE
Thin chicken breasts are are coated in Parmesan, egg, and bread crumbs, and pan seared until crispy! Kids love it and so do the adults.

Steps:
- First, paper towel dry the chicken and then prepare two bowls. One is for the egg, salt, pepper, garlic powder, and Italian seasoning. Next, you should whisk the egg mixture slightly.
- The second bowl is for the parmesan, bread crumbs and flour.
- Now it's time to dredge each chicken breast piece in egg/seasoning mixture. After that place in parmesan mixture and press. Turn to coat the other side of the chicken with parmesan mixture and press again.
- Repeat with remaining chicken pieces and place each coated parmesan chicken onto a plate or a cutting board.
- MELT butter and ADD olive oil on medium high heat in a skillet (stainless steel, cast iron skillet or non-stick).
- PLACE COATED CHICKEN in skillet and cook for 3-4 minutes one one side. DO NOT MOVE chicken otherwise the cheese will slide off surface before it adheres! Press down lightly with a spatula.
- TURN WITH TONGS when the first side is golden brown and cook the other side for 3 to 4 minutes. Do not cook for more than a total of 6-8 minutes - just set the timer and flip when it beeps.
- CHECK FOR DONENESS to make sure the chicken is fully cooked and not pink. If not, lower the heat and cook for a couple more minutes.
- SERVE immediately.

LEMON PARMESAN CHICKEN WITH ARUGULA SALAD TOPPING

- Combine the flour, 1 teaspoon salt, and 1/2 teaspoon pepper on a dinner plate. On a second plate, beat the eggs with 1 tablespoon of water. On a third plate, combine the bread crumbs, the 1/2 cup grated Parmesan cheese, the lemon zest and thyme, and set aside.
- Pound the chicken breasts between two sheets of parchment paper until they are 1/4 inch thick. You can use either a meat mallet or a rolling pin.
- Coat the chicken breasts on both sides with the prepared flour mixture, then dip both sides into the egg mixture and dredge both sides in the bread-crumb mixture, pressing lightly.
- Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large sauté pan and cook 2 or 3 chicken breasts on medium-low heat for 2 to 3 minutes on each side, until cooked through. Add more butter and oil and cook the rest of the chicken breasts.
- Place the arugula in a large bowl. In a 1-cup glass measure, whisk together the 1/4 cup lemon juice, 1/2 cup olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Pour enough dressing on the arugula to moisten. Toss well.
- Pile some arugula on top of each hot chicken breast. With a very sharp knife or a vegetable peeler, shave the chunk of Parmesan into large shards and arrange them on top of the arugula.
PARMESAN-CRUSTED LEMON-PEPPER CHICKEN
This dish was a great hit with my family. Even my 2-year-old loved it and he's a very picky eater. The lemon in this chicken dish gives it a great zing. Serve with rice pilaf and steamed garlic green beans and you've got a delicious meal.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
- Place chicken breasts on a flat work surface. Slice horizontally through the thickest part of the breasts, being careful not to cut all the way through to the other side. Open the 2 sides and spread them out like an open book.
- Combine butter, lemon juice, garlic, salt, and pepper in a shallow dish.
- Combine bread crumbs, Parmesan cheese, parsley, and basil in another dish.
- Dip chicken in butter mixture, then coat in Parmesan-crumb mixture. Place into the prepared baking pan.
- Bake in the preheated oven until chicken breasts are no longer pink and juices run clear, 25 to 30 minutes. An instant-read thermometer inserted into the center of a breast should read at least 165 degrees F (74 degrees C).

- Start with the Lemon Butter Sauce: In the large nonstick skillet, add the butter and warm it on medium-high heat. When it is melted add in the garlic and stir around until fragrant. Add in the fresh lemon juice, lemon zest, and fresh minced parsley. Simmer on medium-low heat for 3-5 minutes or until slightly reduced. Add freshly cracked pepper if desired. Transfer to a dish and set aside.
- Set out 3 shallow bowls or plates (paper plates/bowls for fast clean-up!). In the first, add the flour. In the second, add in 4 tablespoons melted butter. In the last, combine the paprika, Italian seasoning, dried parsley, 1 and 1/2 teaspoon minced garlic, Parmesan cheese, and Panko. Take the 2 large chicken breasts and remove any fat. Butterfly the breasts and then cut exactly in half (so you have 4 thin breasts). Then pound the halves to even thickness. Generously salt and pepper both sides of each chicken breast.
- Dredge the chicken in the flour, then the melted butter, and then the Parmesan mixture. If you have leftover butter and Parmesan mixture, dip the chicken in both again (you shouldn't have any leftover of either and double breading is delicious!).
- In the same skillet, over medium-high heat add 2 tablespoons butter. Add the breaded chicken breasts and cook for 3-5 minutes, flip and cook for another 3-5 minutes or until chicken registers 165 degrees F on a meat thermometer. If its browning too fast and not cooking in the inside, the heat is too high.

- Cut the chicken breasts in half lengthwise. Lightly beat with a meat mallet until even in thickness.
- In a bowl, whisk together the ingredients for the egg mixture. In another bowl, combine the ingredients for the parmesan mixture. Dip chicken into the egg mixture, then dredge chicken in the parmesan mixture. Allow any excess ingredients to fall off from each bowl.
