Pan-Seared Pork Chops image

This updated, slimmed-down version of classic pork chops will chase away the winter chill every time.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Number Of Ingredients 7

Kosher salt and freshly ground black pepper
1/2 teaspoon dried thyme
4 pork chops, trimmed of fat (about 1 pound)
4 sprigs of fresh thyme
1 tablespoon extra-virgin olive oil
1 cup Chicken Stock to Make 1 1/2 Quarts, or low-sodium canned
1 1/4 cups Marsala wine

Steps:

  • Combine the salt and pepper and dried thyme and rub on the pork chops. Press a sprig of thyme into each chop. Heat the olive oil in a nonstick skillet over medium-low heat and add the pork chops, thyme-side down. Sear 5 to 7 minutes per side, or until just browned and the interior is no longer bright pink. Transfer to a warm plate.
  • Pour off the fat from the skillet, return to the heat, add the stock and wine, and bring to a boil. Reduce the heat and cook until slightly thickened, about 5 to 7 minutes. Spoon the sauce over the pork chops and serve.

Learn how to cook a pork chop to perfection!

Provided by Olya

Categories     Main Course

Time 20m

Number Of Ingredients 4

4 pork chops ((thick in size))
Italian seasoning
salt and pepper (to taste)
1 tbsp olive oil (for searing)

Steps:

  • Pat chops dry with the paper towel and sprinkle them very generously with Italian seasoning, salt and pepper.
  • Heat your skillet (I recommend cast iron one) to medium high and add the olive oil. When it's shimmering hot and not a moment before, add your chops.
  • Sear on one side, without moving them at all, until they are nice and golden brown on the first side, about 3-5 minutes. Flip and sear the other side until browned.
  • The easiest way to check if the pork chop is done is to use meat thermometer. When they reach an internal temperature of 135 F degrees they are done.
  • Remove them from the skillet and let them rest on a plate for 10 minutes, during which time they will continue cooking with the residual heat and will eventually reach 145 F degrees.
  • Do remember that cooking time can vary based on the thickness of the pork chops.

MEXICAN PORK CHOPS

Mexican Pork Chops image

"We enjoy Mexican Pork Chops over rice to catch the spicy sauce," says Nancy Negvesky of Somerville, New Jersey. "You can use mild, medium or hot salsa. If the pork chops are too spicy hot, you can eliminate the cumin-chili powder rub."

  • Season chops and heat a black iron skillet or shallow fry pan.
  • (Medium/High heat) When pan is hot sear chops (do not turn for 3 minutes) then flip and sear other side.

KENJI'S PERFECT PAN-SEARED PORK CHOPS

Kenji's Perfect Pan-Seared Pork Chops image

Entered for safe-keeping, from J. Kenji López-Alt, Chief Creative Officer of Serious Eats. Use 1-1/2-inch thick chops (might need to request double-cut chops from the butcher). Long dry brining, uncovered, in the refrigerator helps to retain moistness. More at: http://www.seriouseats.com/2014/03/the-food-lab-pork-chops-blah.html. Prep time includes refrigerator dry-brining time.

Provided by KateL

Categories     Pork

Time 8h35m

Yield 2 serving(s)

Number Of Ingredients 8

2 bone-in pork rib chops, preferably blade-end and 1 1/2 inches thick (12-16 oz. each)
2 tablespoons kosher salt
1 1/2 teaspoons sugar
fresh ground black pepper
2 tablespoons vegetable oil
2 tablespoons butter
1 medium shallot, thinly sliced
8 sprigs fresh thyme

Steps:

  • NIGHT OR MORNING BEFORE COOKING.
  • Pat pork chops with a paper towel. Combine salt and pepper in a small bowl. Season pork chops generously on all sides with the salt and sugar mixture. Transfer to a wire rack set in a rimmed baking sheet and refrigerate, UNCOVERED, at least 8 hours and up to 24.
  • COOKING.
  • Preheat oven to 250°F
  • Place baking sheet with pork chops in oven and cook until an instant read thermometer inserted into the center of the chops registers 100-110°F for medium-rare (about 30 minutes), or 110-120°F for medium (about 35 minutes). To prevent overcooking, start checking temperature 5-10 minutes before suggested time.
  • Remove chops from oven.
  • Heat oil in a large stainless steel or cast iron skillet over high heat until smoking.
  • Place pork chops in skillet and cook, turning occasionally, until starting to brown, about 1 1/2 minutes.
  • Add butter, shallots, and thyme to skillet. Continue cooking, spooning shallots and thyme on top of chops and basting with butter until golden brown on both sides and well-crusted, about 2 minutes longer.
  • Remove pan from heat, transfer chops to a clean rack set in a rimmed baking sheet, and let rest for 3-5 minutes.
  • Just before serving, reheat dripping in pan until smoking. Pour hot drippings over chops. They should sizzle and crisp a bit. Serve immediately.
