CORNISH HEN WITH WHISKY AND CREAM PAN SAUCE image

2 large Cornish game hens, 1 ½ to 2 pounds each
2 tablespoons butter
Olive oil
Salt and pepper
Herbs de Province
2 tablespoons unsalted butter
2 medium shallots, finely sliced
¼ to ½ cup of whisky (I used Jack Daniel's)
1 teaspoon Worcestershire sauce
1 tablespoon Dijon mustard
½ cup heavy cream
2 teaspoons fresh lemon juice

Steps:

  • For the Cornish hen: Preheat the oven at 450º and position the rack in the middle of the oven. Place a hen, breast side down on a cutting board. Remove the backbone by cutting along both sides with shears or large sharp knife. Flip the hen and flatten it by pressing down on the breastbone with your palm. Split the hen in two along the breastbone. Repeat with the remaining hen. Place on a heavy baking dish and spread on each half, ¼ of a teaspoon of butter, Herbs de Province, salt and pepper and a drop of olive oil. Place in the hot oven and cook for 30 to 45 minutes. Poke the hen while cooking to release any juices. When done, remove from the oven, place the hen in a dish and cover awith aluminum foil and let rest. To make the sauce: Place the unwashed cooking pan over the stove and add the remaining 2 tablespoon of butter and let it melt. Lower the heat and add the whisky, very slowly. With a wooden spoon scrape up any bit on the pan. Add the shallots and cook until tender, 1 minutes. Add the Worcestershire sauce, mustard and raise the heat to medium high. Bring to a boil stirring constantly. Add the heavy cream and the lemon juice. Taste the sauce and season with salt and pepper. Serve hot over the Cornish hen.

4 Cornish game hens
2 limes, halved
2 teaspoons olive oil
¼ teaspoon chili powder
¼ teaspoon ground cumin
kosher salt to taste
ground black pepper to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Rub each hen with a lime half. Drizzle the hens with olive oil, and season with chili powder, cumin, kosher salt, and pepper. Place hens on a rack in a shallow roasting pan.
  • Roast hens 15 minutes in the preheated oven. Reduce heat to 350 degrees F (175 degrees C), and continue roasting 30 minutes, or to an internal temperature of 180 degrees F (80 degrees C).

6 Cornish game hens (20 to 24 ounces each)
1 cup lemon juice
3/4 cup butter, melted
1/2 teaspoon paprika
1-1/2 teaspoons dried thyme, divided
1-1/4 teaspoons seasoned salt, divided
1-1/8 teaspoons garlic powder, divided
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Place the hens on a wire rack in a large roasting pan. In a bowl, combine lemon juice, butter, paprika and 1 teaspoon each of thyme, seasoned salt and garlic powder. Pour half over the hens; set the remaining mixture aside for basting. Combine salt, pepper and remaining thyme, seasoned salt and garlic powder; sprinkle over hens. Bake, uncovered, at 375° for 30 minutes. Baste with reserved lemon juice mixture. Bake 30 minutes longer, basting occasionally, or until the meat is tender and juices run clear.

½ teaspoon dried thyme
¼ teaspoon garlic powder

⅛ teaspoon red pepper flakes
2 Cornish game hens
½ teaspoon ground thyme
⅛ teaspoon salt
⅛ teaspoon ground black pepper
1 cup chicken broth
⅓ cup lemon juice
¼ cup chilled margarine, cut into cubes

Steps:

  • Mix 1/3 cup lemon juice, melted margarine, 1/2 teaspoon thyme, garlic powder, cumin, and red pepper flakes in a bowl. Pour and rub lemon juice mixture over Cornish hens. Mix 1/2 teaspoon thyme, salt, and black pepper in a bowl; sprinkle over Cornish hens.
  • Pour chicken broth and 1/3 cup lemon juice into a slow cooker.
  • Place about 1 tablespoon chilled margarine in the cavity of each hen; place hens in the slow cooker. Arrange the remaining margarine cubes in the chicken broth mixture.
  • Cook hens in the slow cooker on High for 4 hours or Low for 8 hours.

2 Cornish hens (about 1 3/4 pounds each), room temperature, rinsed well and patted dry
1 bunch fresh thyme (about 1/2 ounce), plus more for garnish
2 lemons, halved, plus wedges for serving
1/4 cup loosely packed fresh flat-leaf parsley leaves
3 tablespoons unsalted butter
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 450 degrees. Place hens in a roasting pan, breast sides up. Place 2 thyme sprigs and 1 lemon half in cavity of each hen. Loosen skin from breast, and place remaining thyme and the parsley underneath. Squeeze remaining lemon halves over hens. Rub butter all over hens. Season generously with salt and pepper.
  • Roast hens, rotating pan halfway through, until skin turns golden brown and an instant-read thermometer inserted into the thickest part of the thigh registers 180 degrees, 45 to 50 minutes. Let stand 10 minutes. Cut hens in half lengthwise. Garnish with thyme sprigs, and serve with lemon wedges.

1 Cornish game hen (20 to 24 ounces)
1 lemon
1 cup minced parsley
2 tablespoons steak seasoning
3 to 4 garlic cloves, minced
3 tablespoons olive oil, divided

Steps:

  • Using kitchen shears, cut along both sides of the backbone of the hen; remove backbone and discard. With a sharp knife, split the hen in half through the breast bone. Rinse and pat dry with paper towels. Set aside. , Grate lemon peel and place peel in a small bowl. Add parsley, steak seasoning and garlic; mix well. Loosen skin on chicken and rub seasonings under and on skin. Brush hen halves with 2 tablespoons olive oil. , Preheat oven to 400°. Heat remaining olive oil in large ovenproof skillet over medium-high heat. Place hen halves in skillet, skin side up. Cook until well-browned, about 5 minutes. Turn the hen halves over. Place 1-2 clean foil-wrapped bricks on top of the hen halves. Bake for 25 minutes or until a thermometer reads 180°.

Spread about 2 Tbl of the butter between the skin and breast of each bird. Smooth skin back down to cover the meat. Rub the olive oil all over the birds and sprinkle with the salt and pepper.
  • Roast at 450F for 20 minutes. the reduce the heat to 350F. Continue roasting about 40 more minutes or when the thickest part of the meat reaches 165F. Baste occasionally with pan juices. Let stand 10 minutes before serving.
