- Stir together flour, tarragon, salt, ginger, pepper, mustard powder, thyme, garlic powder, and oregano in a shallow bowl until well blended. Beat the egg together with the milk until smooth in a bowl. Dredge the chicken breasts in the flour mixture, shake off excess, then dip in egg, and again in flour. Set breasts aside to rest for 10 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Heat the vegetable oil in a skillet over medium-high heat. Dredge the chicken breasts in flour again, and shake off excess. Brown the chicken in the hot oil until golden brown on both sides. Place onto a baking sheet, and bake in preheated oven until the chicken is no longer pink in the center, 20 to 30 minutes.

PAN FRIED PANKO CHICKEN BREAST
This Pan Fried Panko Chicken Breast is crispy on the outside and moist and tender on the inside. Thinly sliced chicken breast seasoned, coated then pan fried until golden brown.

- In a large pot, add kosher salt and luke warm water and stir until salt dissolves.
- Add chicken and allow the chicken to brine for 30 minutes up to 1 hour in the fridge.
- Remove chicken from brine and rinse well with cold water and pat dry thoroughly with paper towels and season with Cajun seasoning and kosher salt.
- Prepare a baking sheet and line it with parchment paper and set aside.
- Get 3 shallow bowls or other dishware: 1 for flour; 1 for egg wash; and 1 for panko crumbs.
- To each chicken breast do the following to both sides of chicken: First dredge with flour and gently shake off any excess. Second, dip into egg wash and allow any excess to drip off. Third, dredge with panko and gently press panko onto both sides. Place each prepared chicken breast on prepared baking sheet.
- Place a cast iron skillet over medium high heat. Add oil and butter. When oil is hot, add prepared chicken to skillet and do not disturb. Allow it to cook on one side for 4 minutes or until edges begin to turn golden brown. Flip and cook other side for an additional 2 to 4 minutes do not overcook. Use a meat thermometer to check that the internal temperature has reached 165 degrees F at which point it's done. By the way, DO NOT overcrowd the skillet. Cook in batches if necessary.
- Remove from skillet and place on a cooling rack on top of a clean baking sheet.

- Pre-heat oven to 375 degree. Lightly coat a baking dish or sheet with cooking spray. Combine first 5 ingredients in a shallow bowl. Dip each chicken breast in the beaten eggs and then coat both sides with the bread crumb mixture. Arrange the chicken breasts on a baking sheet. Bake for 35-40 minutes.
SIMPLE PAN-FRIED CHICKEN BREASTS
This is a dish I came up with to serve with HeatherFeather's Red Wine & Rosemary Sauce over Linguine. This is so simple and extremely easy. I pan-fry the chicken in a skillet, then prepare the sauce in the same skillet. You might get some blackened 'stuff' in the pasta sauce - I strain it first before serving.

Steps:
- Pound the chicken breasts with a meat mallet or a rolling pin, to tenderize the meat and ensure uniform thickness.
- Sprinkle salt and pepper on both sides of the chicken and let sit for 15 minutes or so.
- Heat a skillet over med-high heat, and add olive oil.
- When pan is sufficiently heated, sear chicken breasts over high heat.
- Allow about 2 minutes (until lightly browned) before turning to other side.
- Optional: Before serving, sprinkle grated cheese on chicken and broil for approx 5-10 mins (until cheese is melted).
- Serving suggestions: Serve this over pasta, or as chicken sandwich with fresh tomatoes, lettuce and mustard/mayo.
- Personally I love this with fried rice too.
